Green/Raw Tomato Chutney ( Udupi Style)

Green Tomato Chutney has a superb taste when you have it with hot rice and fresh ghee. Rice is one of the staple grain of South Indians. Though we use wheat, Jola/Millets, Raagi and other food grains Rice stands as favourite food of people here.

I have used green tomatoes which are grown in our home, green chilly, coriander seeds, a bit of tamarind and green chilly.
I have prepared this chutney in Udupi Style.  South Canara People are expert in preparing chutney. They make use of vegetable pulp or outer layers or even the vegetables it self. The aroma of the chutney invites you to have them and you really have a full tummy. (You fall in ❤love with these chutneys❤).☺
Let us see the recipe Now: Green Tomatoes are from our home. (Grown in pots).
No Onion or No Garlic is used in this " Green Tomato Chutney" and is prepared in Udupi Style. (Traditional way of preparing Chutney).

Things Needed :

Green Tomatoes : 6 to 8 (Small size)
Green Chilly : 2 to 3
Coriander seeds : 1 Teaspoon
Tamarind pulp : 1 Teaspoon
Fresh Grated coconut : 1 Cup
Salt : As required
Coconut oil seasoning
Turmeric Powder : 1/4 Teaspoon

Method :

1. Wash and cut green tomatoes and put it in a bowl.
2. Wash green chilly and slit.
3. Soak very little tamarind in hot water and squeeze out the pulp.
4. Put cut green tomatoes, green chilly, coriander seeds, little ingh, salt and turmeric powder in a bowl.
5. Add very little water and pressure cook. (Optional). Put off the fire and let the tomatoes cool.
6. Grate coconut and add all the cooked ingredients. Grind it nicely till paste.

7. Remove from the mixi jar and put it in a serving dish.

8. Add mustard to a pan and add 1/2 teaspoon of coconut oil. Let it splutter. Add ingh and 1 red chilly.
9. Add curry leaves at the end and put off the fire. Put this seasoned ingredients to the ready  Green Tomato Chutney.

10. Serve " Green/Raw Tomato Chutney "  With any main dish you have prepared.

Note: 

Use of pressure cooker to cook raw tomatoes is optional. Adding onions and garlic is optional. I have not added. Taste may differ. Adding red chilly instead of green chilly is optional.
Time : 10 Minutes.
Serves : 3 to 4 .

Capsicum + Bendi Fry

" Capsicum - Bendi Fry " is one of the spicy side dish which goes well with almost all the main dishes. Capsicum and Bendi/Lady finger mixes well and the dry curry taste super.

It is always better to try some thing healthy and not effecting the health. Though the spices are good to our health it should be minimum. It is always too much is too bad. (The proverb).
I have used capsicum, lady finger, some fresh home prepared spice and little coconut.
Let us see some benefits of using " Coconut Oil " in our diet.
Coconut oil is good for improving digestion and strong immunity. It is good for skin and hair care. Coconut oil helps to fight against infections. It reduce the protein loss and nourish our body. Prevents high cholesterol and blood pressure. Strengthen immune system in our body. Controls blood sugar levels and improves insulin production. Improves bone and dental health. Prevents wrinkles, sagging and dryness of the skin. It helps to increase metabolism and helps in weight loss.
Let us see the recipe now:

No Onion or No Garlic Recipe.


Things Needed :

Capsicum : 2
Lady Finger : 250 Grams
Spice powder :
Urid Dal : 1 Teaspoon
Channa Dal : 1 Tablespoon
Red chilly : 4 to 5
Coriander Seeds : 1 Tablespoon
Jeera/Cumin Seeds : 1/2 Teaspoon
Cinnamon : Very small piece. (Just to add the aroma)
Curry leaves : 6 to 8
Seasoning : 
Coconut oil : 2 Tablespoons
Mustard seeds : 1/2 Teaspoon
Jeera/Cumin seeds : 1/2 Teaspoon
Ingh/Asafoetida : A pinch
Curry leaves : 6 to 8
To Add :
Fresh coconut : 2 Tablespoons
Fresh coconut oil : 1 Teaspoon
Salt : As required
Turmeric powder : A little
Spice Powder : 2 Tablespoons
Lemon : 1/2 Lemon extract.

Method :

1. Wash and let all the water dry up in lady finger. Cut them into small pieces.(Thin circle shape).
2. Wash and remove the seed part from capsicum and cut into small pieces.


3. Dry roast/fry channa dal, urid dal, coriander seeds, red chilly, cinnamon piece and jeeera.
4. Add curry leaves and ingh to roasted ingredients. Let it cool. Dry grind it. Keep it aside.
5. Keep a pan on the fire and heat. Put a tablespoon of oil, mustard seeds and jeera.
6. Let it splutter. Add curry leaves and ingh/asafoetida. ( A little).
7. Add cut lady finger/bendi and fry till they turn slightly soft.

8. Add capsicum and fry along with ladyfinger. (On low flame). Let it turn soft.
9. Add Salt and dry ground spice and mix it slowly. Let it cook on low flame for 2 minutes. Stir.

10.  Add lemon and stir once.Shift the ready " Capsicum - Bendi Fry " to the serving dish.

11. Add coconut and cut coriander leaves. Add a teaspoon of coconut oil.
12, Serve with the main dish you have prepared.

Note :

Use of coconut oil is optional. (You can use any cooking oil of your wish). Lady finger should be dry and all moisture should be removed before cutting or it might turn sticky while frying. Adding fresh spice powder is optional. You can prepare the powder previously and make use of it whenever you want. Adding fresh coconut is also optional. Fry the vegetables on low flame. Adding onions and garlic is optional. Taste differ.
Time : 15 Minutes
Serves : 2 to 3.

Mango Fruit Curry

Mango fruit curry is one of the side dish. It is an easy  and quick preparing yummy dish. Savoury mango fruits are used here and you will surely enjoy eating " Mango Fruit Curry " I am sure. This curry is one of the traditional curry done during Mango season. (Udupi/Karnataka).
My father in law's house is in Salekeri (a small village), near Brahmavar./ Karnataka/ India. There are a few trees which bare these wild mangoes. Now a days its very hard to get people who can climb and pluck the fruit or raw mangoes. The half ripe mangoes start falling to the ground. It is one type of crazy thing that you go and check the ground for fallen mango. (These thoughts are still lingering in my mind.
Mangoes are plenty in the market these days and you can see varieties of mangoes in the market, is all because its the mango season now, Back at home in Salekeri (a small village near Brahmavar near Udupi), there are some mango trees. The wild mango tree has many many mangoes turning into fruits. But in the process it drops down some mangoes which are half ripen or yet to ripe fruits.
When we went home this time I picked some of those mangoes. 
These mangoes can be used for rasam, juice, mango payasa. (Rasayana). I have tried these mangoes with savoury curry. 
This is an easy dish and you can enjoy eating many main dishes with this Mango fruit curry for  chapatis, rice, dosa, idli so and so.
Lets see the recipe now:

Things Needed :

Wild Savoury Mangoes : 2 to 3
Green chilly : 1
Rasam/Sambar/Curry powder : 1 Tablespoon.
Methi Seeds : 1/4 Teaspoon
Jaggery : 2 Tablespoons
Salt : As required 
For seasoning :
Mustard seeds : 1/2 Teaspoon
Coconut oil : 1 Teaspoon
Jeera : 1/4 Teaspoon
Asafoetida : A pinch
Curry leaves : 6 to 8 leaves.

Method :

1. Wash and clean the mangoes. Squeeze the mango pulp and put it in a big bowl.
2. Wash curry leaves and green chilly. Slit the chilly and keep it aside.

3. Keep a pan on the fire and heat. Put mustard seeds and jeera/cumin seeds.
4. Let it splutter. Add curry leaves, green chilly and ingh. 
5. Add squeezed mango pulp. Add the mango seeds ( 1 or 2 ). Add dry methi seeds to the curry.

6. Add jaggery, salt and a bit of turmeric powder.
7. Mix it well and let it boil for 2 to 3 minutes.
8. Add rasam powder and mix it well. Let it boil for 2 minutes.
9. Remove the ready Mango curry from the pan  to a serving dish.

10. Add a teaspoon of fresh coconut oil and mix it well and serve.









Note : 

If the mangoes are savoury add little more jaggery which helps to reduce the acidity. Adding more jaggery is purely optional. No need to add any water to it. Thick curry can remain for 2 to 3 days if kept in the fridge. Adding any spice other than rasam powder is optional. You can add garam masala (a pinch), sambar powder, Til/sesame seeds powder is optional. Use of more or less spice is optional.
Adding coconut oil is optional.
Time : 15 Minutes
Serves : 2 to 3.

Sweet Potato - Basale (Malabar Spinach) Curry

Sweet Potato - Basale (Malabar Spinach) Curry is a gravy dish. Basale/Malabar Spinach is loaded with healthy properties and grow nicely even in pots. I have used one full bowl of leaves from our home garden.

I have used Basale, sweet potatoes, coconut and some spices.
Let us see some benefits of having Tamarind in our diet.
Tamarind contain chemincal compounds, minerals, vitamins and dietary fiber. The dietary fiber in tamarind helps in preventing constipation. They also help in reducing the bad cholesterol level in our body. Tamarind is rich in tartaric acid. It gives sour taste to food and it is powerful antioxidant. It helps our body to protect from harmful free radicals. Tamarind has rich source of minerals like copper, potassium, calcium, iron, zinc and magnesium. Potassium helps in controlling heart beat and blood pressure. Iron content in tamarind helps in production of red blood cells. Tamarind has good source of Vitamin A, folic acid, Vitamin C.
" Sweet Potato - Basale Curry " goes well with almost all the main dish.
Let us see the recipe now:

Things Needed :

To Cook :
Basale  /Malabar Spinach 1 bundle
Sweet potatoes : 2
To Grind :
Coconut : 1/2 cup
Red byadagi chilly : 4 to 5
Coriander seeds : 1 1/2 Tablespoons
Jeera /Cumin Seeds : 1/2 Teaspoon
Tamarind : Small marble size
Seasoning ;
Oil : 1 Teaspoon
Mustard Seeds " 1/2 Teaspoon
Ingh /Asafoetida : a pinch
To add :
Salt : To taste
Coriander Leaves : 2 Tablespoons

Method :

1. Wash and cut Malabar Spinach/Basale leaves and keep it aside.
2. Wash and remove the outer layer of sweet potato and wash it again and cut it into desired size.


3. Cook Basale/Malabar Spinach and sweet potato till soft.
4. Grate coconut and grind it with tamarind (remove the seeds if any), raw coriander seeds and jeera.
5. Grind it nicely and remove from the mixi jar. ( Use only required water).

6. Keep a pan on the fire and put cooked sweet potato and basale /malabar spinach.
7. Add a pinch of turmeric powder and required salt. Mix it well and let it boil for a minute.
8. Add ground coconut -spice mixture and mix it well. Let it boil for 2 to 3 minutes.


9. Shift the ready Sweet Potato - Basale curry to a serving dish.
10. Add cut coriander leaves and mustard seasoning.

11. Add a spoon of ghee and mix it nicely.
12. Serve with the main dish you have prepared.

Note:

You can use a pressure cooker to cook leaves and sweet potatoes. (Optional). This curry is called Hasi Huli (curry) since the spices are used raw. (Not roasted). Use of jaggery is optional. I have not used.
It has no dals in in it. (Toor /Moong). Use of dals are optional. You can also use very little (1 teaspoon of) soaked raw rice while grinding coconut and spices. It helps the curry to be thick but the taste differ.  I have not used. This is one of traditional raw spice curry in Dakshina Kannada/South Canara and Malenadu side. Use of onions and garlic is optional. I have not used.
Time : 20 Minutes.
Serves : 3 to 4

Little Millet Idli & Dosa

Little Millet/Saame is one of the millet. (Siri Dhanya). Little Millet idly is very soft and fluffy just like Rice idli. (Raw rice). Dose/dosas are fluffy and soft. 

I have used Little Millet instead of raw rice, urid dal (whole white urid) for Little millet idly & Dosa

Little Millet is known as Same (Saame) in Kannada, Samai - Tamil, Sama - Telugu, Malayalam - Chama. In Hindi it is Kutki, Kuri - Gujarathi and Vari in Marati.

Let us see some benefits of having Saame/Little Millet in our diet.
Little Millet is full of nutritional rich grain. It is rich source of B Vitamins. They contain minerals like calcium, iron, and potassium.They provide the good essential fats to our body and helps in weight loss. It contain high fibre and good substitute for rice.
Millets help in protecting the heart health, protect us from diabetes, improves our digestive system and detoxify the body. It also helps to boost respiratory health, immune system and increase the energy level in our body. Millet is rich source of magnesium and it helps in controlling the blood pressure levels. Millet is a rich source of dietary fiber and it helps in remove the bad cholesterol levels and promote the good cholesterol levels.
Ready to Eat LittleMillet - Urid Idly & Dosas.
I have used whole urid (white), Saame/Little millet to prepare Same/Little Millet Idly and Dosas. The same dough is used to prepare dosas and they are soft, fluffy and yummy. It suits to any age group and take care of your health and satisfy your taste bud.
Just use Little millet instead of rice. The proportion/quantity of the grains are 1 : 2 ( One Urid dal and 2 Cups of Little Millet).

Ingredients :

Little Millet : 3 Cups
Salt : As required
Oil : 1 Teaspoon
Urid dal : 1 1/2 Cup

Method :

1. Clean little millet and wash it nicely.

2. Wash and soak urid dal and little millet separately. ( At least for 3 to 4 hours).
3. Put soaked urid dal and grind till it turns soft and fluffy. Use required water to grind. (At least for       20 to 25 minutes).
4. Remove the urid dough to a big bowl. Let very little dough remain in the grinder.
5.  Add soaked Little Millet with out water and grind it for 5 minutes.(or lesser than 5 minutes).

6.Let the ground mixture be rava ( Semolina ) consistency.
   Remove from the grinder completely. Add little salt and mix it well. Leave the dough for over night    to ferment. (or 6 to 8 minutes).


7. When you are about prepare idli, mix the ferment little millet idli dough nicely.
8. Wash idly plates nicely and apply oil/ghee to each mould and put a spoon of idly dough.

9. Keep pressure cooker/idly cooker on the fire and put some water in it.
10. Keep the ready idly plates in cooker and cover the lid. Steam for 7 to 8 minutes.


11. Remove the lid and take out the idly plates. Sprinkle little clean water on the idly plates.


12. Remove idly from the plates and put it in a serving dish and serve hot idly with the side dish you have prepared. Put some ghee/butter on hot idly just before serving.

 Note :

The consistency of the dough should be like normal idly dough. You can use mixi jar to grind the  ingredients. Taste may differ. It remains the same softness after cooling and taste just as rice idly. Do not add any cooking soda or any other rising ingredients. Let it ferment naturally.

Time = Soaking 4 hours + Grinding 30 minutes + Fermentation Over night /Minimum 6 to 8 hours + Cooking and preparation 20 min
Serves : 50 Idly can be done.

With the same dough I have prepared dosa and it turned soft and fluffy and yummy.
