Wheat - Millet flour Cake

This cake was prepared for my son Ravi' s birthday. Just tried this wheat -millet cake and it came out very well and superb outcome. It is easy, simple and healthy cake. 



It is always nice to bake a cake for the family members. I do prepare most of the time. We had a get together at Son Ravi's house.
I have used wheat flour, millet flour/jolada hittu/ sorghum flour, curd, vanilla essence, coco powder, and other ingredients.
Now a days I started using millet flours instead of maida. This recipe has no oil and without much of hassle.

No egg, No White Sugar, No Maida = Wheat - Millet Flour Recipe

Let us see the recipe now :

Ingredients :

Wheat flour : 1 Cup
Millet Flour : 1 /2 Cup
Coco Powder : 3 Tablespoons
Jaggery : 3/4 Cup (I used Joni bella /Organic jaggery)
Baking powder : 1 Teaspoon
Baking soda : A pinch
Salt : A pinch
Curd : 1 Cup
Ghee : 1 Tablespoon (Optional)
Almond flakes : 2 Teaspoons (Optional)
Lemon : 1 Teaspoon ( 1/2 of one lemon)
Vanilla Essence : A few drops. ( 2 to 3 ).
Dates : 15 to 20 (Optional)

Method :

1. Sieve wheat flour, millet flour, coco powder, baking soda, baking powder and salt together. (Sieve twice so that it mixes well).



2. Take a big bowl and add curd, jaggery and ghee. Mix it well using a tablespoon or eggbeater.

3. Add lemon and stir nicely. Add vanilla essence and stir for another 2 to 3 minutes.

4. Add sieved flour and mix it slowly. Let it mix well.

5. Take a baking tray and apply oil /ghee and pour the ready cake mix.


Just tap it slowly so that it spreads around and evens the cake mix. Spread some almond flakes on the top.

 6. Preheat the oven for 5 minutes and place the cake tray in the oven. Bake it for 30 to 35 minutes.


7. Check the cake is done with a edge of knife or spoon. Prick it slowly and the cake should not stick to the knife edge. So cake is done.
8. Remove it from the oven and place it on the top to cool down.

9. Remove the seeds from the dates and smash it nicely. Make a ball shape.
10. Roll the date mixture on the butter paper /banan leaf to get it spread.


11. Place this flattened dates mixture on the top of the cake and  rap it around the cake.Press a little.

12. This rapping of dates mixture adds to the taste. Cut and serve with a cup of coffee or tea or whenever you want to.

Note :

Use of dates is optional. It is just an creative work and adds to the taste. You must use soft dates.
You can add little milk if you feel the cake dough is thick.
While mixing the flour to wet ingredients let it be bit slow and it should be done on one direction.
If you are using normal jaggery powder, soak it in curd and it melts. You need to mix it well.
Adding ghee is purely optional. I have added.
Time : 40 Minutes
Serve : According to your wish.

Wheat -Rava Cake

Here comes Christmas and the celebration starts. We do enjoy wishing people, having a piece of cake , cookies etc etc etc.
Even facebook pages are loaded with varieties of cakes. i too thought of preparing a healthy cake using wheat flour and rava/semolina. It has turned as perfect cake and let us enjoy together having a yummy and healthy cake and say Merry Christmas and happy new year 2018 to All.

Here we go :
I have used Ashirvad wheat flour and medium size rava, cooking oil and little bit of ghee, sugar, cinnamon. Added little dates also.
No egg in this Wheat -Rava Cake.

Things Needed :

Wheat flour : 1 1/2 Cup
Medium size Rava : 1/2 Cup
Sugar : 3/4 Cup
Cooking Oil : 1/2 Cup
Curd : 1/2 Cup
Milk : 1/4 Cup
Cinnamon stick : 1/4 inch
Sal : A pinch
Baking Powder : 1 Teaspoon
Baking Soda : 1/4 Teaspoon

Method :

1. Sieve wheat flour and rava, baking powder,salt and baking soda altogether.


2. Put sugar in mixi jar and powder it. Add oil and curd and churn it nicely till it turns smooth paste.

3. Add milk and, cinnamon stick and grind it for 2 to 3 minutes.

4. Now shift the ground mixture to a big bowl and mix the flour mixture slowly. Add little milk if the dough turns very hard.
5.Let it mix well. No lump should be remained.
6. Apply ghee on the baking tray and sprinkle little wheat flour on it. Spread it well.
7. Pour the ready mixture to a tray and tap the tray to spread the dough evenly.


8. Bake it with 180 degree celcius for 35 to 40 minutes. (Oven baked). Remove it from oven and let it be there on the top for for 5 minutes. ( After baking just leave it there).
9. Insert a knife edge to make sure the cake is done. (It does not stick to the edge of the knife).

10. Cut it once it is cooled. Enjoy with a cup of coffee/tea or whenever you want it.


Note :

You can use thin variety of rava. (optional). Use of butter /ghee instead of oil is optional. Use of rose essence instead of cinnamon is optional. You can also prepare this cake in pressure cooker. Remove the gasket from the lid. Do not use weight. Place a plate or bowl inside the pressure cooker and place the cake dough container on the top. Close the lid and bake for 35 to 40 minutes. If the cake turns hard pour some milk and mix it well. (It should be bit thicker than idli dough). I have used mixi jar to churn the ingredients. Use of egg beater, cake mixer is optional.
Time : 40 Minutes. 
20 Small pieces can be done.

Jaggery -Wheat Coco Cake

Cakes are special and it is loved by all age group people. Here is a try of Jaggery -Wheat Cake which I have seen in one of the television show.


I was very happy to note this cake is prepared using jaggery and wheat instead of maida/all purpose flour and sugar. Use of wheat and jaggery is a healthy option and we can enjoy this cake at any time of the day.
Lets see the recipe now :

Things needed :

Wheat flour : 1 Cup
Jaggery : 1/2 Cup or little less
Milk : 1 Cup
Coco Powder : 2 to 3 Tablespoons
Ghee /Oil : 2 Tablespoons
Lemon : 1 Teaspoon
Vanilla Essence : 2 to 3 Drops.
Baking Soda : 1/4 Teaspoon
Salt : A pinch

Method :

1. Sieve wheat flour, coco powder, salt and baking soda together. (Sieve twice, so that all the dry ingredients mixes well).

2. Take a big bowl and put jaggery, milk and oil.
3. Mix it well and add lemon extract. Mix it nicely.
4. Add dry ingredients and mix it slowly in one direction.


5. Let all the ingredients mix it well. Add vanilla essence and mix it slowly. Add lemon extract. (Lemon Juice). Mix it nicely.



6. Apply ghee to the baking tray. Sprinkle little dry wheat flour.
7. Pour the ready cake mixture and tap it so that the cake mixture settles well equally.


8. Pre heat the oven for 5 minutes.
9. Keep the cake mixture tray in the oven and let it bake for 25 to 30 minutes ( 180 D .cl).
10.Prick the knife end or spoon to make sure it is done. (The mixture does not stick to the spoon).
11. Take out the tray and place it above the oven for at least 10 minutes.

12. Cut Jaggery - Wheat Coco cake and serve with a cup of tea.

Note :

See that the cake mixture is mixed well. You can use 2 to 3 tablespoons of milk and then mix the mixture. Adding any fruits or dry nuts is optional. There is no sugar or butter in the cake. Adding any dry nuts are optional. It adds to the taste. I have added organic jaggery which is very liquid. If you are using normal jaggery powder it and then melt it with a teaspoon of water, sieve it and then use it.
Time : 30 minutes to bake and 10 minutes to prepare
Serve : As you Like.

Jackfruit Cake (Eggless)

Jack fruit season is almost coming to an end. I tried jack fruit cake last year and the colour was dull but cake was just Excellent and Yummy. with jack fruit flavour.

Using natural fruits are always best and healthy too.
I have used jack fruit, little cinnamon, maida, sugar and other ingredients.\
Let us see the recipe Now:

Things Needed :

Jack Fruits : 1 Bowl (At least 10)
Maida /All Purpose flour) : 2 Cups
Baking Powder : 1 Teaspoon
Baking Soda : 1/4 Teaspoon
Cinnamon : A very small piece
Sugar : 3/4 Cup
Cooking oil :  3/4 th Cup
Curd : 2 Tablespoons
Milk : 1/2 Cup

Method : 

1. Sieve maida, baking powder and baking soda together and keep it aside.

2. Apply little oil to the baking tray and dust it with a teaspoon of maida. (Spread around the tray).
3. Powder sugar in a mixi jar and add oil and churn it for a while. Let the sugar dissolve slightly.


4. Add curd and churn it for 2 minutes. Add milk and cinnamon piece. Grind it for 2 minutes. Add a pinch of salt and churn for a minute.


5. Add jack fruit pieces and grind it nicely for 2 minutes. Let it all the ingredients mix it well.

6. Now remove the dough from the mixi jar.
7.Add sieved maida/all purpose flour and mix it slowly.

8. Pre-heat the oven for 5 minutes.
9. Pour the cake batter to maida dusted tray and slightly tap it. Let the dough spread it well.
10. Put it in the oven at bake it for 30 minutes.( 180 degree  c )  It raises up and bakes it well on both side.

11. Check it with a knife edge by a knife or spoon. Prick the knife to know that cake is baked well.


12. Put off the switch and keep the cake tray on the top of the oven. Let the cake cool for a while.

13. Cut them in to small pieces and serve it with a cup of coffee or tea.

14. We had this cake with our class kids. It tasted well.

Note :

Do not use water to grind. Adding more sugar is optional. The jack fruit added the taste to yummy jack fruit flavour. Adding butter / ghee instead of cooking oil is optional. Cake will be more tasty with butter or ghee.
Time : 30 Minutes to bake and preparation 10 minutes or little more.
Serves :   20 to 25 Pieces (According to the size.
