Ridge Gourd Chutney & Poooris.

Ridge Gourd Chutney is a side dish and we can have this chutney with Rice, Chapatis , idli or Dosa too.  Using this chutney we can prepare spicy pooris and you can have them with plain curd or any gravy of your wish.
Things Needed for Chutney :
Ridge gourd skin: 1 Cup .
Coconut : 1 cup.
Green chillies : 3 to 4.
Tamarind : 1 Table spoon.
Salt : to taste.
Ingh or Asafoetodia  : a pinch.
Coriander Seeds : 1 Tea spoon.
Method : 
Wash and remove the edges from the ridge gourd and wash again. Now remove the outer skin of  the ridge gourd and  boil with 1/2 cup of water. Add coriander seeds and green chillies, Tamarind pulp and salt  while boiling. ( You can pressure cook for 5 to 6 minutes. )  Remove from the pan and leave it for cooling.
Now grate fresh coocnut.  Grind  grated coconut  and  cooled Ridge gourd mixture and  ingh together till paste. ( Use required water ).
Chutney is ready to serve. You can add sprut  mustard seeds to the chutney. ( Keep a pan on the fire and put a tea spoon of oil and heat. Add 1/2 tea spoon of mustard seeds and little ingh to it. When the mustard sprut add curry leaves and add this mixture to the chutney.
2 to 3 Serves.
Note : Must add fresh coconut to the chutney.  You can also use the chutney without the sprut mixture. Serve the chutney with little ghee on the top of the hot rice and the prepared Ridge gourd chutney.
Pooris from Ridge gourd Chutney.
Ridge gourd Chutney: : 1/2 cup.
Wheat flour : 2 cups.
Jeera : 1/2 Tea spoon.
  Salt : to taste.
Oil : 1 cup . ( To fry).
Method :
Mix Ridge gourd chutney , wheat flour, salt, and jeera together. Use little water if required.  Prepare a dough and make it into small balls. Roll these balls in to small pooris.
Keep a frying pan on the fire and put oil. Heat the oil and Fry rolled  pooris in hot oil  and serve with a cup of curd or any gravy dish.
Note : Do not add much water to the dough while preparing the dough.  Do not add any ghee or oil since coconut has the oil substance . Fry the pooris on medium heat to get the good result.  Do not use any stale chutney since it gives a foul smell and it is not good for health. Can use garam masal powder or red chilly powder tothe mixture  while mixing the dough.  It gives a different taste and remember lots of spice is not good for health too.
2 to 3 serves.
