Easy Mandakki / Puffed Rice Oggarane

Mandakki / Mundakki / Puri /Puffed Rice is used in different types of chats. Bhel puri, charmuri, nippatu charumuri so and so.


I have prepared Easy Mandakki / Puffed Rice Oggarane. I have seen many cookery shows, varieties of Mandakki Oggarane.
I have used Mandakki, onion, green chilly and ground nuts.
Let us see the recipe now :

Things needed :

Mandakki/ Puffed rice : 2 to 3 cups ( 1 Bowl )
Green chilly : 1
Ground Nuts : 2 Tablespoons
Roasted Chenna /Huri Kadale : 2 to 3 Tablespoons
Mustard seeds : 1/2 Teaspoon
Cooking Oil : 2 Tablespoons
Salt : A pinch


Method :

1. Remove the outer layer of onion, wash and cut into small pieces.
2. Wash green chilly and slit, cut curry leaves into small.

3. Dry grind roasted chenna and keep it aside.
4. Keep a pan on the fire and heat. Add oil and mustard seeds.
5. Let mustard seeds splutter. Add ground nuts and fry till they turn slightly brown.
6. Add onions and fry for a minute. Add a pinch of turmeric powder and salt.


7. Put mandakki in a bowl of plain water and squeeze out the water quickly.

8. Add squeezed out puffed rice to the pan and mix it well.

9. Mix it well and add powdered roasted chenna and mix it well.


10. Now Madakki oggarane is ready to serve. Serve with fried fritters or pappad.


Note :

Do not soak mandakki in water. It might turn very soft and it does not taste good whiel eating.
Adding more / less oil is optional. Adding tomatoes to the mandakki is optiional. You can use lemone extract instead of tomatoes. Adding garlic to mandakki oggarane is optional.

Time : 10 Minutes
Serves : 2 to 3 .
A quick snack in the cold evening.
Purely Karnataka Snack.

Mandakki Uppugari

Mandakki or Mundakki is nothing but Puffed rice or Kadale puri.(in Kannada Language). There are different ways of preparing chat with this Puffed rice. Mumbai chaat bhel puri is world famous now a days. We in Karnataka it self there are varieties of Chaats done with this Mandakki (Puffed Rice), like churmuri, masala mandakki, khara mandakki, menasu mandakki, nippattu mandakki Manadkki uppugari (Udupi or Dakshina Kannada side famous Mandakki) etc.


Mandakki Uppugari takes us back to our child hood days. We used to have Mandakki Uppugari, which used to be very simple and yemmy. In the rainy season some time this is one of the dish done quickly and served to munch. Whenever I prepare Mandakki it takes me back to those days. Anyways we do prepare Mandakki when ever we feel like eating. Crispy Mandakki with some fried nuts and some mixture (fried sev from out side) or simply mandakki and some grated coconut. Each one has it own taste and I do prepare Mandakki Uppugari some time. Some time I add grated carrots and fried ground nuts to the Mandakki Mixture. It is very tasty when we add fresh coconut oil. (If you are used to coconut oil then only you can enjoy).

Here is a recipe of Mandakki Uppugari, a spicy and tasty dish and I am sure you too will enjoy having this Udupi style of Mandakki Uppugari.



Things Needed :

Mandakki (Puffed Rice) : 1 Big Bowl
Onions :1
Rasam Powder : 1 Tea Spoon(MTR)
Carrot : 1 Medium Size
Coconut : Fresh and grated : 1/2 Cup
Ground Nuts : 3 Table spoons
Green Chilly : 1
Coconut Oil : 1 Table spoon
Salt : required


Method :

1. Heat a big pan on the fire and put Puffed rice and roast on low flame. (for 4 to 5 minutes) till it gets crispy.
2. Wash and cut green chilly, onions. Roast or fry ground nuts with 1 Tea spoon of oil they are slightly brown.
3. Grate carrots and coconut.

4. Now take a big bowl and put cut onions, green chilly and grated carrots. Add little salt.

5. Add rasam powder and mix it well. Add coconut .

6. Add puffed rice, coconut oil and mix the whole thing nicely.

7. Shift the Ready spicy Mandakki to a serving bowl.

8. Add fried or roasted ground nuts on the top. Mix it well and serve ready Mandakki Uppugari.

 Note :

Add Mandakki at the end to keep it crispy or it may become too soft. You can also add  jeera and coriander powder instead of Rasam powder. You can also add any brand of rasam powder. Adding more onions is an optional. You can also add cut coriander leaves. Adding some fried sev is also optional. ( I did not add).  You can use any type of Puffed Rice as you wish.  I have used Udupi side puffed rice. (Specially for this kind of Mandakki).
Time : 20 Minutes

Crispy Mandakki (Murmure) Kadle Puri

MandakkI (Puri ) or Puffed rice is used to prepare many dishes like chats, bhel puri, masala puri or masala mandakki even mandakki unde or puri unde (sweet version) also can be prepared. Puffed rice or Mandakki oggarane is very famous in North Karnataka side. I just tried this snack and we can munch them as it is or try your own version and create your chat.

Mandakki or Puffed rice is used in breakfast cereals, snack food like puffed rice cakes. Mandakki is also used in temples and gurudwaras as Prasad.Mandakki and Menasina bajji from Davanageri in Karnataka is world famous. Likewise Churumuri which is a popular chat which is prepared using  grated carrots, fried or roasted groundnuts, onions and some spices.

Puffed rice is known as Puri or Kadle puri in Kannada, Murumure - Marati, Muri in Assamese and Bengali, Murra or Murmure-Hindi, Mamra - Gujarati, Malaru - Malayalam, Bhuja - Oriya, Pori - Tamil, Fulla - Sindhi and Murmural in Telugu.
Here is a Crispy, yemmy riecipe of Mandakki which you can prepare and store for 2 to 3 days (at least) and go ahead with your creations and tongue licking recipes.

Ingredients 

Mandakki (Puffed rice) : One big bowl. ( 1 Pack ).
Plain Corn flakes.(Any brand) : 2 to 3 cups
Ground Nuts : 1/2 cups
Oil : 3 Table spoons
Salt : as required
Green chilly : 2
Curry leaves : Handful (or more)
Red chilly Powder : 1 Tea spoon
Ingh : a pinch
Mustard seeds : 1/2 Tea spoon
Urid dal : 1/2 Tea spoon
Turmeric powder : a pinch or 1/4 Tea spoon

Method :

1. Keep a dry pan on the fire and heat. Roast Mandakki on low flame till they are crisp. Stir gently in between slowly so that it does not get burnt at the bottom.

2. Remove the mandakki once they turn crispy.
3. Keep a small pan on the fire. Put oil and heat. Put mustard seeds and urid dal. Let the mustard seeds spurt.
4. Add cut green chilly and fry till they turn crispy. Now add curry leaves and fry.
5. Add ground nuts and fry till they turn brown. Add ingh and mix it well.
6. Add corn flakes and fry them for 10 seconds.

7. Add Crispy Mandakki and mix it well. Add chilly powder, turmeric powder and salt.
8. Mix all the ingredients well and put off the gas .

9. Shift the ready Mandakki to another bowl. Let it cool.

10. Store this Mandakki in a tight tin or in a bottle.

11. Use this Mandakki to prepare your own chat.

12. You can munch this Mandakki as it is with some coconut pieces too.

Preparation time : 20 minutes 
Servings : 5 to 6

 Note : 

1. Churumuri preparations : Cut onions, tomatoes, grate carrots and green chilly. Mix all this with little coconut and some rasam or sambar powder, lemon juice or mango powder (amechur powder). Add the required mandakki and mix it well and put a nippattu or chips on the top and serve immediately.
2. Bhel Puri : Cut tomatoes, onions, grate carrots, raw mango pieces. Add green chutney (coriander leaves, green chilly) and sweet chutney (dates and jaggery ). Mix it well and add Mandakki and put fried Semiya (Sev) on the top and serve.
 You can add some Chenna ( Huri Kadale) and more ground nuts and have them with some fried mixture. They taste fantastic.

Puffed Rice flakes. chat.( Puri in kannada )

Puffed Rice/Mandakki / kadle puri is one of the dish that we can munch at any time of the day. 



You can see the vendor selling in the parks or any rest areas in India. Preparing Mandakki is different place has its own originality and they are specialized in doing it. Here is a simple Puri that you can munch without hesitating at any time of the day. It is prepared with less oil and mild spicy.
Try and enjoy

Things Needed :

Puffed Rice: 1 Big Bowl.      
Ground Nuts : 3 to 4 Tablespoons
Cooking Oil : 3 Tablespoons
Chilly powder : 1/2 Teaspoon
Roasted chenna : 1 Tablespoon
Salt As required 
Mustard seeds : 1/2 Teaspoon
Turmeric powder : A pinch .
Red chilly : 1 
Curry Leaves : 6 yo 8 




Method :

1. Clean Puri/ Mandakki and keep it aside.
2. Keep a pan and heat. Add oil to it. \

3. Put mustard seeds and red chilly. (Cut chilly in to two parts).
4. Let mustard seeds splutter.

5. Add curry leaves and fry. Add ground nuts and fry till they turn golden brown.



6. Add  turmeric powder and mix it.  Add roasted chenna 

7. Add cleaned Puri. Add chilly powder on the top.

8. Add 1 teaspoon of oil on the top and mix it slowly. Put off the gas.
9. Sprinkle very little salt on the top and mix it again

10 Add dry coconut pieces and serve crispy mandakki .

Note : 

It is always better to use fresh Puffed rice/Mandakki/puri.  If the puri turns soft, you need to bring back the crispness in it. Put plain puffed rice and keep it on low flame.  Stir once in a while. Let it be there on sim flame for at least 5 minutes. Then put off the fire and leave the puri in that hot pan.
Then you can add it to the ready ingredients and mix it. 
Adding any spicy is optional. You can just eat them as they are. It is nice and home made. You can also add onions and grated carrots. But it turns soft within few seconds.
It is nice to carry it for long journeys and outings .
