Folded Sweet Potato Parata.

Sweet Potato Parota is in the shape of Samosa. 
This shape is liked by kids ad elders too. Its soft inside and crispy from out side.
Good for early dinner.  One of the healthy food.




Lets see some benefits of Sweet Potatoes.

Sweet potatoes are filled with antioxidants, vitamins and fiber content. 
They are good for controlling the blood sugar,  reducing the inflammation and  good for gut health. They also help in good vision.
They boost the immunity. Good for digestion.

Ingredients Used :

For stuffing :
Boiled Potatoes - 2
Cumin seeds : 1 Tsp
Mango Powder : 1/2 tsp
Pepper Powder : 1/2 tsp
Garam Masala : 1/ 2 tsp.
Chilly powder : 1 /2 tsp.
Salt : Required.

For Chapati/ Outer layer  :
Wheat flour : 2 Cups
Millet flour/ Jowar flour/ Jolada hittu : 1/2  Cup.
Jeera/ Cumin seeds : 1/2 tsp
Chily powder : 1/2 tasp
Salt : Required 
Ghee : 1 Tbs.
Oil to prepare 3 to 4 Tbs.

Method : 
Stuffing :
Grate boiled Sweet Potatoes in a big plate or bowl.

Add all the above said spices with little turmeric.
Mix it well and prepare  stuffing. 

Divide into small portions.

For chapati/ Parota outer layer.

Take a bowl and add Wheat and Millet/ Jowar flour mix it.




Add spices like cumin seeds, chilly powder, pinch of garam masala  and salt.




Mix it well.



Add ghee and prepare dough with required water.
Divide it into small portions.



Now take a small portion, dip in dry flour and roll. Fold it as shown 





Cook on both sides using little oil  






Serve  Folded Sweet Potato Parath with a cup of curd , pickle or chutney powder.



                               

Note : 
Use the spices according to your taste. (More or less).
Add required oil while cooking. 
Enjoy Folded Sweet Potato Parata with your choice of side dish.
Eating with raw onion slices or cucumber slices is optional. 
Making Raitha (curd with onion pieces) is also optional.
Eating with ghee and pickle taste Yum.
