Jack Fruit Pulav

Jack Fruit Pulav is a main dish and one can enjoy this any time of the day. I just wanted to try this Pulav since the day I watched Gundanna (Krishna) preparing this on Suvarna Paka Shale. I like his way of cooking I do watch some time, though I do not follow it much. This one attracted me. We people from Udupi (Daskhina Kannada - Karnataka), prepare so many items using jack fruit, raw jack, jack seeds. Jack fruit payasa is very famous as well as jack fruit kadubu. Jack fruit palya, appa, happala there are many varieties. I have not come across this Pulav. As I said it sounded great. So wanted to try and it was nice I should say. People who like jack fruit aroma will surely like it. I have added very little spices (as instructed by Gundanna), I did not add chakra Moggu (Star Anise).

Lets see some benefits of having Cinnamon in our diet.
Cinnamon helps to regulate blood sugar and good for diabetics. It also reduces LDL cholesterol levels and good for heart health. It has natural  anti infections compounds. It also help to reduce pain linked to arthritis. It has a natural food preservative. It contains fiber, calcium, iron and manganese. It is also good for menstrual pain and infertility and balances the hormones in women. It is said that cinnamon is good for diseases like Parkinson and brain tumor and meningitis.
I have used Basumathi rice, a very little spice and jack fruits. As I said the jack fruit lovers can thoroughly enjoy having this special dish. It is a very simple dish that anyone can cook.
No Onion - No Garlic in " Jack Fruit Pulav ".

Things Needed :

To cook :
Basumati Rice/Any other raw rice : 1 Cup
Capsicum : 1
Jack Fruits : 5 to 6 Fruits
Coconut milk/plain boiled nandini milk or any milk : 1/2 Cup
Coconut : 2 Tablespoons 
 Spices used :
Cinnamon : a small stick
Cloves : 4 to 5
Green chilly : 1
Pepper Pods : 3 to 4
Ghee/Oil  : 2 Tablespoons
Pulav leaves/Indian bay leaf : 1
Cardamom : 1
Ginger ? Ginger Powder : 1/2 Teaspoon
Jeera/ Cumin Seeds : 1/2 Teapoon
Cashew nuts : 2 Tablespoons (optional).
Saffron rakes : 2 to 3 (Or turmeric powder : 1/4 Teaspoon)
Salt : to taste

Method :

1. Wash and remove the water and keep the rice aside.
2. Wash and cut capsicum, green chilly into small and keep it aside. Cut jack fruits into small pieces.

3. Grate coconut. Grind 1/2 Cup of coconut and squeeze out the milk and keep it aside. (thick and thin milk together).
4. Now Keep the pan on the fire. Heat and put ghee. Add jeera/ cumin seeds.

5. Add cardamom, cloves, cinnamon pieces, whole pepper pods. Fry them nicely for 1 to 2 minutes.
6. Add Cashew nuts and fry them till they turn golden brown.
7. Add cut capsicum and chilly and fry for 2 minutes.

8. Add rice, dry ginger powder  and mix it well and stir on low flame for 2 minutes. Add bay leaf on the top and stir slowly.
9. Add saffron and put off the gas. Shift the fried rice mixture to the rice cooker or pressure cooker.
10. Add 2 glasses of water and salt. Mix it nicely. Add coconut milk/ plain milk.

11. Let it cook for 5 minutes. Add jack fruits and cook. (Electrical cooker switch of  automatically once the rice cooked).

12. Add a tablespoon of coconut on the top and mix it slowly. You can add 1 tablespoon of fresh ghee on the top. (Adds to the taste).
13. Mix it slowly and shift the cooked Jack Fruit Pulav to a serving dish.
 14. Serve with any chutney or as you wish to.

Note :

You can use pressure cooker to cook Jack fruit Pulav.
Use of required water changes if you use different varieties of rice. For example Basumathi rice 1 = 2 , Sona Masoori - 1 = 3.
You can use plain milk instead of coconut milk. Adding extra coconut grating is also optional. Use of more or less ghee is also optional.
Do not add onions or garlic to this Pulav. This Pulav taste sweet. You can prepare Pineapple Pulav also in this method. Adding oil instead of ghee.  
Time : 30 to 40 minutes 
Serves :  2 to 3.

Simple Jack Fruit Sweet Salad

Jack Fruit Sweet Salad is a snack dish, and we can have them any time of the day.  You can serve this just before the food. Jack fruit is one the favourite fruit of many. It is a seasonal fruit and the season is almost over.
Always it is said that Jack fruit must be eaten before food or when you are hungry and Mangoes at the end of the food or after food. Jack fruits are loads of carbohydrates and it is one of the energy giving fruit.

Lets see some benefits of eating jack fruit in our diet. 
Jackfruit is very hign fiber content, zero fat and high energy containing fruit. It contains high amount of nutrient like vitamin, minerals, carbohydrates and protein. It is a good source of calorie and no cholesterol or saturated fats. Jackfruit is rich in vitamins and minerals.  It is rich in antioxidants and good for ageing and degenerative disease. It is also good for good eye sight and improve bone and skin health.
It is one of the simple dish, anybody can prepare and njoy eating or serving to guest. Very little ingredients are used to prepare this dish.

Things Needed :

Jack Fruits : 6 to 8
Almonds : 1 Tablespoon
Honey : 1 Teaspoon
Coconut : 2 Tablespoons (optional).

Method :

1. Cut jack fruits into small and keep it aside.
2. Roast almonds for 10 to 15 seconds and dry grind once it is cooled.
3. Grate coconut and keep it aside.
4. Now take a big bowl and put dry ground almonds, cut jack fruits and a teaspoon of honey. Mix it nicely.
5.Put jack fruit mixture in a serving dish. Add coconut on the top and serve Jack fruit Sweet Salad.
Note : You can add more mixed dry fruits. Using ghee and coconut is optional. Coconut adds to the taste. You can also
add grated carrots to jack fruits. Adding honey (add very little) adds to the aroma to the dish.
Time : 5 minutes.
Serves : 2 to 3.

Jack Fruit Kadubu

Jack Fruits are the seasonal Fruits and most of us love to eat fruits. We also prepare many dishes using jack fruits. Jack Idlis, kadubu, appa,(jack fruit fritters), dosa, payasam, papads etc etc.  Raw jack can be used for curries, papad and chips etc.Jack furit kadubu is an authentic dish of Dakshina Kannada and Malnad. Each household kitchen has one or the other dish made out of Jack fruits during jack fruit season.
Lets see some benefits of eating Jack Fruits.
Jackfruit is very hign fiber content, zero fat and high energy containing fruit. It contains high amount of nutrient like vitamin, minerals, carbohydrates and protein. It is a good source of calorie and no cholesterol or saturated fats. Jackfruit is rich in vitamins and minerals. It is rich in Vitamin B, Vitamin C, Magnesium and potassium. Jackfruit contain high amount of carbohydrates and calorie and it provides energy. It is rich in antioxidants and good for ageing and degenerative disease. It is also good for good eye sight and improve bone and skin health. Jackfruit helps to maintain ideal blood pressure and reduce the risk of stroke and heart attack.
I have used Jack fruits, raw rice, coconut and jaggery to prepare this jack fruit kadubu. We can have them for breakfast, or snack or even for dinner.

Things needed :

Jack Fruits : 10 to 15 Fruits
Raw Rice : 2 Cups
Fresh Coconut : 1 Cup
Jaggery : 1/4 Cup
Salt : a pinch
Banana leaves : 4 (Full size).

Method : 

1. Soak raw rice for 1 to 2 hours.
2. Dee - seed jack fruits
3. Grate coconut.
4. Wash banana leaves and cut them in to desired size.
5. Grind coconut and jack fruits nicely.
6. Add soaked raw rice once jackfruit and coconut mixture turn as paste.
7. Grind it till paste. Do not add water while grinding or add very little water.
8. Add jaggery and then grind all mixture nicely.
9. Remove from the mixi jar to a bowl and add salt. Mix it well.
10. Now spread the cut banana leaf. Add a ladle of ground jack fruit mixture and close it.
11. Repeat the same and fill all the cut banana leaves with Jack fruit mixture.
12. Keep a pressure cooker or idly cooker. Add some water at the bottom and keep a plate.
13. Arrange raw jack fruit mixture folded in banana leaves and cook for minimum 20 to 25 minutes.
14. Prick a knife/spoon edge to see its done. (if it is cooked the dough does not stick to the knife edge).
15. Remove cooked kadubu from banana fold and serve hot Jack fruit kadubu with ghee on top of the kadubu.

Note :

Using more fruits turn the kadubu soft and nice to eat. They taste better once it is cooled. Adding more or less jaggery is optional.
You can also use medium size rava instead of raw rice. ( have a look at older post). If the ground mixture turns watery add little rice powder to it. The dough consistency should be idli dough. You can also use idli plates to cook jack idli instead of banana leaf. Banana leaves give a good aroma and is healthy. You can also use Teak wood leaves instead of banana leaves. It adds to the colour and flavour.
Time : 1 hour to soak rice - 10 minutes for preparation and 30 minutes to cook 
Total time : 1 hour 40 minutes.
Serves : 3 to 4.

Raw Jack - Mango Curry

This is the time we get Raw Jack. Just before it grows and turns as fruit. Raw Jack. can be used in many types of curries and other items. We can  prepare Raw Jack dry curry, (Palya), Raw jack sambar, Jack coconut curry, jack papad, chips, curd curry and even pickle etc.
Here is a recipe of Raw Jack Curry. I have used some raw mango pieces instead of tamarind pulp. It has given a tangy taste to the curry. Adding jaggery helps the curry to reduce the tangy taste. Jaggery helps to reduce the gastric properties while cooking, Since it contain anti oxidant properties.
Raw Jack Curry can be eaten with plain rice, chapati, poori, naan, idli, dosa and even any kind of rotti.
Lets see the Recipe :
Things Needed:
Raw Jack : 1 Bowl
Toor Dal : 1/2 Cup
Raw Mango Pieces : 1/2 Cup ( Or half of one medium sized mango)
Jaggery : 1 Table spoon
Coconut : 3 to 4 Table spoon
Rasam Powder : 2 to 3 Table spoons
Salt : to taste
Turmeric Powder : a pinch
Oil : 1 Tea spoon
Mustard seeds : 1/2 Tea spoon
Jeera : 1/2 Tea spoon
Curry Leaves : 5 to 6
Asafoetida (Ingh) : a pinch
Method :
1. Remove the top skin of the raw jack nicely and clean it nicely. Cut the vegetable in to pieces. (Remove the hard stem from inside).
2. Soak these cut pieces in water for 5 to 10 minutes. Wash it again and Pressure cook for 4 to 5 minutes. Leave it for cooling.


3. Wash and cook dal in a pressure cooker. ( You can pressure cook at one time keeping them in separate bowls). .


4. Grate coconut and cut mangoes. Grind coconut, jeera, mango pieces and rasam powder together with little water till paste.
5. Remove from mixi jar.
 6.. Keep a pan on the fire. Put cooked dal, raw jack, salt, turmeric powder and jaggery. Mix it well and let it boil for 2 to 3 minutes.
7.. Add ground coconut mixture and mix it slowly and cook for another 2 more minutes.
8 Shift it to the serving bowl and add mustard,ingh and curry leaves. splutter. 
9. Serve this Raw Jack Mango curry with the main dish.
Note : It is very difficult to remove the outer skin of Jack fruit. Use a strong knife. Be careful. Apply some oil to the knife before start cutting the Jack fruit. Jack fruit contain loads of wax in it. You kneed to cut the stem (the hard part inside the jack fruit). Cooking in pressure cooker will save the time. Adding extra jeera along with rasam powder helps to reduce the gas. You can also use Maiyyas or MTR Rasam powder. I used home made. (Roast 1/4 Tea spoon of methi seeds till brown, add coriander seeds ( 2 Table spoons), fry nicely and add red chilly ( 5 to 6) and jeera. (1/2 Tea spoon). Add ingh and curry leaves. Leave it for cooling and dry grind. Fresh Rasam powder is ready to use. Using of more chilly is optional. Use of onions and garlic to the curry is also optional. I have not used.
Using  a spoon of ghee adds to the taste.
Time : 40 minutes.
Serves : 4 to 5

Urd - Raw Rice Kadabu (Using Jack fruit tree leaves as Moulds)

Kadabu is made with Idly dough but using more urd and less quantity of rice. Using the jack fruit leaf as mould definitely gives aroma and the shape is also liked by kids, since its too soft all age group people love to have them. You can have these Kadubu with chutney, sambar, rasam , majjige huli, jaggery, chutney pudi or even honey will do. Along with fresh butter or ghee and little pickle also a good combination. We can have these kadubu for break fast, lunch, as evening snack or at night for dinner. These Kadubus are a healthy dish since it is done with steaming.
Things Needed :
Raw Rice: 3 Cups.
Urd Dal  1 1/2 cups
Salt : To taste.
Water : Required water to grind.
Jack fruit leaves: 20 ( Not so tender ones or not ripe ones).
Ready to serve Kadabu
Method:
1.Wash and soak rice and urd dal seperately for 3 to 4 hours.
2. Grind urd till paste using little by little water.
3. Grind Rice with very little water till rava consistency.
4. Now mix both the ground dough, add salt and leave it for ferment. (over night).
5. Pour ferment idly dough in jack fruit tree leaf mould and steam it in the idly container or pressure cooker for 30 to 40 minutes.
6.Separate the kadabu from the jack fruit tree leaf mould and serve with ghee on the top and the side dish you like the most.
7. Coconut chutney, pickle, chutney pudi, sambar, kai huli even sweet coconut milk  even mango rasayana  all go very well with this kadabu very well.
Note: The proposition of rice and dal should be the above said measurement. Some time the urddal quality will not be so good. So use little more urd than the said quantity. The dough should be ferment properly. Using a grinder to grind rice and urd dal will certainly gives a better texture. You can also long tumblers  (steel glasses) instead of jack fruit tree leaves. You can use medium size rava instead of raw rice.
Serves : 3  to 4

Jack Fruit Idly

Jack Fruit is a seasonal fruit and it is used for many dishes in South Canara. We do prepare curries, payasa/Kheer, sweet and spicy idli, appams, dosa and guli appa. Now a days Jack fruit is used in Rice Palav also.

Preparing Jack fruit idli/kadubu is very common in South Canara and it is healthy dish. During jack fruit season almost all houses prepare these idlis at least once a week. It can be eaten for breakfast or as snack. It is also done in using Indian oak /Tega leaves, idli plate, banana leaves or even flat plates.
Though the producer preparing the dough is same the container or the leaves gives a different shapes and aroma. It is the best way to get healthy properties of the fresh edible leaves.
Here I have done idli, kadubu and the tatte kadubu using jack fruits, raw rice and jaggery with coconut.
 Let us see the recipe Now :

Things Needed :

Raw Rice (Dosa Rice ): 2 cups.
Coconut : 1 Cups.
Jaggery : 1/2 Cup.
Jack Fruits: 20 to 25 fruits. (separate the seed and its cover before using the fruit).
Salt : to taste.
Ghee or oil : 2 Tea spoons.

Method :

1. Wash and soak rice in water for 2 to 3 hours.
2. Grate coconut and cut jackfruits in to small pieces.

3. Now grind grated coconut and cut jackfruit together .

4. Add soaked and drained rice and grind it along with jack coconut mixture till rava consistency.
5. Add  jaggery and salt and grind it for 2 minutes.
6. Remove the jack rice mixture from the mixi jar and put it in a bowl.


7. If you are using a idli plate apply cooking oil to each plate and put the dough on each idli mould.
8. Cook in a pressure cooker or idli cooker for 20 to 25 minutes. '

9. If you are using plates apply oil on each plate and pour the ground dough and cook in idli cooker for 25 to 30 minutes.

10. If you are using tega leaves/indian oak tree leaves/ Teak wood tree leaves, wash the leaves and then put a spoonful of dough in the middle of the leaf and fold.

11. Arrange these kadubu in a idli cooker and cook for 25 to 30 minutes.



12. Serve Ready kadubus with ghee. Hot or cold both way you can enjoy these traditional jack fruit kadubus.

Note :
No need to use any water while grinding. Jack fruits do contain lots of water. ( or use very little water)
If the dough turns watery add some rava/semolina to the mixture. The taste differ.
Adding more /less jaggery is optional.
Adding more coconut helps the kadubu to be tasty. Use of more jack fruits helps to reduce the amount of coconut.
Remember the jack fruit must be ripen or Jack fruit kadubu does not taste good.
Time : 40 minutes.
Serves : 4 to 5 .
