Harawe Soppina Huli ( Spinach Curry).

Harave Soppu/Amaranth leaves is one of the healthy leaves and you get fresh leaves around the year. It grows well and full of vitamins and minerals during rainy season since it gets proper weather to grow naturally. We can prepare Sambar, (plain, or with coconut ), dry curry, or curry with curd and so many varieties. Here is the Recipe that  contain moong  daal and its easy to prepare and you can have this curry with hot rice or chapatis or pooris too.

Let us see the recipe Now:
NO onion OR No garlic added here. We normally cook our curries without onions and without garlic. It is one of the traditional food of our Udupi. 

Things Needed:

Harave Soppu ( Spinach leaves) : 1 Big bundle ( Green or Red).
Green chilly : 3 to 4
Tamarind Pulp: 2 to 3 Table spoon.
Salt : to taste.
Jaggery :2 Tablespoon.
Moong Daal : 1/4 Cup.
Oil : 1 Tea spoon.
Mustard seeds : 1/2 Teaspoon
Urd Daal : 1/2 Teaspoon.
Curry leaves: 6 to 8
Sambaar Powder: 2 Teaspoons.
Turmeric powder : a pinch.

Method :

1. Wash and cook moong daal in pressure cooker for 4 to 5 minutes.
2. Wash and cut  Harve soppu into small pieces.
3. Soak small ball size of tamarind in hot water and squeeze out the pulp and keep it aside.
4. Wash and cut green chilly ( Just slit the chilly )
5. Keep a pan on the fire and heat. Put oil, mustard seeds and urid dal. Let mustard splutter.
6. Add Ingh and curry leaves and mix it well. Add cut harivesoppu and fry for 2 minutes.
7. Add water and turmeric powder. Let it cook for 5 minutes and leaves get soft.
8. Add tamarind pulp and jaggery. Add slit green chilly.
9. Add cooked moong dal and mix it well. Cook nicely for 2 to 3 minutes.
10. Add sambar powder and mix it well. Let it cook for another 2 minutes.

11. Shift the ready Harawe Soppina Huli to a serving dish.
12. Add a teaspoon of fresh butter before serving Hot Harawe Soppina Huli. ( Optional).

Note : 

See that leaves are cooked till soft. Adding onions and garlic is optional. Some opt to add garlic seasoning to any leafy curry. ( Optional). Adding any brand of Sambar Powder is optional. I have added Mayya's Sambar Powder. Adding more or less chilly is optional.
Time : 30 Minutes
Serves : 2 to 3.

CARROT AND BEANS CURRY( SAMBAAR )

Carrot and Beans Huli is a curry.    You can have  Chapati, Poori , Rice and Akki Rotti  with this curry.
Things Needed :
Carrot : 2 to 3
Beans : 1/2 cup
Toor Daal : 2 Table spoons
Coconut : 1/2 cup ( 3 to 4 Table spoons - Fresh and grated ).
Daniya ( Coriander ) seeds : 2 to 3 Tea spoons
Jeera ( Cumin Seeds) : 1/2 Tea spoon.
Red Chillies : 4to 6
Tamarind : 2 Table spoons pulp
Asafoetida :  a pinch
Mustard seeds :1/2 tea spoon
Urd Daal : 1/2 tea spoon
Curry leaves : 5 to 6
Oil : 1 Tea spoon
Salt : to taste.


Method:  Boil Toor Daal  and cut vegetables in a pressure cooker for 5 minutes.  ( Wash and cut vegetables according to your wish ).   Keep it aside.
Grind coconut , coriander seeds, cumin seeds, tamarind pulp and red chillies in to paste and keep it aside.
Now take a pan keep on the fire . Put oil and heat.  Add  mustard seeds and urd daal. Let mustard spurt. Add curry leaves and add boiled toor daal and vegetable mixture. Add salt and boil for 2 minutes . Now add ground coconut mixture and mix well. Soak Ingh in one tea spoon of water and mix well . Add this ingh  to the boiling  Sambaar. . Cook for 5 minutes and pour it to the serving bowl.
Serve hot Sambaar with Rice chapati or dosas....
Note :  Do not  over cook the vegetables. You can cook vegetables separately.  Soak tamarind in hot water  for 2 minutes and squeeze out the pulp . You can also add potatoes to this sambaar.  You can use  Brinjaal instead of carrots .  You can use pumpkins , Mangalore cucumber ,  Beetroot. also... ( Use any one of the vegetable to get better taste). Do not add onions to this curry. Mixing of onions will give different taste.
2 to 3 Servings.

Idli (Rice steamed Cake)

Idli  is normally a breakfast dish. It is one of the healthy steamed dish. You can have them as snack or for dinner. It one of the traditional dish of Karnataka people I can say. Idli is very famous in Karnataka . Varieties of idlis you get but remember that eating plain idlis are always healthy.


Idli is prepared using dal and rice. Now a days there are varieties of idli available in the hotels and at the food points.
Lets see the recipe now

Ingredients :

1 Cup Urid dal
2 Cups of Raw rice
3.Salt : Required

Different vessels are used to steam the same idli batter. A big glass, deep bowl type plate, Idli tatte/plate etc.

Method :

1. Wash and soak rice and urid dal separately for 2 to 3 hours.
2. Grind them separately. Grind rice into rava consistency and urid into paste consistency. Add only  required water while grinding the rice.


3. Remove it from the grinder and put it in a big bowl. Add salt and leave it for ferment. (over night or 6 to 7 hours).

4. Morning when you are ready to prepare idli, wash idly plates and apply ghee or oil.
5. Keep the pressure cooker or idly cooker on the fire. Add some water at the bottom and place a plate or bowl.
6. Put a ladle of idli dough to the idly plate and place it in the cooker and cover the lid. Do not put weight if using the pressure cooker.


7. Cook for at least 8 to 10 minutes. Put off the gas and open the lid. You can prepare different shapes of idli. The second one is cooked with t

8. Remove the idli with the help of a spoon or a knife edge.


9. Serve with a spoon of ghee and the side dish you prepared.


10. Idlis are eaten with sambar and chutney normally. You can also eat them with pickle, chutney powder, sugar, jaggery and rasam.

Note :

Grind urid dal first and then grind rice. You can use rice rava instead of grinding rice. Do not use more water while grinding urid or rice.
Dosa rice can be used to get good idly. (any kind of raw rice can be used.
24 Idlies can be prepared.
Time : Soaking time 3 hours + grinding + 30 minute (Grinder) + ferment - 8 hours + Cooking time = 10 minutes. 
Sambar
Cook dal, any vegetables and mix it together. Add a tablespoon of tamarind and salt. Let it boil nicely. Add rasam/sambar powder, turmeric powder and mix it well. Add little jaggery. Mix it nicely and let it boil nicely. Add mustard splutter with curry leaves and ingh. Add washed coriander leaves at the end and serve Ready Sambar with Idli. I have used brinjal for sambar.
Time : 20 Minutes
Serves : 4 to 5
The same Idli Dough can be poured into these type of cups and steam to get the soft idli



Jack fruit leaf is stitched as glasses and idli dough is poured inside to steam. These are healthy idlis loaded with health benefits.

White Pumpkin/Ash Gourd Sambaar

White Pumpkin/Kumbala kai/ Doodi or Kumbada/Ash Gourd is one of the best healthy vegetable. It is available in most of the time around the year.
I have prepared saambar/curry with Ash gourd, toor dal and spicy saambar powder which is prepared at home.

Lets see some benefits of using Ash Gourd in our diet.
Ash gourd is said to be packed with nutrition. It is loaded with Vitamin B 1. Vitamin B 3 and Vitamin C. It is full of minerals like calcium, potassium and it helps to maintain a healthy blood pressure level. Ash gourd juice is used like a common tonic because of its healthy qualities. Ash gourd works as cooling agent to our body. They have good amount of fiber and good for digestive system. They are the best remedy for constipation. Ash gourd juice is used for home cure for peptic ulcer. They can be used for dealing diabetes. In Ayurveda the fruit is used for astama , coughs, urine retention and internal hemorrhage. The rind is good for diabetes and seeds are good to remove tapeworms. Ash gourd juice is used for mercury poisoning and snake bites in Ayurveda. White Pumpkin is low in calories and it is good for treating obesity.
White Pumpkin Saambar has no onion or no garlic. It is also one of the traditional dish, we say it as bolu huli since no coconut is used and goes well with idli, dosa, chapatis, plain rice and rotis.
Lets see the recipe now :

Ingredients :

To Cook :
Toor dal : 1/2 Cup
Ash gourd pieces : 1 Big bowl. (1/4 Kg)
To Add :
Sambar Powder/ Rasam Powder : 3 to 4 Teaspoons
Tamarind : Small marble size
Salt : As required
Turmeric powder : a pinch
Coriander leaves : 2 Tablespoons
Seasoning : 
Mustard seeds : 1/2 Teaspoon
Urid dal : 1/2 Teaspoon
Ingh : a pinch
Curry leaves :  6 to 8 leaves
Oil : 1 Teaspoon

Method :

1. Wash pumpkin and remove the outer skin and cut it into pieces according to your wish .
2. Cook for 5 to 6 minutes with little water till they turn soft. Keep it aside.


3. Wash and pressure cook toor dal with little water and leave it for cooling.
4. Soak tamarind in hot water and squeeze out the pulp and keep the pulp aside.
5. Keep a big bowl on the fire. Heat. Add oil and mustard seeds.
6. Add urid dal. Let the mustard seeds splutter. Add curry leaves and ingh.
7. Add cooked white pumpkin pieces, cooked dal and salt. Mix it well.

8. Add turmeric powder and tamarind pulp. Mix it well and let it cook for 2 minutes.
9. Now add sambar powder/rasam powder and mix it nicely and slowly.

10. Let it cook for 3 to 4 minutes. Shift the ready curry to a serving bowl.
11. Add cut coriander leaves and mix it well.

12. Add a spoon of ghee before serving and serve with the main dish you have prepared.

Note :

Use of dal is optional. Toor dal/ Moong dal. I have used toor dal. Adding sambar/rasam powder is also optional. You can use any brand of powder. Make sure it taste good. (do not add the old powder). Adding a green chilly gives good aroma to the curry. Adding extra ghee to the curry is optional. (According to me adding ghee to the curry adds to the taste). Use of jaggery is also optional. ( I did not use ).
Time : 30 Minutes 
Serves : 3 to 4 





Fresh Sambar powder Recipe : 

Dry roast  1/4 teaspoon of methi seeds, 1 teaspoon of urid/channa dal, 2 tablespoons of daniya/coriander seeds, 5 to 6 red chilly (byadagi) and 1/2 teaspoon of jeera one by one. Add a handful of curry leaves and a pinch of ingh while dry roasting. Dry grind them once the ingredients cools. You will get fresh, aromatic sambar powder.

Spinach/Palak Saambaar. (Curry)

Spinach/Palak  Saambaar is a gravy dish. You can have this curry with plain rice, chapatis, rotis, dosa or idli.
Spinach is loaded with minerals and vitamins. Fresh palak leaves invite you to buy them and you think of preparing many dishes using them. Fresh and green Palak leaves are available in the market always. Eating leaves is always a healthy habit that every one knows.
Lets see some benefits of eating Palak/Spinach in our diet.
Spinach is one of the wonderful green leafy vegetable for its wholesome nutritional, antioxidants and anti cancer contents. They are low in calories and fat. They are loaded with soluble dietary fiber and good for weight loss. They are rich in iron and good for producing red blood cell productions. They contain Vitamin A and Vitamin C. and anti aging properties. Spinach leaves are excellent source of vitamin K and it helps in body building. They are also rich in Vitamin B complex and Vitamin B6.They have good amount of minerals like potassium, manganese, magnesium, copper and zinc. They help to control heart rate, blood pressure. Palak leaves are good source of omega -3 fatty acids. It is said that regular eating of palak leaves helps in prevent osteoporosis (weakness of bones), iron deficiency anemia. The soft leaves protect human body from cardovascular disease and cancers of colon and prostate.
I have used Palak/Spinach leaves and some spices to prepare this Spinach Saambar. It is easy to prepare and anyone can try preparing this sambaar.
No onion or garlic is used in Spinach/Palak Sambar.
Things needed:

To Cook
Spinach : 1 bundle


Methi/ fenugrik seeds : 1/4 Teaspoon

To Grind :
Coconut : 1/2 Cup ( fresh and grated )
Red chillies : 4 to 5
Coriander Seeds : 1/2 Tea spoon
Jeera ( cumin ) seeds : 1/4 tea spoon
Pepper pods : 2 to 3 
To Add : 
Tamarind juice : 1 table spoon.
Turmeric a pinch
Salt : to taste.
For seasoning : 
Mustard seeds : 1/4 tea spoon
Urd daal : 1/4 tea spoon
Curry leaves : 6 to 8 leaves
Oil : 1 Tea spoon
Asafoetida : a little


Method :
1.Wash spinach cut into small and cook with little water.Add methi seeds while cooking.
2.Soak tamarind in water and squeeze out the pulp and keep it aside.
3.Grate coconut and grind with coriander seeds, red chilly, jeera and pepper
4.Keep a pan on the fire and put cooked palak, dal and turmeric powder.
5.Add soaked tamarind pulp, salt and mix it well and cook for a minute.
6.Add ground coconut mixture and stir well. Let it boil for 3 to 4 minutes.

7.Shift the Sambar to a serving dish and add mustard sees, urid dal, curry leaves, ingh seasoning.
8.Spinach saambaar is ready to serve.
Note : You can add a potato and any cooked dal to the sambar. You can add little water to the sambar and make it more liquid consistency. Use of onions and garlic is optional. You can also add other vegetables like carrot, beans or any other vegetables.You can use any market bought sambar powder instead of grinding. Use of toor dal and coconut is also optional. You can use moong dal instead of toor dal. Use of dal gives a good thickness to the sambar.
Time : 25 to 30 minutes.
Serves : 2 to 3

MIxed Vegetable Sambar.

Sambar (Curry) is a gravy dish and it can be one of the side dish too. Sambar is prepared in many ways. Sambar can have many or a few vegetables too. It can be with coconut or with out using coconut. Sambar goes well with white or boiled rice plain rice, idli, dosa, chapati or even rotis and poori.

Here is a Sambar recipe, used vegetables like carrots, Knolkol and beans. I have used freshly roasted and ground spices. Using fresh roasted spices turns the curry with fresh aroma of the spice and sambar taste better.
Lets see the recipe now.

Ingredients:

To cook :
Toor Daal:1/4 cup
Carrot: 2 (Medium size)
Knolkol :1 Medium size)
Beans :  10 to 15.
To roast : 
Coriander seeds: 1 Tea spoon
Fenugrick seeds: 1/4 Tea spoon
Cummin Seeds: 1/4 Tea spoon
Red Chiillies: 4 ( or Red chiilly powder: 1/2 tea spoon)
Urad daal: 1/2 Tea spoon
 To Add :
Tamarind: a little ( small lemon size)
Turmeric powder: a pinch
Asafotodia: a pinch
Salt: to taste
To Dry grind :
 Dry roasted Spices.
To season :
Oil: 1 Table spoon
Mustard seeds: 1/2 Tea spoon
Curry leaves: 8 to 10
Coriander leaves: 3 to 4 sticks.


Method:

1. Cook Toor/Moong dall in a pressure cooker for 8 to 10 minutes.
2. Wash and cut vegetables according to your wish and boil separately until it cooks.( for 10 minutes)
3. Keep a pan on the fire and heat.  Add fenugric seeds and urad daal ,roast until it turns into brown, add coriander seeds and chillies, roast for 1 minutes, add curry leaves ( 4 to 6 ) and cummin seeds, put off the gas.
4.  Dry roast spices and prepare fresh sambar powder or you can use any brand of sambar powder.
5.Soak tamarind in 1/2 cup of water, squeeze out the pulp and keep it aside.
6. Keep a big pan on the fire. Add cooked dal, vegetables
7. Add tamarind pulp, turmeric powder and salt.

8. Mix it well and cook for 2 minutes.
9.Add ground spice mixture and mix it well and cook for 3 to 4 minutes.
10. Shift the Sambar to a serving dish and add mustard seeds, ingh and curry leaves seasoning. Add cut coriander leaves and serve with the main dish you prepared.

Please Note: You can use any type of vegetables to make Sambaar.Ex: White pumbkin, Brinjal, onion and potato, Red pumpkin. Radish, All types of spinach, lady's finger. The consistency of curry can be as you wished. (thick or more liquid). I did not add any coconut here. Adding coconut to the curry is optional.
Time : 30 minutes.
Serves : 3 to 4
Fresh Sambar Powder :
Dry roast/ or Add a teaspoon of oil  and roast , 1/4 Teaspoon of methi/fenugrik seeds, add 1/2 teaspoon of urid dal. Add some chilly (byadagi chilly), Add 2 Tablespoon of coriander seeds and fry them till they turn slightly brown. Add Jeera /Cumin seeds, a pinch of ingh and curry leaves. Put off the fire and let it cool. Dry grind the sambar powder and use it for the sambar.
