Cucumber - Akki Rotti

Akki Rotti /rice rotti is good food for dinner or breakfast. This is the plain rice rotti turned as spicy cucumber rice rotti. It is good for health easily digestive and yummy to eat.


I have used a cup of cucumber chutney which I prepared in the morning for breakfast to have it with dose.
I have used that cucumber chutney, rice flour, 1/2  cup of boiling water and salt.

Let us see some benefits of Cucumber in our diet.

Cucumber is filled with nutrients, vitamins, minerals and healthy properties. They are good water content vegetable. It is low in calories with healthy benefits. It is good for digestion and it helps to lower the blood sugar levels. Good for skin and hair. Cucumber has good source of fiber and good for people who suffer from constipation. It has good amount of antioxidant properties. Eating cucumber is good for people who follow diet food.

How to prepare Cucumber Chutney?

Grind a cup of fresh grated coconut, 1 cucumber, 2 green chilly. Shift the ground chutney to a bowl and add half cup of curd. Add salt and mix it well. No Need to add water while grinding. Season with mustard seeds and ingh/Asafoetida. Cucumber chutney is ready to serve.

No Onion or No Garlic is added to "Cucumber Akki Rotti".

Things Needed :

Rice flour :  3 Cups
Cucumber Chutney : 1 Cup
Boiling water : 1/2 Cup
Ghee : 2 Tablespoons
Normal Water : Required water quantity.
Salt : A little

Method :

1. Take a big bowl and add rice flour and 1/2 cup of boiling water. Leave it for 5 minutes.


2. Add cucumber chutney and mix it well.

3. Add required normal water and prepare the dough.(It should be soft).

4. Divide the dough into small portions. Keep 1/2 cup of dry rice flour in a bowl.

5. Now take a small portion of the dough and dip in dry flour.

6. Roll as chapati. (Do not put any pressure while rolling chapati).

7. Keep a pan on the fire and heat. Put rolled akki rotti and cook on medium flame.

8. Press rotti with a small clean kerchief or cloth so that it puffs up.

9. Flip the other side and cook.

10 Take out from the tava once it is cooked, add little ghee and serve hot spicy akki rotti with choice of your side dish.

11. Repeat the same and prepare the remaining rotti.

12. We had this with Vegetable Kootu.

Note :

Do not make the dough very watery. You will not be able to roll rotti. Adding the dough in dry flour helps the rotti to be rolled well. Do not put weight while rolling rotti. It might tear.
Adding hot boiling water helps the rotti to be soft. Just add 1/2 cup, cover the flour and leave it for 5 minutes. Then mix the flour nicely by adding cucumber chutney and required water.
Pressing rotti while cooking will help to fluff the roti. No need to put the rotti directly on fire.
Do not add any oil or ghee while cooking rotti.
Time : 30 Minutes.
Serves : 12 Rotis can be prepared.

Cucumber - Green chilly Sasive

Cucumber - Green chilly Sasive/mustard curd curry is one of the side dish we relish in the beginning of the lunch. It is served /eaten first and then other side dishes arrive /served one by one.


In Kannada /Karnatka State Language, Sasive means Mustard seeds. Use of mustard seeds label the curry as Sasive. 
Curd gives coolness to our body and at the same time mustard used in the curd curry helps in taking care and protect us from catching cold.
I have used small cucumber, green chilly, fresh grated coconut, pepper pods, mustard and very little jeera/cumin seeds.
We Udupians do not add jeera or pepper to this Sasive. Its only cucumber, red or green chilly, coconut and little ingh. But the taste of Bangaloreans change a little. They do add little jeera and pepper. It might be because of the weather here. Jeera and peeper not only adds to the taste they do have medicinal value of their own. They try to avoid getting cold and helps in digestion.
Eating pepper in our daily life helps to avoid gas in the food and protect us from getting alzemere disease.
Cucumber Sasive is prepared even in some festivals and feast.

No onion or No Garlic is used here in this recipe.

Ingredients :

Small variety Cucumber : 2
Coconut : 1/2 Cup / 2 to 3 Tbs
Green chilly : 1
Pepper Pods :  5 to 6
Mustard seeds : 1/2 Tsp
Jeera : 1/4 Tsp
Ingh : A little
Salt : As required
Curd : 1 Cup
For Seasoning :
Coconut Oil /Any cooking oil : 1 Tsp
Mustard seeds : 1/2 Tsp
Ingh /Asafoetida : A little
Curry Leaves : 5 to 6 leaves

Method :

1. Wash nicely and cut cucumber into small pieces.
2. Grate fresh coconut and keep it aside.
3. Wash green chilly and curry leaves and keep it aside.
4. Now grind grated coconut, cut cucumber, green chilly, pepper pods, mustard seeds, jeera and little ingh with required water. Shift the ground mixture to a bowl.


5. Add salt and curd to the mixture and mix it well.

6. Add mustard seasoning with coconut oil, ingh and curry leaves.


7. Cucumber - Green chilly Sasive is ready to serve. Serve as one of the side dish for lunch. It goes well with plain rice. Eating this cucumber sasive helps to digest your food easily.


8. Serve as a dip to fried dishes. Serve as one of the side dish to chapati, poori palav and other masala rice dishes.

Note :

Do not make Sasive very watery. It does not taste well. Use minimum water while grinding. Cucumber provides water to grind. Adding any cooking oil to season is optional. Do not add much spice. It should be mild.
Time : 10 Minutes.
Serves : 2 to 3.

Southekai /Cucumber Curd Curry

Cucumber Curd Curry / Southekai Sasive is one of the traditional dish of South Canara and Malenadu region. Cucumber Curd Curry is very easy to prepare and cucumber helps to cool our body.


Cucumber is available most of the days in a year.
When you are in a hurry or tired you can prepare this curry and enjoy your meal. It is easy, quick and simple. All you need is cucumber, mustard and curd. It fits to all age group and helps to take care of your whole body.
I have used Small thin cucumber, mustard seeds and curd. To add spice I used 2 green chillies.
Some feel eating cucumber might cause cold to their body, so the mustard seeds act as avoiding cold. it helps to subside the cold and take care.
Let us see some benefits of eating Cucumber in our diet.
Cucumber is rich water content vegetable. They do have nutrients like vitamin A, vitamin C and folic acid. They are rich in magnesium, iron, sodium,  potassium B -Vitamins and Vitamin B 6. Cucumber is rich in fiber and helps in easy digestion. It is very good source for people who suffer with constipation. They are good for skin health. They do helps to control and lower the blood sugar in our body. They helps to control Blood pressure in our body. It is rich in antioxidants.
As I said it is easy, simple, yummy and quick.
Let us see the recipe :

Things Needed :

Small, thin Cucumbers : 2
Coconut : Fresh : 3 Tablespoons
Green chilly : 2
Mustard seeds : 1/2 Teaspoon
Ingh /Asafoetida : A pinch
Salt : As required
Curd : 1/2 Cup
For Seasoning :
Coconut Oil : 1 Teaspoon
Mustard seeds : 1/2 Teaspoon
Ingh : A pinch
Curry leaves : 4 to 5

Method :

1 Wash cucumber nicely and cut into pieces.
2. Grate coconut.
3. Wash green chilly and curry leaves . Cut green chilly into 2 to 3 pieces.
4. Now Grind coconut, cut cucumber, mustard seeds and green chilly together.
5. Add curd, salt and churn for 2 minutes. Remove it from the mixi jar to a serving dish.
6. Prepare coconut oil seasoning with mustard seeds, ingh and curry leaves.
7. Add this seasoning to Cucumber Sasive and serve.

Note : 

Shop bought cucumber should be washed nicely before you use it.
Do not peel off its skin. The peels are  more nutrients.
Do not use onions or garlic. The original taste vanishes.
You can use less chilly if you do not eat spicy curry.
Time : 10 Minutes.
Serves : 3 to 4.

Cucumber Pesarittu

Pesarittu /whole moong dosa is known as Pesarittu. I simply call this as Hesaru dosa.
I have tried this Pesarittu dosa in different ways. THIS time it is with cucumber. Dosa taste yummy and good for people who do not eat much vegetable. 


I have used whole moong, rava/semolina, little coconut, 1 small cucumber with its skin, pepper and curry leaves.
Pesarittu dosa is a healthy dosa which fills your tummy with good nutrients. Whole moong is filled with vitamins, minerals and is protein rich. Cucumber Pesarittu Dose is good for all age group and you do not feel hungry for a long time.
I used fresh Pesarittu batter for dosa. I did the grinding in mixi and added rava and curd to it. Gave a churn for 2 minutes, stopping for a few seconds in between. 
 as I grind it. I have added a cup of curd to add savoury to the batter.

No Onion or NO Garlic is added to this recipe.

Things Needed :

Whole Moong : 1 1/2 cup
Rava /Semolina  : 1/2 cup (medium sized).
Pepper pods : 6 to 8
Ginger : An inch
Curry leaves : 1 Handful
Mangalore Southekai /Cucumber : 1 Medium sized 
Curd /Yogurt : 1 Cup 
Salt : As required 
Coconut : 1 Small cup.
Ingh : A little 

Method :

1. Wash and soak whole moong for 3 to 4 hours or over night. 


2. Grate coconut and grind it with ginger pieces and pepper pods. Wash and peel off the ginger skin and wash it again and cut into pieces. 


3. Add whole moong and grind till it turn as paste.
4. Mean while wash cucumber and remove the pulp and seed inside it.


5. Cut the cucumber into small pieces and soak in water for 5 minutes.
6. Add these cucumber pieces to mixi and grind till they turn into paste. Add the outer layer of cucumber to grind. (cucumber skin).


7. Add a big cup of curd and grind it for 2 minutes. 


Add rava and churn for 2 minutes.


8. Remove it from the mixi jar to a big bowl. Add salt and keep it aside.
9. Mix the batter nicely and Whole moong dosa batter is ready.


10. Keep a dosa pan on the fire and heat. clean the pan with a clean towel or Kitchen tissue.
11. Take a ladle of whole moong batter and spread it on the tava. Sprinkle some oil on the top.


12. Cook on medium and low flame. Turn the dosa other side and cook for a minute.


13. Dosa is ready to serve. Take out the dosa from a pan and serve.
14. Add a tsp of ghee on the top just before you serve Cucumber Pesarittu Dose.

Note : 

Do not add more rava to the whole moong batter. Dose turns hard. Adding curd helps the dosa to be soft.
Do not add any cooking soda or baking powder.
The batter should be bit thicker than dosa batter. 
You can also ferment this batter and prepare Dose/dosa.
Time : Soaking time 3 to 4 hours.
Grinding time : 5 to 6 minutes.
Preparing dosa : 20 Minutes.
Serves : 3 to 4 people.

Cucumber Lassi / Chaas: Sweet & Salt

Lassi /Chaas /Butter Milk whatever you call it, it is one of the healthiest drink in Summer Season. 


The summer is here. Already screeching son shows his heat. The hot air blows through out the day. You need to keep your mind and body cool. So let us have some Cucumber Lassi /Chaas Sweet or Salt. Both are easy to preapre and good for health.
I think You like my idea of having this cucumber Lassi. It is yummy, delicious, quick and simple.
All I have used is curd / butter milk, salt and jaggery, cucumber and water.
Let us see some benefits of having Cucumber in our diet. 
We know that cucumber helps to keep our body cool. It is full of nutrients. It has a rich source of anti oxidants that is good for our health. Cucumber is low in calories and it is fiber rich. Good for dehydration and good for loosing weight. It helps in easy digestion. Control the blood sugar level. helps in controlling the blood pressure. It is good for bones. It is good for hair and skin. Cucumber contain Vitamin C, Vitamin A, Vitamin K, Vitamin B1, Vitamin B2, Vitamin B6, Vitamin B5 and minerals like protein and magnesium.
Cucumber Lassi is good for all aged people.  
Cucumber Lassi is diet friendly.
  It is diabetic friendly 

have used pepper pods and salt for the Salted Lassi 
2. Jaggery for Sweetening the Lassi.

Things needed : 

Curd : 1/2 Cup
Cucumber : 2 ( Small Variety).
Pepper Pods : 3 to 4

For Salted Lassi / Butter milk 
Salt : As required
Ingh : A little

For Sweet Lassi 
Jaggery : 2 Tablespoons : Powdered or liquid

Method :

1. Wash and peel off the skin of cucumber and cut into small pieces.


2. Grind cut cucumber and pepper pods with little water. Grind it in to paste.


3. Add curd and  2 glasses of water and churn for 2 minutes.
4. Remove the done butter milk to a bowl.
5. Divide cucumber lassi two bowls.


6. Add required salt and a pinch of ingh/ Asafoetida to salted lassi and mix it well.


7. Add a tablespoon of jaggery to sweet Lassi and mix it well.


8.Sweet and Salt Lassi / Chaas /butter milk is ready to serve.

9. Put the lassi to glasses and serve. ( Adding ice cubes are optional ).


Note : 

Adding more curd is optional. You can also add little green chilly and cut coriander leaves to salty lassi. I have not added because in summer it is good to use pepper pods instead of green chilly.
Adding sugar instead of jaggery is optional. Remember jaggery is good for health. It helps in keeping your body cool.
Time : 15 Minutes
Serves : 2 to 3.
