Avalakki Chakkuli /Flattened Rice Chakli

ಅವಲಕ್ಕಿ /Flattened Rice/Aval/ Poha or Poa is prepared using the rice. Avalakki chakli/chakkuli/muruku is one of the quick crispy, crunchy fried snack and chakli/chakkuli/muruku is loved by most of us.
Avalakki Chakkuli can be prepared whenever you want it.  


I have used flattened rice, rice flour, salt and curd. 
Chakkuli is one of the famous snack dish that loved by many. It can be munched any time of the day. It goes well with all the time. Kids love to eat chakkuli and is a perfect snack for their tiffin box.Ladies can enjoy this chakkuli during their get together or kitty party, one dish party, picnic and travelling too. Avalakki Chakkuli is good for kids snack box.

Ingredients 

Thick Avalakki/Poha/Aval/Flattened Rice : 1 Cup
Thick Curd/Yogurt : 2 to 3 Tablespoons
Rice flour : 2 Cups or little more
Chilly Powder : 1/2 Teaspoon
Ellu/Sesame seeds : 1 Teaspoon
Jeera / Cumin Seeds : 1/2 Teaspoon
Salt : To taste
Butter : 1 Tablespoon
Cooking Oil : 2 Cups

Method :

1. Clean and wash Avalakki/flattened rice and soak mix it with thick curd for 10 to 15 minutes.



2. Grind it in dry grinder with out using water.


3. Put the ground avalakki mixture in a big bowl. Add rice powder, chilly powder, jeera, sesame seeds and salt.

4. Add butter and mix it nicely and prepare dough. Add water if required. Kneed the dough nicely.
5. Keep a pan on the fire and heat. Put oil and let it get hot. (Medium flame).
6. Now put a small portion of the dough and press it in circle shape. Prepare 3 to 4 chakkuli on the plate.

7. Put this chakkuli and fry on both sides. Remove it from the pan once it is done.

8. Put it on a kitchen tissue and let the extra oil absorb by kitchen tissue.

9. Repeat the same with remaining dough.
10. Serve hot Avalakki Chakkuli with a cup of coffee or tea. Store it in a airtight glass bottle.

Note : 

Let the dough consistency be like normal chakkuli dough. Not so hard or very soft. Adding spice more /less is optional. No need to add more butter. It might turn soft and absorb more oil.
Time : 30 Minutes.
20 to 25 Chakkuli can be made. (According to size).

Butter Chakkuli (Benne Muruku) & Kodubale

Benne Muruku is one variety of Chakkuli, crispy fried snack, which is very very soft and crisp and it melts in the mouth with yemmy taste. Benne means butter and the crunchy chakkuli is so soft and crispy.

Chakkuli can be made using different flours. Chakkuli is most famous crispy and tasty snack at any time of the day. Benne Muruku is nothing a Crispy Chakkuli prepared with Maida and Rice flour. Muruku is also known as chakkuli in Kannada, chakri in Gujarati, chakali in Marathi, murukulu in Telugu, muruku in Tamil.

Chakkuli or Muruku is one of the traditional treat for festivals like Diwali and Krishna Janmashtami. Now a days we get Chakkuli all over India. Chakkuli is one of the famous dish of South India. Traditionally Chakkuli is prepared with urid dal and rice flour.

Here is a recipe of Benne Muruku (Butter Chakkuli). Chakkuli here is prepared with rice flour, Maida and salt, Til seeds and oil. These chakkulis are easy to prepare. We get this Benne Muruku in Bakery acondiment stores and super markets. Home Made Benne Muruk is tastier and safe. It is a fried Item, you can have them any time of the day. You will enjoy eating chakkuli with a cup of Tea or Coffee.

Things Needed :

Maida (Plain flour) : 2 Cups
Rice Flour : 2 Cups
Chilly Powder : 1 Tea spoon
Sesame Seeds : 2 Table spoons
Salt : To taste
Butter : 1 Table spoon
Oil : To Fry (2 to 3 cups)
Chakkuli Mould to prepare chakkuli


Method :

1.Dry cook  Maida and Rice flour for 8 to 10 minutes. (Do not add water , Dry cook  in pressure cooker using weight).
2. Let the flour cool.


3. Now powder the flours  nicely using your fingers. Put it in a big bowl.

4. Add salt, sesame seeds, butter and chilly powder to the flours.


5. Mix it nicely and add water little by little and prepare dough.


6. Wash chakkuli mould and clean with dry cloth.

7. Divide the dough into small portions and put one portion into the mould.


8. Press the mould and prepare chakkuli on a tray or a wet towel.

9. Keep oil on the fire and heat. When the oil becomes hot fry chakkulis.
10. At time you can prepare 4 to 5 chakkulis. Prepare chakkuli on medium heat.






11. Fry on both sides till they turn slightly brown and remove from the oil and put them on the kitchen Tissue.



12. Prepare chakkuli with the remaining dough.

13. Now the chakkulis are ready to serve.
14. Serve with Cup of Hot Coffee or Tea.

15. You can also prepare Kodubale with the same Chakkuli Dough






You can also prepare chakkuli this way. Fill the chakkuli mould and straight leave the dough to the hot oil. giving a shape then and there while pressing the mould.

Note:

You can use dalda or hot oil instead of butter. Remember dalda is not a good option to choose. If you add more butter the chakkuli may dissolve in oil since they turn very soft. Use exactly one table spoon butter Or it may take more oil while frying and will not taste good. You can also add roasted powdered Urid dal. I have not added. Fry chakkuli on medium flame and be careful while you turn them or remove them from oil. You can also use jeera instead of sesame seeds. Using any one of them is advisable. Be aware the chakkuli sold outside may contain dalda or left over oil.
Guide  cook dry maida and rice flour before using it. 
Keep Maida and rice flour in different bowls while cooking. Do not add water while cooking. Put a glass of water to pressure cooker and keep an empty bowl up side down. Then place these flour bowls and cover with a plate. So that water does not enter the flour bowl. Close the  pressure cooker with its lid and put whistle and let it cook for 8 to 10 minutes. Allow it to cool and remove the flour and powder them nicely ( with out using water).  Use it when it is the flour is cool. You can also cook these flours in Idly cooker. 

Time : 40 Minutes (Including steaming the flours).
25 to 30 chakkulis can be prepared (according to the size of the chakkuli).

Sweet and Spicy Rava Rotti.

Rava ( Samolina ) Spicy and Sweet Rotti is a delicious dish and you can have them for breakfast, or as evening snack or as dinner too.

Rava /rave is one of the healthy ingredient and is filled with carbohydrates and is good for all age group. It is good for diabetic people because it is digested slowly and keeps you full for a long time.
These sweet and spicy rava rotti is very much traditional and is prepared for breakfast and special days like fasting/Ekadashi and festival days for people who fast.
I have prepared two varieties of Rottis .
1. Salt and spicy Rotti
2 Sweet Rotti
First let us see how to prepare this spicy  Rava Rotti.
Spicy Rava Rotti :

Things Needed :

Rava ( Samolina ):  2 Cups. ( medium size ).
Wheat flour :2 Tablespoons.
Curd : 2 Tablespoons.
Cucumber : 2  ( Small size ).
Green chilly : 2
Salt : to taste.
Water : Required.
Curry leaves : 10 to 12
Coriander leaves : 2 to 3 Tablespoons.
Coconut : 2 to 3 Tablespoons. ( Optional ).
Oil :  4 to 5 Tablespoons.

Method :

1. Wash and remove the outer layer of cucumber and grate.
2. Take a big bowl and add grated cucumber, rava, wheat flour and curd.
3. Mix all the ingredients nicely. Add required salt and prepare batter. ( Add some water while mixing).
4. Wash and cut green chilly, coriander leaves and curry leaves. Add it to rotti mixture.
5. Let the dough rest for 5 minutes.
6. Keep a pan on the fire and heat. Sprinkle oil on the tava and spread it nicely around.
7. Take a handful of mixed spicy batter and spread it on the tava as thin layer. Let the flame be small.
8. Let it cook on low and medium flame. Turn the other side and cook for 1 to 2 minutes.
9. Now the rotti is ready to serve. Serve with a spoon of ghee or butter on the top of hot rotti.


10. Repeat the same with remaining rotti batter.

Note : 

Add only required water while mixing the batter. Adding grated coconut adds to the taste. Keeping the low flame helps to spread the rotti as thin layer. Cook on lower and medium flame. No onion is used here in this rotti. Use of onions or garlic is optional.
Time : 15 Minutes 
Serves : 2 to 3 

Now Let us see the recipe of Sweet Rotti.

This sweet rotti should be eaten while it is hot. It taste yummy and all age group love this rotti at our home.

Sweet Rotti 

Things Needed:


2 Cups of Rava
Jaggery : 2 to 3 Tablespoons.
Banana :1 riped .( small or medium size ).
Coconut: 1 Cup ( Fresh and grated).
Salt : A little


Method :

1. Remove the outer layer of banana and put it in a big bowl and smash it.
2. Add jaggery, salt and grated coconut. Mix it well. Add little water/milk while mixing. It should be loose.
3. Let it rest for a while.
4. Keep tava/pan on the fire and heat. Sprinkle oil on the top.
5. Take a handful of sweet rava rotti batter and spread it on the tava as a thin layer.
6. Let the flame be low and medium. Sprinkle some oil on the top of the rotti.
7.Cook for a minute and turn the other side to cook. Cook for a minute or little more.
9. Repeat the same with remaining batter and prepare rottis.
8. Now the rotti is ready to serve .Serve with a spoon of ghee on the top of hot sweet rotti.

Note :

Do not pour water at once, Add it slowly and prepare the batter. It should not be very watery.
Adding ghee while cooking is optional. Adding little curd to the batter is optional.
Having this rotti with little pickle is good combination.
Time : 20 Minutes.
Serves : 2 to 3 .
