Millet/Jola - Moong - Urid Dal Dosa

Preparing healthy breakfast is one of the task for ladies who have adopted some healthy concepts. Thinking of healthy, protein rich and yummy dish that should accommodate each member of the family. I my self think some healthy options and do prepare healthy breakfast for my family. This is such one dish which is very healthy.


I have used millet flour, moong dal, urid dal and a special chutney which is very easy to prepare and healthy to eat it.

Having  Pepper in your diet helps to keep away Alzheimer disease.

This dosa is filled with proteins and less carbohydrates and easy to prepare, healthy to have them and is one of the diabetic friendly Dosa.
Let us see the recipe now :

Things Needed :

Moong dal : 1/4 Cup
Urid dal : 1/2 Cup
Millet flour : 1/2 Cup
Pepper pods : 2 to 4.
Salt : As required
Curd : 2 Tablespoons
Oil : 2 to 3 Tablespoons

Method :

1. Wash and soak moong and urid dal together for 2 hours and grind it with 2 to 4 pepper pods.


2.Use required water to grind and remove the batter to a big bowl.

3. Put little water and mix millet flour and add this batter to moong - urid batter. Add required salt,          2 tablespoons of curd and mix it well.


4. Add little water to the batter and mix it well and the consistency should be normal dosa batter.

5. Keep a pan on the fire and heat. Clean the pan nicely with a kitchen tissue. ( Let the flame be low ).
6. Take a ladle full of dosa batter and spread it on the pan in circle shape.

7. Sprinkle little oil on the top of dosa and cook on medium and low flame for 1 to 2 minutes.
8. Turn dosa on other side and cook for 20 to 30 seconds.

9. Dosa is ready to serve. Serve with your choice of side dish.

10. Repeat the same with remaining dosa batter.

11. You can ferment the batter for 5 to 6 hours and then prepare dosa. It turns crispy and golden colour.

12. We had these Millet /Jola - Moong - Urid Dal Dosa with  chutney pudi chatney and jaggery. .


Note :

Adding curd to batter turns the batter bit soft. You can add little cooking soda. ( Optional, I have not added). Add little water to millet flour and mix it well and then add it to urid - moong dal batter. It helps to mix all the ingredients well. Use of ghee instead of oil is optional. I have used oil.
Sprinkle water on tava each time and clean the tava, it helps to reduce the heat of the pan and you can spread the batter nicely on tava/pan. One should adjust the batter to dosa batter consistency and then make dosa. Do not pour batter on hot tava, it sticks to the ladle and you may not be able to spread the batter into thin dosa. ( Do not put your weight on ladle.
Sprinkle oil on the dosa not on pan. Sprinkle oil on tava will not allow you to spread the dosa easily. It turns thick  and the batter sticks to ladle. Let the flame be low while pouring the dosa batter to tava. And then spread it easily and lightly.
Time : 2 hours + 30 Minutes.
Serves : 2 to 3 

Curd - Chutneypudi Chutney :

Mix 2 to 3 tablespoons of chutney pudi to 2 to 3 tablespoons of curd and mix it well. Season with mustard, curry leaves and ingh. Add this seasoning and little salt to the chutney you prepared and serve.
Time : 5 Minutes.




Wheat - Rava - Banana Guli Appa

Guli Appa /Paddu/Gunthpongalu/ Kuli Appam whatever you call it, it is one of the tasty appa/appam that you really enjoy eating them. Here I have tried wheat - rava/semolina Guli appa and it is quick, easy and healthy too.

I have used wheat flour, rava, banana and jaggery and little eno salt to add softness in the dish.
These Sweet Guli appa is good for kids when they come back from school in the evening. It is diabetic friendly, it is prepared using rava and wheat flour. Add little jaggery if you are serving to diabetic person.
Jaggery does provide energy and iron. It is good to have to decrease gastric problems. It helps to digest the food easily.
Wheat - Rava - Banana Guli Appa is easy to prepare, a very few ingredients to use and you can do it quickly. It can be served as evening snack or for breakfast.
Let us see the recipe Now :
Ingredients :
Wheat flour : 1 Cup
Rava /Semolina ( Medium size) : 1/2 Cup
Jaggery : 2 Tablespoons full
Banana : Well ripen : 1
Curd : 2 Tablespoons
Salt : As required
Eno Salt or Cooking Soda : A pinch
Coconut : Grated : 2 Tablespoons.
Cooking Oil : 2 to 3 Tablespoons


Method :
1. Take a big bowl and add curd, jaggery and banana and mix it nicely.

2. Add wheat flour, rava, grated coconut, salt .
3. Mix all the ingredients nicely and add required water. Mix it well.
4. The batter should be like dosa consistency.
5. Add eno salt to the ready batter and mix it well.


6. Keep Guli Appa pan on the fire and heat. Add little oil to each mould in guli appa pan.
7. Mix the batter nicely and put a spoon of batter. sprinkle oil to each guli appa.
8. Cover the pan and cook on medium flame for 1 to 2 minutes.
9. Turn the other side and cook on low flame till it turns golden brown.


10. Remove guli appa to a clean bowl or plate and serve with ghee.

Note : 

Do not make the batter too watery.  Add little rava if the batter turns very watery.
Adding more / less jaggery is optional. Adding ghee while cooking is optional. Use of well ripe banana is good to use and guli appa turns tasty.
Time : 20 Minutes.
Serves : 2 to 3.

Teachers' Day Cake

This is Wheat - Chiroti Rava  - Carrot Cake and prepared for Our Indian Teachers' day special.

Dr. Sarvepalli Radhakrishnan was our First Vice President and second President of India.
His Birthday is celebrated as Teachers' Day in India.
He Believed that " Teachers should be the best mind in the country".
He was awarded several high awards during his life, The Barat Ratna the highest civilian award in India.
We wanted to celebrate the day with our kids and I thought of preparing this Cake.
I have used wheat flour, chiroti rava/thin rava, sugar, curd, milk, oil and very little amount of carrot gratings.
Let us see the recipe now:
Simple and healthy Cake without Eggs.:

Things Needed :

Wheat flour : 1 1/2 Cup
Chiroti Rava : 1/2 Cup
Baking Powder : 1 Teaspoon full
Baking soda : 1/4 Teaspoon
Salt : A pinch
Sugar : 1 Cup
Cinnamon : A small piece
Milk : 1/2 Cup
Curd : 1/2 Cup
Oil : 1/2 Cup
Carrots : Grated : 1/2 Cup
Banana : Yalakki : 2

Method :

1. Sieve wheat, rava, baking powder, baking soda and salt. ( twice to thrice ).
2. Put sugar, cinnamon, milk and curd to a mixi jar.
3. Remove banana skin and cut banana into small pieces and put it to mixi jar.
4. Add cooking oil and  grind all the ingredients together for 5 to 6 minutes.
5. Remove it from the mixi jar and put it to a big bowl. Grate 1/2 carrot and keep it aside.
6. Add sieved flour mixture to a big bowl and put the wet mixture /ground mixture to the bowl.
7. Mix it well and, turn the ingredients on one direction and mix it well. Add milk if the mixture has thick texture.
8. Now add grated carrot to the cake mixture and mix it slowly. Put the ready cake mixture to a cooking tray. Grease the tray with ghee/oil before pouring the cake mix.
9. Switch on the oven and let it get hot. 5 minutes.
10 Keep the cake mixture in the oven and bake for 25 to 30 minutes. 180 C.


11. Check the cake by inserting a knife edge or small stick. Remove the fully baked cake and keep it up on the oven for 5 minutes.
12. Now the cake is ready to serve. Serve as you wish.
13 We shared this particular cake with our tuition children on behalf of Teachers' day special.
14. Have this healthy cake and enjoy whenever you want.

Note :

The cake batter should be like pouring consistency. Add little milk and adjust the consistency, if it is too thick. Do not add so much of milk, it might turn watery and cake may not be good after baking.
Adding ghee/butter instead of oil is optional. Adding jaggery instead of sugar is optional. Use of maida instead of wheat - rava is optional.
Time 30 /25 minu to bake + 10 minutes for preparation.

Energy Laddu

Energy Laddu /Laadu /Unde is an easy dish and it helps to keep you full and provides energy. These energy laddu is prepared using dry coconut, jaggery, poppy seeds, oats, almonds, raisins and little ghee.

These laddu/laadu/unde is full of nutritious and healthy. Eating a laadu keeps you full for a long time. These Energy Laadu can be taken for travelling, kids snack box, kids parties and ladies kitty party.
These Energy Laddu is diabetic friendly and it has oats.

Lets see some benefits of eating poppy seeds in our diet.
Poppy seeds are filled with medicinal values. They helps to keep our mind and body cool. They are filled with anti-oxidants and a mono saturated fatty acid called Oleic acid. It helps in lowering the bad cholesterol and increase good cholesterol level in blood. Poppy seeds have good source of dietary fiber.It is good for people who suffer from constipation. Poppy seeds are filled with B -complex vitamins. They contain good amounts of minerals like, copper, calcium, potassium, manganese, zinc and magnesium. Copper helps in the production of red blood cells. Potassium helps in regulating heart rate and blood pressure. It is good for soothing nervous irritability and act as pain killers. Poppy seeds are used in many traditional medicines and in the preparation of cough mixture.
Let is see the recipe now :

Ingredients :

Oats : 400 Grams
Almonds : 1 Small cup / 15 to 20 pods
Jaggery : 1 big cup 150 to 200 grams
Raisins : 1 Small cup
Ghee : 2 to 3 Tablespoons
Dry coconut : 1 ( Small one )
Cardamom : 5 to 6 Pods
Poppy Seeds : 2 Tablespoons
Home made Rose Gulkand : 2 Tablespoons


Method :

1. Dry roast oats for 5 minutes till the raw smell goes off. Dry grind once it is cooled.


2. Cut dry coconut into small pieces.

3. Dry grind almonds, dry coconut and oats like powder consistency.


4. Keep a pan on the fire and put jaggery and 1/4 cup of plain water. Let jaggery melt completely.
5. Let it boil and get one thread consistency. Stir in between and let it boil for another 2 to 3 minutes on low and medium flame. Add home made gulkand at this point. Mix it well. ( Optional ).


6. Put off the fire and keep the jaggery melted pan down. Add powdered oats, almonds, coconut, raisins and 2 tablespoons of ghee.

7. Mix all the ingredients nicely and take a small amount of the mixture and make laddu/laadu/unde.


8. Prepare more laddus and arrange it in a big bowl or tray.
9. Sprinkle poppy seeds on them and slowly turn the bowl, roll laddu and make the unde to get proper puppy seeds on each laddu.

10 Let all the laddus cool a bit. Now you can put them in a box and serve when ever you want.
11. 40 Laddus can be prepared.

12. Put them in a steel box and store. This Laddu can be kept for a week.

Note :

It is a must to use completely dry coconut.
I have used organic jaggery from Udupi. So did not filter the jaggery water. Used it directly.
Use of more ghee is optional. Use of gulkand is optional. Gulkand adds to the taste and aroma.
Add more ghee on the top of the mixture and prepare laddu quickly or add little warm milk and prepare laddu.
Time : 30 to 40 Minutes.
Serves : 40 Small Laddu can be prepared.
Purely Indian Sweet/Desert/ Energy Laddu.
