Almonds - Oats - Ragi Laddu

Laddu/Laadu/Unde as we call it a sweet round ball of different healthy ingredients like jaggery or sugar, ghee and other ingredients. I always prepare varieties of laddu, and I do give it to our relatives and friends. Here I have prepared Rag and Oats laddu with dry fruits like almonds and raisins.
I have used Oats, almonds, raisins, ragi flour/finger millet flour and jaggery.


Oats are very rich in fiber and good for diet. Almonds filled with minerals and vitamins. Ragi flour is gluten free and good iron content.Raisins are best dry fruit and loaded with good health benefits. Jaggery provides energy and take care of our health.
Let us see the recipe now :

Things Needed :

Sesame Seeds : 2 Tablespoons
Oats : 250 Grams
Ragi /Finger Millet flour : 2 Cups
Almonds : 1 Small Cup
Raisins : 1 Small Cup
Jaggery : 1 1/2 Cups
Ghee : 1 Small Cup
Dates : 1 Big Bowl

Method :

1. Dry roast sesane seeds,  finger millet and Oats till the raw smell disappear. (Dry roast in low flame).


2. Dry grind Almonds, sesame seeds, Oats separately and remove it to a big bowl.



3. Powder Jaggery and keep it aside.
Remove the seeds from dates and smash the dates and see that it turns as one bundle.

3.Keep a pan and put powdered jaggery and 1/2 cup of water. Let it melt completely.
4. Sieve the liquid jaggery and keep it aside.

5. Now keep a pan on the fire and heat. Put cleaned jaggery and stir till it turns into one string consistency.
6. Add raisins and mix it well and stir for  a minute.


7. Put powdered Oats, Almonds and dry roasted Ragi/Finger Millet. Mix the ingredients nicely.
8. Pour jaggery mixture on the top of Ragi - Oats - Almonds powder. Do not pour at once. (
Add it little by little).


9. Add a cup of ghee and mix the ingredients nicely.

10. Take a small amount of laddu mixture and give a laddu shape. ( Round Ball shape).


11. Repeat the same and prepare all the laddu. Let it cool completely.


12. Store in a air tight box. Eat or Serve as you wish to.

Note :

The jaggery consistency should be Little more than one string consistency. Adding any nuts on the top is optional. Frying raisins in ghee is optional. I have used it with out frying. Use of more ghee is optional. You can add little more melted ghee, if you feel that laddu mixture is dry and not able to prepare laddu. (If it dries up it breaks while you are making laddu).
You can also use organic joni bella to prepare the laddu. No need to clean it.
Time : 30 to 40 Minutes.
Serves : 25 to 30 Laddus.

Oats - Raagi - Almonds and Dates Laddu

It is easy, delicious and you can munch at any time of the day without hesitating because it is loaded with healthy ingredients.
Oats -Ragi - Almond -Dates Laddu Is yummy laddu.It is easy, delicious and you can munch at any time of the day without hesitating because it is loaded with healthy ingredients.It is good for all age group and will love to have them.
I have used oats, raagi flour, almonds, little sesame seeds, dates and little jaggery.
Let us see the recipe now :

Things Needed :

Oats : 2 To 3 Cups
Raagi Flour : 2 Cups
Sesame Seeds : 1 Tablespoon
Jaggery : 1 Cup (Powdered)
Dates : 1 Cup
Almonds : 1 Small Cups
Raisins : 2 to 3 Tablespoons


Method :

1.  Dry roast 2 cups of Oats, 1 tablespoon of sesame seeds and 2 Cups of Raagi flour and let it cool.


 2.  Dry grind oats, Almonds and sesame seeds.






3. Take 1 cup full of dates, remove the seeds from dates and cut in to small pieces.


4  .Now put 1 cup full Powdered jaggery to a big bowl.Add 1/2 cup of water and mix it well.
5.  Keep this jaggery on the fire and let it boil for 2 minutes. Sieve this jaggery mixture.


6.  Now keep a pan on the fire and put cleaned jaggery and boil it till it turns one string consistency.
Add raisins to it.

7.  Pour the jaggery mixture to the bowl and add ghee. Mix it slowly.
8. Add 1 /2 Cup ghee and cut dates pieces. Slowly mix all the ingredients nicely. (It is bit hot because of jaggery mixture).


9. Take a handful of the mixture and prepare laddu.


10. Let it cool. Store them in airtight box or bottle and munch whenever you want to.

Notes :

Fry oats and raagi on low flame.
Fry sesame seeds till it spluteer and turn golden brown. It adds to the taste.
Dry grind sesame seeds with roasted oats.
Use of jaggery can be minimized by using more dates
Adding more/less ghee is optional.
Adding coconut is optional. I have not added coconut or dry coconut. Laddu stay longer period if you skip using coconut.
Time : 30 Minutes.
Serves : 30 to 40 Laddus can be prepared.

Crunchy Chakkuli

Chakkuli /Chakli/ Muruku is one of the favourite munching snack at any time of the day. I do love it . I also wants try varieties of chakkuli but not going beyond the tradition. I always think of what to do and how it might taste.


This Crunchy Chakkuli also from Traditional way but just made it bit easy. I have tried roasted and powdered urid dal and rice powder. Here I have pressure cooked Urid dal and then added to flour and made chakli dough.
When you are trying the recipe please do try in smaller quantity, so that even if it turns bad you do nt feel sad, or you can use your creativity and turn then as something else.
Let us see the recipe Now :

Things Needed :

Rice flour :  3 Cups
Boiled Urid Dal : 3/4 Cup
Roasted Chenna / Putani /Hurikadale : 1/2 Cup
Sesame Seeds : 1 Tablespoon
Red chilly powder : 1 Teaspoon
Jeera /Cumin Seeds : 1 Tablespoon
Salt : As required
Butter : 1 1/2 Tablespoons
Oil : To Fry : 2 Cups or little more
Mould and the plate


Method : 

1. Wash and pressure cook urid dal and leave it for cooling. Smash the cooked urid dal nicely.
2. Dry grind roasted chenna/hurikadale/putani and keep it aside.
3. Take a big bowl and add rice flour, powdered chenna, chilly powder, salt and butter.
4.  Add jeera/cumin seeds and sesame seeds. Mix all the ingredients nicely.


5. Add smashed urid dal and mix all the ingredients nicely once again.
6. Add water little by little and prepare the chakli dough. ( It should not be too loose or tight ).
6. Kneed the dough well and divide them in to small portions.


7. Wash chakli mould and insert chakli plate inside.


8. Take a portion of chakli dough and put it inside the mould.
9. Now you press the chakli mould on a plate and give a round shape to chakkuli.
10. Press and prepare chakkuli on a tray or plate.


11. Keep a pan on the fire and heat. Add oil and let it get hot.
12. Put these circle shaped chakkuli to hot oil and fry on both sides till they turn crisp. ( On medium flame).

13. Put the done chakkuli on a kitchen tissue so that extra oil can be absorbed by tissue.


14. Repeat the same and prepare the remaining chakkulis



15. Now chakkulis are ready to serve. Put them in a air tight box or bottle and store.

Note :

Cook dal with 1/2 cup of water. Let it cook nicely. Soft dal is easy to smash it. You can grind the dal instead of using the hand to smash.
You can also use more chilly powder to give chilly taste. Adding more butter turns chakkuli very soft and it might dissolve in oil while frying. So do not add more butter. Water use should be very little at time, just add enough water and prepare dough. If the dough turns very loose it might absorb more oil and chakkuli will not be proper. If the dough turns very thick, you may have to put your energy to press the mould to prepare chakkuli. Poori dough consistency will be perfect. Adding more oil to fry is an option. I use minimum oil to fry. Fine rice powder should be used.
Time : 30 to 35 Minutes.
30 to 40 Chakkulis can be made. ( According to size ).
