My style of Aloo - Spaghetti.

Spaghetti / Noodles are loved by most of the youngsters these days. We too love to have These tasty Noodles some time. Noodles are made from Dhorom wheat and it is supposed to be healthy and protein rich. Adding vegetables and our taste of spices make the noodles more tasty.
I do prepare this Noodles in my own way.


I have used carrots, ginger, green chilly, tomatoes and fried potatoes . French fries.
Let us see the recipe now :

Things needed :

To Cook :
Noodles( Speghetti) : 1 pack.
To Add :
Tomato :2 to 3 Medium size.
Garam Masala: 1 Teaspoon.
Red Chilly Powder: 1/2 Tea spoon.
Rasam powder : 1 Teaspoon
Ginger : 1 Inch
Coriander leaves : 2 to 3 Tablespoons.
Salt : according to the taste.
Jeera: 1 Teaspoon.
Turmeric powder : A little
Origano : 1 Teaspoon
To Fry 
Oil : 1/2 cup.
Potatoes : 2 to 3

Method :

1. Boil Spegetti nicely with lots of water until the spegetti turns soft ( cooked).


2. Strain cooked speghetti and take away the water. Keep the noodles aside.



3. Wash and cut tomatoes, grate carrots, remove the outer layer of ginger and wash it again and grate it.
4. Wash potatoes and remove the outer layer. Cut them as bit thick and long stick. '
5. Wash green chilly and cut into small pieces.
6.Keep a pan on the fire and keep a big pan. Add  2 to 3 tablespoons of oil and heat.
7. Add jeera, crushed pepper and fry. Add grated carrots and fry. Add cut tomatoes.


8. Add cut green chilly and fry for 10 seconds. Mix all the ingredients nicely.


9. Add cut tomatoes and turmeric powder. Mix it well. Add required salt and mix it again.
10 Add tomatoes,grated ginger and fry till they turn soft. Stir slowly and let the mixture mix it well.


11. Add noodles and mix it slowly. Let the mixture mix it well with Noodles/Spaghetti.


12. Stir slowly and make sure all the masala mixes well with noodles. Add a teaspoon of Kasoori methi powder ( You get kasoori methi leaves every where.


12. Keep a frying pan on the fire and add 1 Cup of oil.


13. Let it get hot. Fry cut potatoes and add it to cooked noodles. Repeat the same and fry all the cut potatoes and mix it with noodles.

14 Noodles are ready to serve. Add cut coriander leaves and serve.


Cook spaghetti till soft. Adding fried Aloo optional. You can add boiled potatoes also.
Adding more or /little oil is optional. Adding onions and garlic is optional. I Have not added any. Adding any other spices is optional.
Time : 40 Minutes.
Serves : 3 to 4 .

Jackfruit Idlis.

Jack Fruit idlis are very famous in Dakshina Kannada and other parts of South Canara. Jack Fruits are used with rice, jaggery and coconut.

It is one of the signature dish of Udupi and Mangalore. Jack fruits are dee seeded and ground with fresh coconut and little rice. Then it is steamed in Idli steaming container or pressure cooker. These idlis taste yummy and they are healthy too.
When the rain is pouring down during the rainy season these hot idlis give us good energy and keep our body warm and help us to stay healthy.

Ingredients : 

Ingredients:
Raw Rice : 11/2 Cups.
JackFruits : 4 cups.(20 to 25 Fruits cut into small pieces).
Fresh grated coconut: 1 Cup.
Jaggery : 1/2 cup.
Salt : according to the taste.
Oil  or Ghee : 1 Tablespoon.

Method :

1. Wash and soak 11/2 cup of raw rice for 2 to 3 hours.
2. Grate coconut and keep it aside.
3. Dee seed jack fruits and cut it into small. (It helps to grind it well).
4. Now drain all the water from soaked rice and keep it aside.
5. Grind cut jack fruits and grated coconut for 2 to 3 minutes.
6. Add rice and grind it. It should be like rava consistency.
7. Add jaggery and give two to three churns in the mixi.
8. Add a pinch of salt and grind for a few seconds.
9. Remove from the mixi jar and put it in a bowl.
10. Take little oil/ghee and apply on idli plates.
11. Put a small ladle of ground jack fruit batter in each idli mould.
12. Arrange them and keep it aside.
13. Put some water in idli cooker /pressure cooker and keep idli plates in it.
14. Cover the lid and cook for 20 to 25 minutes.


15. Hot idlis are ready to serve. Serve with some ghee on the top of hot idli and pickle aside.

Note : 

Do not use any water while grinding the ingredients. You can divide the ingredients into small portion and grind it. Use of jaggery more/less is optional. Use of more coconut makes idli soft. Use of more fruits adds to the taste.
Time : Soaking rice 3 Hours + Grinding 5 minutes + Cooking time 25 Minutes.
Serves : 5 to 6 .
