Jack Fruit -Rava Sweet Idli

Jack fruit or halasina hannu ( in Kannada) is a seasonal fruit. Most of us love Jackfruit and especially we from Dakshina Kannada, do prepare many many dishes out of Raw Jack Fruit and Fruits when they ripe. Not only enjoy eating Jack Fruits we prepare Payasa (Kheer), Halwa, Kadabu (Idli), papad (from half ripe and fully ripe fruits), sweet pakodas etc. Eating roasted Jackfruit Papad is fun during the rainy seasons. Childhood memories are always sweet when remember that, you feel really missing something now. Though you can not bring back those moments, you just think and cherish the good time. Oh where am I heading to? Hmmm This Jack fruit took me back to my childhood days where I loved and lived in my Doddamma's (my mother's elder sister) house those days. Let me tell youthe process and preparations and what are the benefits we get from Jack Fruits.

Llets see some benefits we get from Jack fruits.
Jack fruit is a sweet and delicious fruit with many health benefits. It contains high amount of carbohydrate and calorie. It is rich in antioxidants and protect us from ageing and degenerative disease.It increases eye vision and protect from cataract. It is a good source of potassium. It also improves bone and skin health. It contain high amount of Vitamin C and it increases immune system function to protect from infections. It also helps to maintain the blood pressure and improve the digestion. Jackfruit contain potassium. Jackfruits is rich in dietary fibers.

Here is a recipe of "JACKFRUITS RAVA SWEET IDLI."    It is tasty, healthy and easy to prepare. We can have these Jackfruits idlis are really good for breakfast for the people who like sweet taste. Very nice dish for evening snack and we can have them for dinner too. Since it is steamed food its good for all age group. We can pack Jackfruit Idli for lunch box or snack box for a change.

Ingredients : 

Jack Fruits : 4 Cups
Rava (Semolina ) : 3 Cups (Medium Sized)
Jaggery : 1/2 Cup
Pepper Pods : 8 to 10 Pods
Jeera : 1 Tea spoon   
Coconut : 1 Cup or more
Eno Salt : 1 Tea spoon (Heap)

Method :

1. Grate coconut and keep it aside.
2. Now grind coconut, pepper pods, jeera till coconut is soft and nice.

3. Add Jackfruits and grind nicely till they are soft.
4. Add jaggery and grind till they mix well with dough.

5. Now take a big bowl and pour ground jackfruit mixture to the bowl.
6. Add rava and mix it nicely .
7. Keep a pressure cooker or idli cooker on the fire and put some water at the bottom of the cooker.
8. Apply oil or ghee on each mould of the idli plate.
9. Add Eno to the Rava Jack Fruit mixture and mix it well.
10. Put a spoon of this Eno mixed mixture in the idli plate and arrange the plates.
11. Keep this plates in the pressure cooker, cover the lid and steam for 15 minutes.


12. Put off the fire and open the lid and check idli to know its cooked well.




13. Remove idli from the plate and put it in a serving bowl.

14. Serve with ghee on the top of idli.

Note : 

You can use raw rice instead of Semolina. Rice should be soaked in water for 2 hours and ground with coconut and jackfruit. ( If using rice). Using Rava is a healthy and it is light when eaten. You can use more jackfruits. Adding Eno is optional. Remember if you use more jackfruits do not add Eno. Adding more or less jaggery is also optional.

Jack Fruit Spicy idli. ( Plate Idli ).

Now it is the season for Jack fruits. You can see Jack fruits every where in Karnataka or in whole of India. We love eating jack fruits and in Dakshina Kannada side ( that is South Karnataka) people make use of this Jack fruit or raw jack for cooking. Many dishes like kadabu, dosa, appa,(muluka - a fried item), payasa, Halwa Burfi, chips, Happala and other sweet dishes can be prepared using jack fruits. Jack fruits are turned in to Halwa consistency and kept for using when this fruit is not available. (When the season gets over). As I said before lots and lots of items are prepared using Raw jack or the fruit Jack.

Lets Know some benefits  that we get from using Jack Fruits.

Jack fruit is rich in dietary fiber. Jack fruit has small amount of Vitamin A. It is a good source of antioxidant Vitamin C. It is rich in Vitamin B complex and Vitamin B 6.Fresh fruits are rich with minerals like potassium, manganese, magnesium and iron.

Here I have tried some thing from the same thing. One must be wondering, what is that new derived from the same thing..I appreciate my self some times when I get  an idea to prepare some thing new from the same ingredients. Zara hatke. I do go ahead to prepare some dishes and I am 100% sure the try will never go waste. It is also an assurance.

Jack Fruit Spicy Idli is a main dish and we can have them for breakfast, as snack in the evening or for dinner. It is soft and spongy and healthy because I have used Rava (Samolina) instead of rice. I am sure all age group will surely like this dish and the jack fruit lover will surely agree to take Jack fruit idli for his lunch box. It can be packed for Kids in their lunch or snack box.
I have used 2  stainless steel deep plates to prepare idli instead of idli plates.

Ingredients :

Medium size Rava : ( Semolina) : 3 Cups
Jack fruits : 1 Bowl
Jeera : 1 Tea spoon
Pepper Pods : 1/2 Tea spoon ( 10 to 12)
Green chilly : 1
Coconut : 1 Cup
Ginger : An inch
Coriander leaves : 2 to 3 Table spoons
Curry Leaves :1 Hand full (10 to 12 )
Salt : to taste.
Eno Salt : 1 Tea spoon

Method :

1. Grate coconut and cut jack fruits in to small.

2. Now grind coconut, curry leaves, ginger, green chilly, jeera, pepper and coriander leaves with little water.
3. Add jack fruits and grind till the mixture is smooth. Add salt and grind for 10 seconds.


4. Put rava in a big bowl.

5. Add ground mixture to the rava bowl and mix it well and leave it for 10 minutes.

6. Apply oil or ghee to the plates and keep it aside.
7. Keep a pressure cooker on the gas stove and put water and a bowl. ( Keep the bowl upside down).
8. Now add Eno salt to the rava jack fruit mixture and mix it well.

9. Pour this mixture to the ready plates and keep in side the pressure cooker and cover its lids.
10. Let it cook for 15 to 20 minutes. (Steaming). Put off the gas.
11. Take out the idli from the plate and put it in a serving bowl. (Cut them into small pieces).




12. Serve Jack fruit Spicy idly with a side dish you have prepared.


13. We can have them without the side dish too. Put a spoon of ghee on the top before serving.
14. We had this for breakfast and ate with honey and ghee. It was delicious.

 Note:

 You can use idli plates instead of stainless steel plates. You can also add more jack fruits while grinding. Do not add any jaggery to the mixture. Adding Eno salt is optional. ( Adding more coconut and jackfruit helps the idli to be soft). To check whether the idli is completely cooked, pierce a knife edge or spoon. ( if it is not cooked well, inserted spoon or knife edge will be sticky.) Make sure it is cooked well. Idli cooker can be used instead of pressure cooker.
Time : 40 Minutes
Serve : 6

Simple Rava - Oats Idli (Plain)

Rava -Oats idly is a simply super dish and we can have them for breakfast, lunch, dinner or even as snack too.
Rava - Oats  idli normally is a quick done dish and you do not need much of time or ingredients. These idli is very easy to prepare and healthy too.

Rava is a wheat grain and Oats are known and labeled as Healthy food. Combining these too and prepared idly, using little curd, salt and Eno salt. Idlis are soft and spongy and fits for all age group people diet.

Lets see some benefits of using Oats and Curd.(Yogurt).
Oats enhance immune response to infection. It stabilizes the blood sugar. Oats are rich source of magnesium. They are full of fiber and they have antioxidant compounds. Oats help to control the blood pressure. They are great source of phosphorus, iron and vitamin B1

Using curd in your diet helps to improve the digestive system and strengthen the immune system. Helps to
cope with stomach problem and helps to get strong bones and teeth since it contain calcium. Helps to minimise the risk of high blood pressure.It also helps control high level of cholesterol.

Here is a recipe of Rava - Oats Idli , that is very easy to prepare and minimum ingredients that you have at home. As I said it before we can have these idli for any time of the day.

Ingredients :

Rava (Semolina) : 2 Cups (medium sized)
Oats : 2 Cups
Curd : 1 Cup
Eno Salt : 1 Tea spoon
Salt : Required
Water : required.

Method :


1. Roast oats and rava for 3 to 4 minutes and dry grind oats when it is cooled.


2. Put 1 glass of water to curd and mix it well.
3. Take a big bowl and add Semolina,, dry ground Oats, salt and curd.
4. Mix it well and leave it for 5 to 10 minutes.

5. Apply oil or ghee to the idli plates and keep it ready.\\\\
6. Put 2 glasses of water in a pressure cooker or idli cooker and keep it on fire. Let the water boil.
7. Now add Eno salt to rava oats mixture and mix it nicely. 


 8. Place a spoon of rava oats mixture in each mould in the idli plate.
9. Arrange the plates in the pressure cooker and steam for 10 minutes. (do not use weight).
10. Take out the idli from the pressure cooker and serve with your choice of side dish you have prepared.

 Note : 

Roasting rava is purely optional.  ( I have roasted).
Adding sour curd helps to get the best idli. You can also use cooking soda instead of Eno. You can add some grated coconut if you like. These idlis goes very well with any kind of sambar and coconut chutney.
Serves : 4 to 5 (20 idlis can be done)
Time : 30 minutes.

Oats - Rava Idli with Ground Nut Chutney

Oats Rava idli is a main course dish and it is prepared using Oats, Rave (Semolina) and curd. Rava idli is a variation of the popular South Indian breakfast item "idli". Idli is prepared with medium size rava normally.

Rava idli is a speciality of the state of Karnataka in India and mainly popular dish in Udupi restaurants. The story behind the invention of Rave Idli is very interesting. One of Bengalooru's famous hotels, Mavalli Tiffin Rooms (MTR) claims to have invented this Rava Idli. According to Mavalli Tiffin Rooms, during World War 2, when rice, which is the main ingredient used in idli was scarce, these hotels used semolina instead of rice and that was a great success. Even now Mavalli Tiffin Rooms Rava Idli is very famous and maintains the same good standard.

Rava is a popular ingredient in Asian cuisine and popular in Western Cusine too. Semolina is made from durum wheat and its high gluten content. It is digested slowly and helps us from over eating.
Some of the benefits of Rava are that

  • Rava contains potassium and improves kidney function. 
  • Semolina is a good source of two vitamins (E and B). 
  • Semolina helps us to lead an active lifestyle. 
  • Semolina is a quick and nourshing source of enegry. 
  • Semolina contain phosphorus, zinc and magnesium are beneficial for the bones and nervous system.

Oats are source of dietary fiber - A few important points about Oats are

  • This fiber contains a mixture of about half soluble and half insoluble fibers. 
  • Soluble fiber helps in lowering the blood cholesterol. 
  • Oats also contain iron, magnesium and vitamin B1. 
  • Oats enhance immune response to infection. It stabilizes the blood sugar.


Here is a recipe of Oats Rava idly 
Oats adds softness to rava idly and in this way we can use oats and get the benefits from it. Oats Rava idli is soft and tasty. It can be prepared for breakfast, as snack or even for dinner too. You can have Oats Rava idli with Sambar or Sagu (thick vegetable curry with spices), or any kind of chutney, chutney powder or even pickle.

I am sure all age groups will definitely enjoy eating this idli.

Ingredients :

Rava (Semolina) : 2 Cups
Oats : 2 Cups
Curd : 1 Cup
Salt : to taste
Eno Salt: 1 Tea spoon
Curry leaves : 1 handful
Coriander leaves : 2 to 3 Table spoons
Mustard seeds : 1/2 Tea spoon
Urid dal : 1 Tea spoon
Oil : 1 Tea spoon
Green chilly : 1
Water : Required
Coconut:  2 Table spoons (optional)
Carrot : 1


Method

  1. Wash and cut green chilly, curry leaves and coriander leaves. Grate carrot.
  1. Dry roast Oats for 3 to 4 minutes and allow it to cool and dry grind it.

  1. Now keep a pan on the fire and heat.
  2. Add oil, mustard seeds and urid dal.Add curry leaves and green chilly.
  3. Add rava and fry for 3 to 4 minutes.

4. Put all the ingredients (green chilly, coriander leaves, carrot, curry leaves) together and add salt.

5. Add ground oats, roasted rava and salt, mix it well.



6.  Add Curd or Butter milk 




7.  Wash and apply oil to all the idly plates.
8.  Keep a pressure cooker or Idly cooker on the fire and put 2 glasses of water. 

9  Now add a tea spoon of Eno to the rava idly dough and mix it nicely. 



10. Put a spoon of idli batter to all the idly plate immediately and cook idli for 8 to10 minutes.
 


Serve hot idli with the favorite Chutney or Sambar you have prepared.

Put a spoon ghee on HOT OATS-RAVA IDLI before serving (optional).

Note :

Must roast the rava till the raw smell disappear. Roast on medium flame and be careful not to burn the rava. The curd should be savour to get the best result. Do not use lot of water to dilute the curd. You can also use coconut, grated carrots and peas. Mix it at the end and put the batter to the plate.Do not keep the batter after adding Eno salt. (Idli turns hard).

Serves :  4 to 5
Time : 20 minutes

  Ground Nut Chutney :

Roast 2 to 3 table spoons of ground nuts and green chillies and leave it for cooling. Grate coconut (1 cup) and mix roasted ground nuts, green chilly, a small marble size tamarind and 2 green chilly. Use little water and grind it nicely till paste. Shift the chutney to a serving bowl. You can also add spurt mustard and curry leaves to the chutney.
Note : Do not remove the outer skin of ground nut after roasting. Adding more chilly is your option.
Adding coconut is also left to the option. You can also use coriander leaves and curry leaves while grinding.

Time : 5 minutes.
Serving : 4 to 5

Urd - Raw Rice Kadabu (Using Jack fruit tree leaves as Moulds)

Kadabu is made with Idly dough but using more urd and less quantity of rice. Using the jack fruit leaf as mould definitely gives aroma and the shape is also liked by kids, since its too soft all age group people love to have them. You can have these Kadubu with chutney, sambar, rasam , majjige huli, jaggery, chutney pudi or even honey will do. Along with fresh butter or ghee and little pickle also a good combination. We can have these kadubu for break fast, lunch, as evening snack or at night for dinner. These Kadubus are a healthy dish since it is done with steaming.
Things Needed :
Raw Rice: 3 Cups.
Urd Dal  1 1/2 cups
Salt : To taste.
Water : Required water to grind.
Jack fruit leaves: 20 ( Not so tender ones or not ripe ones).
Ready to serve Kadabu
Method:
1.Wash and soak rice and urd dal seperately for 3 to 4 hours.
2. Grind urd till paste using little by little water.
3. Grind Rice with very little water till rava consistency.
4. Now mix both the ground dough, add salt and leave it for ferment. (over night).
5. Pour ferment idly dough in jack fruit tree leaf mould and steam it in the idly container or pressure cooker for 30 to 40 minutes.
6.Separate the kadabu from the jack fruit tree leaf mould and serve with ghee on the top and the side dish you like the most.
7. Coconut chutney, pickle, chutney pudi, sambar, kai huli even sweet coconut milk  even mango rasayana  all go very well with this kadabu very well.
Note: The proposition of rice and dal should be the above said measurement. Some time the urddal quality will not be so good. So use little more urd than the said quantity. The dough should be ferment properly. Using a grinder to grind rice and urd dal will certainly gives a better texture. You can also long tumblers  (steel glasses) instead of jack fruit tree leaves. You can use medium size rava instead of raw rice.
Serves : 3  to 4
