Spicy Peas -Tomato Soup

How about having some freshly prepared Soup? 
It is cold and rainy season here. Having some thing hot and a bit spicy soup really makes you happy. Soups are always refreshing and a kind of energizing drink.

There are varieties of soups and each one can just prepare using their creation. Creating something healthy is really a good habit too. Definitely not much of cream/cheese is not allowed in my cooking. I am not that fond of these things either. Thats why I can say there are different ways of preparing dishes. I am not blamming any one here. It is your creation and just go ahead do what ever you thought of.
It is a rainy season here and the weather is getting cold and cold. How about having some Tomato and peas soup? It is an easy, healthy and quick dish that anyone can easily prepare and enjoy.
I have just used some peas tomato and spice like pepper and clove. Little milk is added to it.
Lets see some benefits of having peas in our diet.
Green Peas are rich nutritious legumes/vegetables rich in minerals, vitamins and anti oxidants. Tender peas is said to be low in calories. They have no cholesterol and they contain good amount of soluble and in soluble fiber. They are rich in minerals like protein, folic acid, calcium, iron, copper, zinc and manganese. They do contain Vitamin C and it is a powerful natural water sooluble anti oxidant. They do help the human body to develop resistance power. against infections and inflammations. Vitamin A which is essential nutrient required for maintaining healthy membranes, skin an deye sight. Garden peas are rich source of Vitamin K. that helps in bone mass building function.
Let us see the recipe:

Things Needed :

Tomato : 1
Fresh/Frozen peas : 1 Cup. (100 grams)
Peppar pods : 4 to 5 pods
Clove : 1
Ginger : 1/2 Teaspoon (Grated)
Salt : To taste
Coriander leaves : 2 to 3 Tablespoons
Turmeric powder : a pinch
Boiled milk. : 1 Cup
Water : 2 to 3 Cups.

Method :

1. Wash and boil tomatoes for a minute and put off the fire. Let it cool.
2. Remove the outer layer of the tomato and keep it aside.
3. Boil peas with a cup of water for 5 miunutes. It is better to use fresh peas.
4. Let it cool. Put 1 Tablespoon of cooked peas and tomatoes in a mixi jar.
5. Add clove, ginger and little water. Grind it till paste.
6. Put the ground mixture and needed water, salt and turmeric powder.
7. Let it be very watery consistency. Add crushed pepper.
8. Let it boil at least for 3 to 4 minutes. Put off the fire and add boiled milk.
9. Shift this Peas - Tomato Soup to a serving bowl. Add coriander leaves.


10. Serve it when it is piping hot.

Note :

I have used frozen peas. Wash the peas before using it. Boil it nicely. You can use fresh peas if available. (Always better to use fresh peas). You can add little butter and cream. ( optional). I have added fresh milk. Adding more vegetables like carrots, beans potatoes are optional. It taste better.
I have cooked tomato and peas together. (Optional). You can add pudina/mint leaves. It adds to the aroma. You can add some chilly powder, chat masala powder or any spice of your choice.
Time : 10 Minutes
Serves : 3 to 4.

Beetroot Juice / Drink

Beetroot juice is just ideal for this hot summer. It helps to keep your body cool. Our friend Usha 's (Cukkemane)  mother has prepared this juice/drink when we visited them sometime back. Usha has cooked beetroot for preparing salad/slices. Her mother had used the rest of the water for preparing juice. She added some sugar and mixed it nicely with water and served as juice. That was nice.
Here I have cooked the whole beetroot and prepared that into juice.


Lets see some benefits of using Beetroot in our diet.
Beetroot helps to improve blood circulation, good for skin, it helps to prevent cataracts and respiratory problems. They are good for indigestion. They are full of fiber and good for people who suffer from constipation, piles, kidney disorders and gall bladder disorders. It helps to improve blood circulation. They are rich in nutrients, vitamins and minerals. They are rich in Vitamin C, magnesium, iron, copper and phosphorus. They are very low in calories and no cholesterol. Beetroot is full of fiber and it helps in reducing cholesterol. They also help to increase the level of good cholesterol. ( HDL). Beetroot is good for pregnant women. They contain Vitamin B. They are good for liver health. They do contain significant amount of carbohydrates and they help to boost energy.
Remember Beetroot have the highest sugar content of all vegetables.
Lets see the recipe now :

Things Needed :

Beetroot : 1 Medium size
Lemon : 1
Jaggery : 2 to 3 Tablespoons
Chat Masala : A pinch (optional)

Method :

1. Wash and remove the outer layer of beetroot, wash it again and pressure cook for 5 minutes.
2. Remove from the pressure cooker and slice the beetroot into small pieces..
3. Slice them into small piece. Grate or powder jaggery and keep it aside.
4. Grind sliced beetroot pieces with little water. ( You can use beetroot cooked water).
5. Add jaggery and grind for 2 minutes.
5. Remove from the mixi jar to a big bowl.
6. Wash and cut lemon and squeeze out the juice from it. Add it to the ground beetroot.
7. Add required water and mix it nicely.
8. Add a pinch of chat masala just before serving.

Note :

You can also prepare beetroot juice with raw beetroot. Wash beetroot, remove the outer skin and grate it. Grind this grated beetroot with  little water. Remove the content and add required water and jaggery.  Remember cooked beetroot helps to digest easily. Adding sugar/honey instead of jaggery is optional. You can also add a pinch of salt instead of chat masala. Add required water or the juice turns thick and people might not like.
Time : 15 minutes.
Serves : 2 to 3

Raw Mango Drink

Raw Mango drink is a soothing and comforting drink during summer. It is one of the traditional recipe from olden days. My aunt used to prepare this drink and we used enjoy most of the summer days.

I have used Raw Mango, jaggery which is very good cooling agent for our body and very little spices like jeera and pepper. Adding pepper and jeera helps the drink not only the spicy taste but takes care of our health too.
Lets see some benefits of having " Raw Mango " in our diet.
Raw mangoes are very good for treating blood disorders. They contain high amount of Vitamin C and it helps to boosts the formation of new blood cells. Raw mangoes are good for hormonal health. They contain Vitamin B and it helps to retain good health. Raw mangoes help to constipation and indigestion problems. They are good for removing the infections. Raw mangoes contain Vitamin A and Vitamin E which helps to enhance the hormonal system. Raw mangoes help to prevent dehydration and quench the thirst. Drinking unripe mango juice prevents the excessive loss of sodium chloride and iron. Raw mango is good to treat liver disorder.
Lets see the recipe now. I have used Totapuri Mango and it is not that sour and it is also eaten with salt and chilly powder.

Ingredients :

Raw Mango : 1 (Small size)
Jaggery :  3 to 4 Tablespoons
Pepper pods : 2 to 5
Jeera / Cumin Seeds : 1/4 Teaspoon
Salt : a little

Method ;

1. Wash and grate a little and keep it aside. Cut the remaining mango into small pieces.
2. Grind these pieces, pepper, jeera with little water into fine paste.
3. Add jaggery and grind it again. Remove from the mixi jar to a bowl.

4. Add 2 to 3 glasses of water and mix it well and sieve it with a strainer.

5. Now add grated mango and a little salt to the Raw Mango Drink and mix it well again.

6. Pour them into serving bowl and serve.

Note : 

You can remove the outer green skin and then grind the mango which is easy to grind. Adding sugar/honey instead of jaggery is optional. Remember jaggery is very good for health.
Time : 10 minutes
Serves : 2 to 3

Carrot & Badam Drink

Its hot summer and you need to cool your body and mind too. One needs to drink lots of water to take care of them from dehydration. Some don't feel like drinking water and do not have that habit of drinking water since it has no taste. I know many are of this attitude. Instead of water you can have some cool drinks and enjoy. This is the way you intake water.

I have tried this Carrots, almonds drink and kept it in the fridge to be cool then served. It is nice. You can too prepare this and enjoy.
I have used carrots, some almonds and jaggery to give a sweet taste.
Lets see some benefits of having jaggery in our diet.
It is always better that you use jaggery instead of sugar to sweeten your food. Jaggery helps to cleanse our body. It acts as a digestive agent. It also sweeten our food in a healthy manner and they provide good amounts of minerals. It helps to prevent the constipation. They are good source of iron and helps to prevent iron deficiency/ anemia. Eating jaggery helps to cleanse our liver. It helps to detoxify and push out the harmful toxin from our body.
"Carrot & Badam Drink " can be prepared for Kids party, kitty party, or any ladies party and on hot summer Day. It can be prepared during feast or festival.
Lets see the recipe now.

Things Needed : 

Carrots : 2
Almonds : 10
Jaggery : 3 to 4 Tablespoons
Coconut Milk : 1/2 Coconut milk.
Fresh Milk : 1 Litre
Cardamom : 5 to 6 pods
Dates : 4 to 5

Method :

1.Wash and scrape out the outer layer of carrots. Wash again and cook with very little water.
2. Soak almonds in hot water and remove the outer skin after 2 minutes.
3. Keep a pan on the fire and add 1 cup of water. Put jaggery and let it melt completely.
4. Sieve the jaggery water and remove the dirt particles if any. Grate coconut, grind with little water and squeeze out the milk from coconut. Cut dates and and keep it aside.
5. Grind cooked carrots, cut dates, almonds and cardamom with little water. Grind it into paste consistency.
6. Keep jaggery water and let it boil for 2 minutes. Add ground carrot and almond mixture.
7. Let it boil nicely for 2 to 3 minutes. Put off the fire. Add fresh coconut milk. Let it cool.
8. Add fresh milk which is already boiled and cooled. Mix it well and serve.
9. Make sure that carrot almond kheer should be cooled before adding fresh milk or it might curdle.
10. You can just keep it in a fridge before serving. Cool carrot and badam drink taste better.

Note : 

Remember to clean the jaggery before using. (It is always better to boil and then sieve or filter the jaggery before using). Adding more almonds is optional. You can add cashews instead of badam/almonds. (Almonds are healthy option). You can use sugar instead of jaggery. Adding more jaggery is also optional. You can add tender coconut pieces while serving this drink. Use of coconut milk is optional. (It adds to the taste and aroma).
Coconut milk preparation : Grate 1/2 fresh coconut. Grind it 1/2 cup of water and remove the mxture and squeeze out the milk. Grind the coconut again with 1/4 cup of water for 2 minutes and remove from the mixi jar. Squeeze out the milk. (Use the coconut milk to the drink.).
Time : 20 minutes
Serves : 5 to 6.

Refreshing Drinks and Kosumbari (Salad)

Happy Maha Shivarathri to one and all. Shivarathri is one of the many festivals celebrated by Hindus. It is said that Lord Shiva got married to Goddess Parvathi on this day.

People do visit temples and worship Lord Shiva on this special day. Prayers, bhajans and bhakti geetas are chanted on Lord Shiva. "Om Namah Shivaaya" is the Panchakshari Mantra and people keep chanting this Mantra most of the day.
People do fasting and keep themselves awake (jagaran) whole night. The next day it is a festival day. They enjoy having feast.
Here are some fresh drinks and fruit bowls, salads which can be prepared easily and quickly and enjoyed on the Shivaratri day.
We all know Fresh fruit drinks do refresh us and helps to keep us healthy. Fresh Fruits adds to our energy and it is good for health too.
Let us see some fruit drinks which can be done easily.

1. Banana Milk Shake :

Things Needed 

Ripe Banana : 2 to 3
Fresh boiled and cooled milk : 2 to 3 Cups
Honey : 2 to 3 Tablespoons

Method : 

Remove the outer skin of banana and put it in a mixi jar. Add milk and honey and give a churn for 2 minutes till banana grinds and mixes well with milk. Pour it out to serving glass and serve. (Adding cardamom is optional).

2. Pomegranate & Apple drink

Things Needed :

Pomegranate : 1 Cup
Apple : 1 (Red)
Honey : 2 to 3 Tablespoon
Milk : 2 to 3 Glasses (Boiled and cooled)

Method :

Wash and remove the skin of apple and cut into small pieces. Remove the pods from pomegranate.
Now put these apple pieces and pomegranate into the mixi jar. Add milk and honey and grind for 2 minutes. Put this ready drink to a bowl. Mix it well and serve . (Adding ice cube is optional).

3. Poppy Seeds & Almond Drink 

Things Needed :

Poppy Seeds/Gasagase : 2 Tablespoons (Cleaned)
Almonds : 1 Handful
Fresh coconut gratings : 2 Tablespoons
Jaggery : 2 To 3 Tablespoons
Cardamom : 1 pod

Method : 

Soak poppy seeds in water for at least 10 to 15 minutes. Soak almonds in hot water and remove its skin. Remove the seeds from cardamom. Grate coconut and grind all the ingredients nicely till paste. (Add required water to grind. Add jaggery at the end and churn for 2 minutes. Let everything mixes well. Pour it a bowl add little more water and mix it nicely and then serve.

4. Pomegranate Sweet Kosumbari

Things Needed : 

Beetroot : 1
Pomegranate : 1
Coconut : 2 Tablespoons
Honey : 1 Teaspoon

Method :

Wash and remove the outer layer of beetroot and grate. Remove the pods from pomegranate and grate coconut. Now put all the ingredients together in a big bowl and mix it with little honey and serve. (Adding Chat Masala is optional).

5. Corn - Cucumber and Gooseberry Kosumbari 

Things Needed :

Corn : 1 Cob
Cucumber : 2 Small ones
Gooseberry : 1
Coconut : 1 Tablespoon
Green chilly : 1
Coriander leaves : 1 Tablespoon
Salt : Required

Method :

Boil corn cob and remove the seeds from the cob. (You can use frozen corns). Wash and cut cucumber and keep it aside. Grate coconut and goose berry . Wash and cut green chilly.
Now mix all the ingredients in a big bowl. Add salt and mix it well.

6. Channa Kosumbari 

Things Needed :

Any Channa (Kabooli / black) : 1 Cup
Coconut : 2 to 3 Tablespoons
Green chilly : 2
Coriander leaves : 2 Tablespoons
Ginger : 1 Teaspoon (grated)
Oil : 1 Tablespoon
Mustard seeds : 1/2 Teaspoon
Jeera/Cumin seeds : 1/2 Teaspoon
Curry Leaves : 5 to 6
Ingh/Asafoetida : a pinch

Method :

1. Wash and soak channa for over night or 5 to 6 hours and pressure cook for 10 to 12 minutes.
2. Wash and cut green chilly, coriander leaves and grate coconut and ginger.
3. Now keep a pan on the fire and heat. . Add oil. Let it heat. Add mustard seeds. Let it splutter.
4. Add jeera, ingh and greenchilly. Add curry leaves. Add cooked channa and mix it well.
5. Add little turmeric powder and salt. Mix it nicely. Let it cook for 1 to 2 minutes.
6. Add grated coconut and cut coriander leaves. Put it in a serving bowl.
Note :
Channa has to be cooked well to get good taste. Drain all the water from channa after cooking. You can use that water for rasam or soup. Adding more chilly is optional.

7. Mash Mellon & Banana Fruit bowl :


 Things Needed :

Mash Mellon : 1 (Small One)
Banana : 3 to  4 (Ripe Bananas)
Chat Masala : 1/4 Teaspoon

Method : 

Wash and remove the outer layer of mash melon and cut into pieces. (According to your wish). Remove the skin of bananas and cut into circle shape. Mix it well in a big bowl and sprinkle chat masala. Fruit bowl is ready to serve.

Almond - Poppy Seeds Drink

Almond - Poppy Seeds Drink is one of the traditional drink from Udupi. 
It helps to cool your body and mind during the very hot seasons of April to May. This drink is energetic and filled with proteins and other minerals. It keeps you healthy and take care of you. 



Almond - Poppy Seeds Drink helps to cool your body. Both the ingredients are cooling agents. This is one of the healthy drink I have seen my aunt used to prepare.She used a table spoon of fresh coconut along with poppy seeds instead of almonds. Fresh coconut helps the poppy seeds to grind nicely since they used the grinding stone with hands. Fresh coconut milk is adds the value to the health. Consuming fresh coconut is good for increasing good hormones in our body. In those days almonds consider to be very rich people food and it was used in rare and special occasion by common man.

I have used poppy seeds, almonds, jaggery (liquid form of fresh jaggery) and a pod of cardamom.

Lets see some benefits of adding almonds, poppy seeds and jaggery in our diet.
Almonds are good resource of mono unsaturated fats. They help to lower the bad cholesterol(LDL). Eating almonds regularly in our diet help to raise good cholesterol.(HDL). It protects against cancer and prevents diabetes. It helps to boost energy and helps to prevent birth defects.Strengthen the bones and teeth. It is a good remedy for anemia and takes good care of our hair.

Poppy seeds contain good amount of minerals like calcium, potassium, magnesium and iron. They are rich in dietary fiber and essential fatty acids and they help to maintain overall health  Poppy seeds are used for mouth ulcer which is caused by heat, since they have the quality of cooling the body. Poppy seeds contain good amount of fiber and it is good for people who suffering from constipation. Poppy seeds are known for inducing the good sleep. It is well known fact that,  drinking Gasagase ( in Kannada language) payasa, puts the person to a good sleep. :) .They help to improve heart health and prevent bone damage. They help to boost energy and fight against the  skin infections. They also help to boost immune. They contain minerals like calcium, iron, manganese, phosphorus and copper.

Jaggery helps for good digestion and prevents constipation. It helps to cleanse the liver. It also helps to increase the immunity in our body. It balances the hormones and helps you to stay in good mood.
Having a glass of Almond- Poppy seeds Drink helps you to be good energetic, keeps you fresh, helps to glow your skin in hot summer.

Things Needed:
Poppy seeds : 1 Table spoon full.
Almonds : One handful
Cardamom : 1 Pod
Jaggery : 2 to 3 Table spoons.
Method :
1. Clean and soak poppy seeds for 5 minutes.
2. Soak almonds in hot or normal water and remove the outer skin and keep it aside.
3. Grate jaggery and powder it. ( I used fresh jaggery (liquid form).
4. Remove the cardamom seeds from the pod.
5. Grind all the ingredients except jaggery with little water till it turn into paste.
6. Add jaggery and churn for 2 minutes and let it mix well.
7. Now pour out the mixture and add required water and make the drink into little thin.
8. Put it to the serving glass and serve. Add ice if you like just before serving . ( I did not).

Note :
Clean the poppy seeds since it might contain small particles of sand. Soak it nicely. so it turns into paste when it grinds. No need of roasting the poppy seeds. You can also add fresh coconut while grinding. It adds to the aroma of the drink. ( I did not).
Adding more or less jaggery is optional. No need of adding milk to it.
Time :  10 minutes
Serves : 2.

Bottle Gourd - Tomato Juice helps to keep your body cool. Summer has started the sun rays are strong. You need to beat the heat. It is always better you drink lots of juice and water. You can prepare varieties of juices at home. Home made juice is always good for health. I have tried this bottle gourd - tomato juice and its taste delicious. Try it out and you will really love the taste. It is not only taste, one has to take care of the health also.
These tomatoes are from our garden (pots).
Lets see the benefits of using bottle gourd and tomatoes in our diet. 
Bottle gourd helps to reduce blood pressure and supports the urinary system of our body. It also helps to reduce the chances of urinary infection. It contain vitamins and minerals like calcium, magnesium, phosphorus, Vitamin A and C. Bottle gourd helps control the thirst in diabetic patients. They are rich in fiber and helps the digestive system and good for people who suffer from constipation. They also helps in reducing the liver inflammation.
Tomatoes are filled with nutrients and antioxidants. They contain Vitamin A and it helps to improve our eyesight and prevent night blindness. It helps to lower the risk of cancer. Tomatoes contain Vitamin C, A, K  potassium and iron. They are essential for maintaining normal blood health. Vitamin K controls bleeding and blood clotting. Tomatoes help in blood circulation. They are good for digestion and prevents constipation and diarrhoea. It also prevents jaundice and removes toxins from the body.
Bottle Gourd - Tomato Juice is easy to prepare and we can have them any time of the day.

Things Needed :

Bottle Gourd : 1 Small cup
Tomatoes : 4 to 5
Jaggery : 2  Table spoons
Salt : a pinch

Method :

1. Wash and remove the outer skin of bottle gourd and cut it in to small and keep it aside.
2. Wash and dee seed tomatoes and cut in to small and keep it aside.
3. Now grind tomatoes and bottle gourd with half glass of water nicely. Add salt and jaggery. Grind till the jaggery mixes well.
4. Remove the ground liquid from the mixi jar and put it in a bowl.
5. Add 2 more glasses of water sieve the juice and put it in a glass and serve.

Note :

You can add more jaggery if you like sweet taste. You can also add honey instead of jaggery. Adding salt is also optional. You can add ice cubes to make the juice chill. (optional). Do not throw the skin of bottle gourd. You can prepare chutney by using this. Remember to wash the whole bottle gourd nicely, before cutting it.
Serves : 2 to 3
Time : 10 minutes.
