Jack Fruit Guli Appa / Jack Fruit Paddu

Jack fruit season is almost over, you need to wait for one more year for the jack fruit season. May be the last Jack fruit I am using it here to prepare Jack fruit Guli Appa/ Paddu/ Paniyaram. 
We use rice to prepare this Jack fruit Dosa, Kadubu and Guli Appa. Here I have used Rava/semolina instead of Raw Rice and prepared this yummy Jack Fruit Guli Appa


I have used Jack Fruits, joni Bella (organic jaggery which is bit liquid form), medium size rava and little coconut.

Let us see the benefits of Eating Jack fruits in our diet. 
It is always better to have fruits and vegetables during their seasons. They are filled with vitamins and minerals during the seasons they are naturally grown. 
Jack Fruits are filled with Vitamin C and potassium. They are energetic and provide energy to our body. 
There is a proverb in Kannada language. ಹಸಿವಾದಾಗ ಹಲಸಿನ ಹಣ್ಣು ತಿನ್ನು ಹಾಗೆಯೇ ಹೊಟ್ಟೆ ತುಂಬಿದಾಗ ಮಾವಿನ ಹಣ್ಣು. It means when you are hungry that we should eat Jack Fruits and when we are full, we should eat Mango. Jack fruits fill the stomach and is good for getting your energy back. And when you are full One should eat mango that helps the food to digest..
Jack fruit prevents Anaemia and take care of good eye sight. It is good for building muscles. It is said it helps to cure mental stress and skin diseases.
Let us see the recipe now :

Things Needed : 

Jack Fruits : 10 to 15 
Rava /Rave/Semolina : 2 Cups
Coconut : 1 Cup (small cup)
Jaggery : 3/4 Cup
Salt : A little
Oil /Ghee : 3 to 4 Tbs

Method :

1. Cut Jack Fruits into small pieces.


2. Grind cut jack fruits with coconut. Do not add any water while grinding.


3. Mix it with 2 cups of rava, little salt and 3/4 cup of jaggery. I added Organic liquid jaggery. (You can add powdered jaggery if you do not get organic jaggery). Let the batter rest for 10 minutes.


4. Keep a guli appa pan on the fire and heat. Put little oil to each mould/Guli. (Down portion of the pan). Add little oil on the top. Cover and cook on low flame.


5. Turn the other side and cook for a minute.


6. Take out ready Jack Fruit Guli Appa to a serving bowl. Prepare the rest of the Guli appa the same way.


7. Serve Jack fruit Guli Appa with ghee on top.


Note : 
Use of Raw rice instead of rava is optional. Use of organic jaggery is optional. Adding more or less jaggery is optional.
Time : 3o to 35 Minutes.
Serves : 2 to 3.

Rava - Oats Idli

Today's  Food is breakfast food. It is Rava - Oats Idli.
This idly is healthy and yummy, easy to prepare and good breakfast and keeps us energetic for the whole day.


I have used medium rava/semolina, a cup of curd and a small cup of Oats.
The idli turns very soft and spongy and yum to have it.
Let us see the recipe Now :
Rava/Semolina : 3 Cups
Oats : 1 Small Cup
Curd : 1 Cup ( Better to Use savoury curd)
Salt : As required
Water : As required
Eno Salt : 1 Teaspoon
For Seasoning : 1 Tsp Oil
Mustard seeds : 1 Teaspoon
Curry Leaves : 8 to 10

Add caption

Method :

1. Take a big bowl. Add Rava, curd, salt and mix it well.


2. Add oats and required water and mix the batter nicely to Idli batter consistency.
3. Add seasoning done with mustard seeds, curry leaves and cashews. (optional).


4. Let the batter settle for 5 minutes.
5. Wash idli plates and apply ghee for each plate.


6. Add 1 teaspoon of Eno salt and mix the batter nicely.


7. Put the batter to idli plate and steam for 10 minutes. ( Pressure cooker or idli steamer).


8. Remove the done idlis and sprinkle some water on idli and take it out to a bowl.


9. Serve hot idli with ghee, sambar and coconut chutney.

Note :

Use of savoury curd results good idlis. Use of cooking soda instead of Eno is optional.
Roasting Rava in seasoning is optional. Use of medium size rava is best.
Time : 20 Minutes.
Serves : 3 to 4 .

Jackfruit Kesari

Jackfruit is a seasonal fruit and is better to use them in their season to get its health benefits.
Jackfruit Kesari baath/Sheera is a sweet dish prepared using Jackfruits which I got from my sister.
It is an easy dish and yummy to have it


I have used jackfruits, jaggery (Joni bella), cardamom pods, ghee and saffron.
Jackfruits are loaded with healthy properties. In olden days people and animals used to visit the vast forest and look for jackfruit trees to fill their stomach. No wonder there is a proverb saying Eat jackfruit in an empty stomach and eat mango fruits after food. Eating jackfruits fills your stomach and you will have no worries of any indigestion. And eating mango fruit helps to digest the food you had. People have shown the way to live a healthy life by saying proverbs which are good steps to our healthy life.
Jackfruit trees not only provide fruits as food, the roots of the tree holds water which pour down during the rainy season. It is so sad that the forest is cut down and made bare land for the greedy man. The rain has reduced due to cut down of trees and deforestation  and rain  water is simply runs through the land and gets into seas.
Jackfruits are good source of potassium and have low cholesterol levels.
Let us see The Recipe Now :

Things needed :

Jackfruits : 10 to 15
Rava/Semolina : Medium size : 1 1/2 Cup
Jaggery : 3/4 Cup
Ghee 3/4 Cup
Cardamom Pods : 5 to 6
Boiling Water : 3 Cups
Cashew Nuts and Raisins : 1 Handful
saffron flakes : 5 to 6


Method :


1. Put 2 to 3 Tbs of ghee in a big frying pan and keep it on the fire. Let it melt.
2. Add cashews and raisins and fry. Powder cardamom and keep it aside.

3. Add rava and fry till the raw smell disappear. Cut jackfruits in to small pieces.



4. Add jackfruits and fry for a minute. Add  boiling water and mix it slowly. Let it cook on low flame.



5. Once it is thicken add jaggery and stir continuously and slowly.




6. Add saffron flakes and remained ghee. Mix it well and cook on low flame. Add cardamom powder.


7. Shift the ready Jackfruit Kesari to a serving dish and serve.

Note: 

Cut jackfruit into small pieces. Rava/Semolina should be fried nicely till the raw smell disappear to get good Kesari texture. Adding more ghee is optional. Adding food colour instead of saffron is optional. I have added Joni Jaggery. (Liquid jaggery). You can use store bought jaggery , then powder it and use it. Powdering jaggery helps the jaggery to melt easily and quickly.
Time : 30 to 35 Minutes.

Rava - Dals Ade / Dosa

Rava /Semolina - Dals dosa is rich in protein and good for breakfast or dinner.



Rava /Semolina dosa is very easy to prepare and you can prepare dosa with just ground batter or You can ferment the batter and then prepare crispy and yummy dosa.
I have used Moong dal, channa dal, toor dal, urid dal and a cup of Rava/semolina. I did not use any  soda or Eno salt. It is full of healthy breakfast and it keeps you full for a long time no doubt.

Let us see some benefits of Dals in our diet.

Dals are rich in protein and very essential for vegetarinas. Moong dal is full of protein and filled with nutrients. It is filled with manganese, magnesium, phosphorus, copper, potassium, zinc and Vitamin B. Moong dal is easy to digest and low in cholesterol. It helps in regulating the blood sugar level and good for weight reducers.
Urid dal is filled with fiber. It improves and strengthen bones. It helps to boost energy and control blood sugar level. It is good for our skin. Urid dal is a good source of protein, potassium, iron, and Vitamin A and C.
Toor dal has good source of folic acid and good for pregnant women.It is filled with fiber. It contain proteins, potassium, iron, folic acid, magnesium and Vitamins.
Channa dal provides energy and good source of fiber. It is diabetic friendly and regulate the blood pressure level in our body.
 It is full of B Complex vitamins like Vitamin B 1 , B 2, B 3 and Vitamin B 9.
Let us see the recipe Now :

Things Needed :

Channa dal : 1 Cup
Toor Dal : 1 Cup
Moong Dal : 1 Cup
Urid Dal : 1 Cup
Semolina /Rava : Medium sized : 1 Cup
Salt : As required
Cooking Oil : 2 to 3 Tbs

Method :

1. Wash and soak urid dal, toor dal, moong dal and channa dal for 3 to 4 hours.


2. Grind it with required water.

3. Take out the batter to a big bowl.


4. Add a cup of medium size rava/semolina.


5. Add required salt and mix it well. Let it set for 10 to 15 minutes.

6. You can prepare dosa / adai with out fermenting the batter.

7. Or you can ferment the batter and then prepare dosa.



8. Keep a pan on the fire and heat. Clean the tava with a tissue.

9. Add a ladle full of dosa batter and spread it in round shape. Add little oil and cook on both sides.

  8. Both the types of dosas ( with non ferment and ferment batter) dosas comes out nicely.

9. Enjoy with your choice of side dishes.
10 We like honey and had it with honey and pickle and chutney .




Note :

Do not add much water to grind the dals. You can add it later while mixing rava with dals.
Adding little pepper adds to aroma and taste. Good for health too.
Adding Vegetables like grated carrots and onions is optional.
Fermented batter turns the dosa crispy. You need to be little careful since it cooks up quickly.
Adding more or less oil while preparing dosa is optional. Adding more ghee or oil adds to the taste.
Serves : 3 to 4
Time : Dals : Soaking time : 4 Hours - Grinding + 5 Minutes (Mixi), preparing dosa : 20 minutes.
(Without fermentation) and fermentation 3 to 4 hours .
