Cashew Burfi…

Cashew Burfi is  a sweet dish and can be eaten at any time of the day.

Things needed :
Cashew Nuts : 1 cups
Milk powder : 2 Table spoons.
Sugar : 11/4 cups
Ghee : 3 Table spoons
Water : 1/4 cup
Method :
Roast Cashew Nuts a little ( until warm ) . Leave it for cooling for 5 to 10 minutes and dry grind them with cardamom.( 3 to 4 pods...Remove the skin of cardamom and use the seeds ).
Now keep a big pan on the fire. Put sugar and water to it. Mix well. Let this boil and when it starts to bubble add ground Cashew powder and milk powder and mix well. Add a spoon of ghee and mix thoroughly. Stir until it leaves the sides of the pan . Add one more spoon of ghee and stir for two more minutes. Pour this mixture and spread this nicely on the plate.  Cut Cashew burfi  according to your wish. 

Note : This Burfi  should be done on the low flame. Can use two spoons of  Almonds to this burfi to give nice  flavour.  Can use a  Chapati Roller to  spread the mixture evenly on the plate. Cut burfis when the mixture is little cool to get the better shape.  Stir until  the mixture starts coming up..Can see whether its done ....use a cup of water and just dip the spoon inside the boiling mixture and put a drop of mixture in the water . If the mixture stays as it is ...then the burfi is done . If the mixture dissolves then you need to stir some more.( a mustard size paste is enough to drop in the water).  This is method normally people use to find out the consistency.  If you do not have milk powder put two table spoons of milk into the sugar syrup in the beginning when you are adding water.

10 to 15 pieces can be done.
