Almonds - Corn flakes Laddu

Laddu/ Laadu / Unde is one of the healthy sweet done and stored for munching at any time of the day.
Here are some laddu which I prepared for distributing it for our relatives with Kashi Tirtha. We had been to Kashi/Varanashi , Gaya, Ayodhya and Prayag Rajya. It was beautiful trip with our friends and always cherish the memory. 


Visiting Kashi Vishwanatha temple is one such moment and taking dip in Ganga River and other holy rivers really an awesome feeling. Ok it is left to people with believers and non believers any ways. One has to enjoy his or her feelings and cherish the moment that he or she gone through.
Coming back to Laddu, I have prepared this type of laddu using corn flakes and ground nuts, for Our Kashi tour and distributed among us in the bus while travelling to Gaya from Varanashi. 
I have done that laddu on Facebook live too. It is an easy, healthy, quick and simple to prepare and you can enjoy it any time of the day. Here I used almonds instead of groundnuts. 
The ingredients I used are mainly Corn flakes, almonds, jaggery. Thats it.Minimum ingredients and healthy laddu to be munched. It stays for a week or little more days and it and no coconut used here.
Lets see the recipe now :

Ingredients :

Corn flakes  : 500 Grams
Almonds : 250 Grams 
Jaggery : 250 Grams 
Ghee : 3 To 4 Tablespoons

Method :

1. Dry Grind Kelloggs corn flakes. ( No needs to roast )
2. Dry Grind almonds /badami in to rava consistency and shift it to a bowl.
3. Mix both the powdered almonds and corn flakes and keep it aside.


4. Take a big pan and keep it on a fire. Add powdered jaggery and 1/4 Cup of water.
5. Let it dissolve completely. Sieve it and  keep it aside.
6. Now take cleaned jaggery and put it to a pan. Keep it on the fire and let it boil.


7. Stir in between and let it get one string consistency. Let it be on low flame. (Whole procedure).
8. Add powdered almonds - cornflakes mix and mix it well. 


9. Take away the pan from fire and keep it down.
10. Put 3 to 4 tablespoons of ghee and mix it nicely. 
11. Take a small portion from it and prepare laddu. 


12. If you find the laddu mixture dry add 2 tablespoons of hot milk and mix it well. 
13. You can easily prepare laddu. Prepare laddu with remaining mixture.


14. Let it completely cool. Store in air tight box or bottle.

Note :

Check with one string consistency. Do not add more water. It takes long time to get thick.
Do it on low flame. Adding ghee more /less is optional. Adding more ghee taste better. You can add ghee instead of hot milk if the mixture turns dry. Heat the ghee and then use it. It is always better to clean jaggery and then use it.
Time : 30 Minutes
25 to 30 Laddus can be prepared. (The size must be small).

Little Millet - Corn Flakes Laddu

I have prepared laddu using Little millet flour and corn flakes. One might ask Why always laddu?
I have the answer here to tell you that Laddu is an easy, healthy and delicious food to prepare.
Here is one more laddu recipe and is with little millet flower and corn flakes this time.


Laddu /laadu/unde is a sweet delicious ball shape ( normally ) sweet dish and it you can gobble it at anytime of the day. It is filled with vitamins, minerals, energetic food and keeps you energetic whole day. You can add this laddu to your breakfast food list. Along with your regular breakfast you can eat this laddu, it helps to full for the long time. It provides minerals to body and take care of your health in proper way.
Let us see the recipe  :
I have used little millet flour, jaggery, coconut, cardamom and corn flakes.

Ingredients :

Little Millet flour /Store bought flour : 2 Cups
Corn flakes : 3 to 4 Cups
Jaggery : 1 Cup /250 gr
Mixed Nuts 1 /2 Cup /Cashew pieces , almond pieces, raisins and dates.
Coconut /Fresh : 1 Cup
Ghee : 1 Cups
Dates : 100 Grams
Cardamom : 6 to 8 Pods

Method :

1. Soak jaggery in a cup of water and melt it completely and sieve it. Keep the clean jaggery aside.
2. Take a tablespoon of ghee and put it to a pan. Keep the pan on the fire and fry nuts including dates.
3. Shift it to a small bowl. Grate coconut and keep it aside.


4. Dry roast or fry little millet flour nicely till the raw smell disappear. ( Low flame ).


5. Remove the seeds from cardamom. Dry grind corn flakes, cardamom seeds and keep it aside.


6. Keep clean jaggery in a big pan. Put the pan on the fire. Let it boil and get one string consistency.
7. Let it boil for another 1 to 2 minutes. Let the flame be low. Add grated coconut and mix it well.
8. Now add roasted little millet flour and mix it well. Add powdered corn flakes and cardamom.

9. Add ghee and fried nuts and mix all the ingredients nicely.


10 Take a handful of laddu mixture and prepare ladddu. Prepare laddu the same way with remaining mixture.

11. Laddu /Laadu Unde is ready to serve.


12. Serve or Eat whenever you feel like ...and store it in a air tight bottle or box. ( Better to use glass or steel box ).

Note:

Dry roast millet on low flame till it turns slightly golden brown ( Do not burn the flour). Adding more ghee makes the laddu tasty. Use of more or less ghee is optional. Use of coconut is optional. Clean the jaggery if you are using shop bought jaggery. Adding more or less dry nuts is optional.
Time : 30 Minutes
Serves : 35 to 40 Laddu can be made.

Oats - Corn flakes - Walnuts Laddu

Happy Deepavali to One and all. Let us celebrate together and enjoy the festival of lights. 
Deepaavali is one of the National Festival of India and people do celebrate all over the world where ever they live. This Deepaavali I have prepared Oats - Corn flakes - Walnuts Laddu/laadu/Unde.
This Oats - Corn flakes - Walnuts Laddu is good for health and you can munch on any time of the day.



This Year  Deepavali starts from 6 - 11 - 18. The preparation of sweets and savouries is already started. I was just thinking of some thing healthy, easy and energetic laddu/ laadu/ Unde to prepare. So tried laddu with cornflakes, oats, walnuts and dates.

This laadu can be kept for many days and You can distribute to your friends, neighbours and take it for travelling too.
Let us see the recipe Now : 

Things Needed :

Oats : 400 Gr pack 
Corn Flakes : 1 Big Bowl 
Walnuts : 1 Small Cup
Raisins : 1 Cup 
Jaggery   250 Gr or little more 
Ghee : 1 Cup
Roasted Chenna /Huri Kadale /Putani : 1 Cup
Dry Coconut /Kopra / Kobbari : 1 small one 
Cardamom : 8 to 10

Method :

1. Dry roast oats on low flame for 5 to 6 minutes. Dry roast corn flakes for 3 to 4 minutes. Let it get cool.  Dry grind oats and corn flakes into powder.


2. Dry grind copra and cardamom pods. Dry grind roasted chenna in to coarse powder. ( Just give a churn). Do not turn them as powder.  Remove from the mixi jar and keep it aside.


3. Dry roast corn flakes and dry grind it with walnuts.

4. Keep a big pan on the fire and heat. Add jaggey and put some water. (1/4 cup).
5. Let jaggery melt completely. Sieve jaggery with a siever. Keep the clean jaggery mixture aside.
6. Keep a pan on the fire and put jaggery mixture and stir continuously.
7. Let it get into one string consistency. Add dry ground coconut.


8. Now add all the powdered ingredients one by one. Dry ground oats, corn flakes.

9. Mix all the ingredients nicely and put off the fire. Now add coarse powdered chenna and mix it.


10. Put the pan down ,add ghee and raisins. Mix it nicely.

11. Take a handful of Oats - Corn flakes -  walnuts and coconut mixture and press it tightly, closing your hand. Try to give a round shape and prepare laddu.


12. Prepare the rest of laddu and keep it in a big bowl. Let it be there for at least 20 to 30 minutes.
13. Put them in a air tight boxes and  cover the lid. Store and serve these Corn flakes - Oats and Walnut laddu. 

14. Serve these Laddus in the evening or any time of the day. Store it in air tight box.

Note :

You need to roast it nicely so that the raw smell disappear and it taste so good.
Adding raisins more /less is optional.
Adding a cup of ghee adds taste to Laddu. Adding more /less ghee is optional.
Add little more ghee / little fresh boiled milk if you are not able to give a ball shape abd then prepare Laddu. Frying raisins in a tablespoon of ghee is optional. ( I have used it as it is ).
Time : 30 Minutes.
30 Laddus can be prepared. ( According to size ).

Dates - Nendra Bale Halva

Dates - Nendra Bale Halva is a sweet dish. It is prepared using Nendra bale and dates with some dry fruits. It is soft and delicious sweet which you really relish it with your calm mind.


I have used Dates, Nendra bale and elakki banana with raisins, a few cashews and jaggery. I have also used poppy seeds on the top and it gives a yummy taste and you really enjoy having them.
Let us see some benefits of eating Poppy Seeds in our diet.
Poppy seeds are good content of calcium and magnesium. Calcium helps our bones and teeth to be strong and it helps the nerve and muscle function well. Magnesium helps in providing energy to the body. Poppy seeds have good source of anti -inflammatory properties. It helps to treat sleep disorder/insomnia. It is a good source of dietary fiber, minerals like calcium, magnesium andiron, vitamins and omega 6 fatty acids. Poppy seeds are used in Ayurvedic medicines. It is said to be a great pain reliever. It improves immunity in our body. It helps to improve digestion and prevent kidney stones. It is also used in cosmetics.
Let us see the recipe Now :

Things Needed : 

Nendra banana /Nendra balehannu : 2
Yalakki Banana : 2
Corn flakes : 1 Bowl ( Medium sized bowl)
Jaggery : 1 Cup
Almonds : 10 to 12
Raisins : 1 Handful
Ghee : 3 to 4 Tablespoons. / Little more than 1/2 cup
Dates :  250 Grams
Chiroti Rava /Thin variety of rava : 3 Tablespoons
Poppy Seeds/ Gasagase : 2 Tablespoons


Method : 

1. Remove the seeds from dates and remove the outer layer of bananas.

2. Dry grind almonds /cut almonds into thin slices.
3. Grind dates and bananas together and remove it from the mixi jar.


4. Dry grind cornflakes and keep it aside.

5. Keep a pan on the fire and add jaggery. Add an half cup of water and let it melt completely.
6. Remove it from the pan and sieve it with a siever and keep the clean jaggery aside.
7. Keep a big pan on the fire and put cleaned jaggery and ground banana -dates mixture. Add powdered corn flakes. Mix all the ingredients well.


 8. Stir nicely and let it cook on low flame. Add ghee in between and keep stirring the mixture.



 9. Slowly the mixture starts to thicken and it starts to leave the pan. Add ghee and stir nicely.
 10.  Add small size rava/semolina and stir for 3 to 4 minutes. See that rava mixes well with halva.


11. Let the flame be slow and medium. It changes its colour and starts to leave the ghee.
12. Apply little ghee on a plate /tray and keep it ready. Add raisins and powdered almonds.
 13. Put the ready Dates - Nendra Banana to the ghee greased plate and spread it evenly with a help of spoon.



 14. Let it cool completely. Add poppy seeds on the top. Press a little on the top.


 15. Cut Dates - Nendra Bale halva , according to your wish. ( Small / Big/diamond shape or a round shape.



16. Serve them once it is cooled completely.  

 Note.

Halva is soft and delicious. Adding more nuts is optional. Adding more jaggery is optional. Do not add much semolina though it helps to thicken fast, it taste differ. Adding more ghee is optional.
Time : 30 to 35 Minutes.
Serves : 25 to 30 Small sizes.
