Haraka/Araka /Kodo Millet Dosa

Araka or Harka or Kodo Millet is one of the millet family good grain. Millet grains are used and is becoming more and more popular these days. I prepared Dosa using Araka millet and it is crispy, tasty and healthy. Try and Enjoy.


They do have full of healthy properties in them. They do have the ability to regulate our blood pressure level and blood sugar level. They are gluten free and rich in fiber. They are slow in digestion and keeps you full for a long time. They are rich in vitamins and minerals.

I have used Grinder to grind this dosa batter.

Ingredients :

Harka /Arka / Kodo Millet : 4 Cups
Urid whole ( white)  : 1 Cup
Methi seeds : 1 Teaspoon
Avalakki /Poha /Aval : 1/2 Cup  (Any Variety).
Salt : As required

Method :

1. Clean, wash and soak Haraka Millet for 3 to 4 hours.
2. Wash and soak urid and methi seeds separately.


3. Soak Avalakki/Poha separately.
4. Grind it all together for 20 to 25 minutes and take it out in a big bowl.


5. Add required salt and mix it well. Leave the batter to ferment for over night or 6 to 8 hours.


6. Keep a pan on the fire and clean it with a tissue or a kitchen towel.
7. Mix the ground batter nicely.


8. Take a ladle of dosa batter and spread it.
9. Add/ Sprinkle oil on the top. Cook on medium heat. Let it turn golden brown.


10. Turn the other side and cook for 10 seconds.

11. Take out the ready dosa and serve with the side dish of your choice.


12. Repeat the same and prepare rest of the dosas.


Note :

You can reduce the amount of millet and urid dal to half.  You can also use mixi instead of grinder to grind. Use very little water while grinding and then add required water if it needs.
Time = Soaking time - 3 hours minimum + grinding time 25 minutes + fermentation - over night or 6 to 7 hours + Dosa preparing 20 Minutes.

Haraka /Araka /Kodo Millet Methi Dosa

Harka/Arka /Kodo Millet is one of the millet family grain. I have tried varieties of recipes with almost all the millet grains. I have tried my favourite Menthy / Fenugrik dosa and it was fluffy, soft and yummy.

Millets have gain the stand once again and we all know the importance of these millets in our diets. It is said that even in Ancient period people used to grow and use millets and they were the source of food.
I have been using the millet since I got to know they are energetic, gluten free, fiber rich and slow in digestion. Not only these points there are so many reasons why you should use millet  in your daily diet. They help us to reduce the weight, they control our blood pressure and diabetic condition can be improved. They help in reducing the cholesterol level in our body. They help in reducing the obesity and rich in antioxidants.
Methi/Mentya/fenugrik seeds are rich in fibers, helps to control the sugar level in our body and good cholesterol maintainer.

Remember : The batter should be fermented well to get soft and fluffy dosa.

 Ingredients :

Harka/Araka /Kodo Millet : 4 Cups
Methi Seeds : 1/3 Cup.
Urid dal : 1 Handful
Salt : As required

Method :

1. Clean and wash Harka and soak in water for 3 to 4 hours.
2. Wash and soak methi seeds/fenugrik seeds separately.


3. Grind it with required water and remove it from mixi jar.


4. Add salt and mix it well. Leave it for fermenting. (Overnight).Or 6 to 8 hours.


Remember the batter has to be fermented well just before preparing dosa.
5. Next morning Mix the batter nicely.


6. Keep the tava on a fire. Heat and clean it nicely. Sprinkle some oil on the tava and clean it again.
7. Add a ladle of batter and spread very little. Dosa has to be fluffy.


8. Sprinkle some oil and cook till it is done. Turn the other side and cook and remove it from the pan.


9. Dosa is ready to serve.
10 Serve with your choice of side dish.Jaggery goes well with Methi Dosa and is good for health.

Note : 

Add required water while grinding. The batter should be like dosa batter consistency. Remember the batter has to be fermented well to get good fluffy dosa.
Do not add any rice while grinding.
Time : Soaking time 3 Hours + Grinding time + 10 minutes ( Mixi ) + Fermentation 6 to 8 hours and preparing dosa : 30 Minutes.
Serves : 6 to 8 People.

Harka - Moong Patties

Harka Patties ar simple food and Patties are prepared using left over Harka Uppittu.



Just thought of doing some thing using the left over Harka/Kodo Millet Uppittu. It was raining and crave for some fried or shallow fried Patties came into mind. The left over Uppittu in fridge took the shape of patties. It turned as some thing yummy bit spicy and tasty Patties.
I have used 1 boiled potato, garam masala, jeera powder, coriander leaves and a small quantity of cashew pieces.
Let us see the recipe now :

Things Needed :

Harka - Mong Uppittu : 2 Cups
Boiled Potato : 1
Garam Masala : 1/2 Tsp
Jeera /cumin seeds powder : 1/2 Tsp
Chilly Powder : 1/2 Tsp
Cashew Pieces: 2 Tsp
Salt : If required
Oil : 3 to 4 Tbs

Method :

1. Take a big bowl. Put Kodo / Harka Millet Uppittu , add garam masala, jeera powder. Add cashew pieces.

2. Add washed and cut coriander leaves and boiled potato. ( Peel off its cover before you add).
3. Add little salt and mix all the ingredients nicely.
3. Divide the mixture into small quantity. Take a small portion and pat it on your palm.
4. Keep a pan on the fire and heat. Sprinkle some oil on top.
5. Place the patties on hot tava and cook till it turn as golden brown. Sprinkle some oil on the top and turn the other side and cook.


6. Harka Moong Patties are ready to serve. Serve with your favourite side dish like ketch up or sweet and hot chutney.

Note :

Adding boiled potato helps to bind the mixture. Adding garam masala is optional. You can use chilly powder, jeera powder and daniya powder instead. Adding more oil is optional. Adding any other vegetable like carrots and beans is optional.
Time : 10 Minutes
Serves : 2 to 3

Urid - Moong Dal Harka Kadubu & Dosa

Kadabu is one of idli family. We do prepare different varieties of kadubu. This Kadubu is done with Moong dal, urid dal and harka/Araka. Araka or Harka is one of the siridhanya's grain. It is just like foxtail millet or little millet.


Use of Siri Dhanya /Millets is definitely benefits our health. It is free of gluten, and full of fiber. It is digested easily but slowly. It is good for diabetic, high blood pressure or any other related problems.

I have soaked urid dal and moong dal, Harka/Kodo Millet separately for 3 to 4 hours. Then grinding with green chilly, pepper pods, an inch of ginger and little coconut.
Harka is to like rava consistency means it should not be powdered completely. The dals should be into fine paste.
I have cooked this batter with out fermenting and I used a teaspoon of Eno. Eno helps to digest the food easily and turns the food soft and fluffy.
I kept some remaining batter to ferment and prepared dosa with that batter, which has turned so yummy and crispy.

Things Needed :

Urid dal : 1 Cup
Moong dal : 1 Cup
Harka/Araka /Kodo Millet : 1/3 Cup
Coconut : 1 Cup /3 to 4 Tablespoons
Green chilly : 2
Ingh/Asafoetida : A little
Curry Leaves : 1 Handful
Coriander leaves : 2 Tablespoons
Ginger : An inch
Jeera /Cumin Seeds : 1 Teaspoon
Pepper Pods : 1/2 Teaspoon
Salt : As required
Eno Salt : 1 Teaspoon


Method :

1. Wash and soak urid dal, moong dal and Harka/Kodo Millet separately for 2 to 3 houts.


2. Wash and cut coriander leaves, curry leaves and green chilly. Remove the outer layer of ginger and wash it again. Cut into small pieces.

3. Grate coconut and keep it aside.
4. Grind Urid dal, moong dal, cut ginger, coriander leaves, curry leaves,  1/2 cup of coconut, green chilly, jeera and pepper with required water. Grind it nicely.
5. Grind Harka /kodo millet into rava consistency. Mix all the batter with required salt.


6. Apply little ghee/oil to a bowl and keep it ready.


7. Keep a idli cooker /pressure cooker on the fire, put some water and keep a bowl upside down.
8. Add a teaspoon of Eno Salt and mix the batter nicely. Spread some coconut on the top.


9. Put this batter to ghee spread bowl and keep this bowl in pressure cooker.


10. Close the lid and steam for 10 to 15 minutes.
11. Open the lid and take out the kadubu bowl.


12. Replace the kadubu to a plate. Put some coconut and press it slowly.
13. Cut this Kadubu into small pieces,add little more grated coconut and serve.



14. Serve with the side dish you have prepared.


Note : 

Add little water to grind and see that the batter is not so watery. It should be like idli batter. Adding jeera/cumin seeds and pepper helps to reduce the gas properties in dals and helps the food to digest easily. Use of Eno salt helps to soften the kadubu.
Time :
Soaking dals and Harka/Kodo millet : 3 Hours.
Grinding time :  5 Minutes.
Cooking time : 15 minutes.
Serves : 3 to 4 .  

Dosa preparation :


Keep the remaining batter for fermenting. ( Over night ).


Next morning you can prepare dosas and enjoy.

Arka Millet / Kodo Millet Mango Rice )

Siri Dhanya - Millets are known for their wonderful healthy qualities. Millets are gluten free and take care of our health. Arka or Haraka /Kodo Millet is one the millet family grain and used in our food dishes. I have prepared Haraka Mango Rice and it taste yummy.

Kodo millet is known as Varagu in Tamil, Arkalu in Telugu, ಅರ್ಕ / ಹರಕ in Kannada 
Let us see some benefits of eating Arka/ Harka Millet in our diet.
Millet grains are good to have because they are rich in nutrients, B - Vitamins and Calcium, iron, protein, zinc, magnesium. They are rich source of essential fats in our body. They contain high level of protein and dietary fiber. 
Millet helps to protect our heart, prevent diabetes, improve the digestive system. Eating millet helps to detoxify the body and improve our respiratory health. They also boost the immune system and gives energy and helps in nerve and muscle health.
Let us see the recipe now 
No Onion OR No Garlic is used in this Arka / Kodo Millet Mango Rice.
All you need is raw mango, green chilly, Arka millet and seasoning spices. 

Ingredients :

Arka /Kodo Millet : 2 Cups
Grated Mango /Any raw mango : 1 Small Cup (  3 to 4 Tablespoons).
Green chilly : 3 to 4 
Curry Leaves : 6 to 8 or little more 
Salt : To taste 
Coconut Oil/Ghee  : 2 to 3 Tablespoons
Mustard seeds : 1 Teaspoon
Urid dal : 1 Teaspoon
Coriander leaves : 2 to 3 Tablespoons


Method : 

1.Clean Arka millet and wash. Pressure cook and keep it aside.


2. Wash and grate mango and keep it aside.
3. Wash and slit green chilly, cut coriander leaves and curry leaves.
4. Grate coconut and keep it aside.


5. Keep a pan on the fire and heat. Put oil. Put mustard seeds and urid dal.
6. Let mustard seeds splutter. Add slit green chilly and curry leaves. 
7.  Add grated mago and fry for 2 minutes. Add salt, turmeric powder and mix it well.

8. Add cooked Arka millet and mix it nicely. ( Let the flame be very low).


9. Add 2 tablespoons of ghee and mix all the ingredients. 
10. Add grated coconut and mix it slowly. Shift the ready Arka Millet Mango Rice to a serving dish.

11. Add cut coriander leaves.

12. Serve with a cup of curd.

Note :

The proportion of water to cook Arka :  1 cup Arka : 2 Cups of water.
Use of onion or garlic is purely option. Use of any kind of cooking oil is optional. Adding Ghee to Arka Mango Rice adds to the taste. Use of more/less chilly is optional. Cooking Arka helps you to mix with mango mixture nicely. It should be cooled after cooking
Time : 30 Minutes
Serves : 3 to 4 .
