Simply Aloo Samosa

Samosa is one of the street food and is very famous all over the world. Samosa is filled with varieties of  vegetables, dals, potatoes and onions. Even sweet Samosas are also available is yummy to have spicy or sweet samosas at any time of the day. Samosas goes well with a cup of hot coffee/chai or even juices. Here I have tried aloo filled small samosas and of course it is in a healthy way.

" Healthy way " is a good word to use because I have used wheat flour and small chiroti rava/semolina for the covering and the potatoes are cooked as dry curry and then it is used. They are cooked with very little oil and then used water to get it soft. I have used very less spice and made the samosa as small. Even the elderly people can also have these samosas and enjoy their day. We can pack it for kids for their school snack box. You can take it for travelling and the ladies to their kitty party.

Things Needed :

To stuff :
Potato Dry Curry : 1 Bowl.
For the outer layer/Cover 
Chiroti Rava/Semolina : 2 Cups
Jeera/Cumin Seeds : 1/2 Tsp
Salt : As required
Ghee : 1 Tablespoon
Oil : To Fry : 1 Cup

Method :

1. Take a big bowl. Add rava. Add salt, jeera/cumin seeds and ghee.


2. Mix all the ingredients nicely and prepare the dough. (Poori dough consistency).

3. Divide the dough into small portions. Take a small portion and roll it.


4. Cut the rolled chapati into half.
5. Take the cut portion and put it on your palm.


6.Make a triangle shape and press the edge. Fill in 1 tbs of potatoes.


7. Bring the sides on the top together and press it and bind the two sides very tightly.


8 Arrange the potato stuffed samosas in a plate /tray.
9. Keep a small frying pan and put oil. Heat it. Let the flame be low now.
10. Fry potato filled Samosas one by one on low and medium flame. Fry on both sides.


11. When you fry on low flame Samosa turns crispy.


12. Serve with the side dish you have prepared. We had it with Mango - Carrot Sweet and Sour Curry.

Note :

Fry samosa in low and medium flame to get them crispy. Adding ghee makes the samosa crispy.
Do not add more ghee, it might absorb more oil while frying.
The samosa size can be big/small.
Time : 30 Minutes.
Serves : 10 to 12 Samosas.

Oats - Raagi - Almonds and Dates Laddu

Oats -Ragi - Almond -Dates Laddu Is yummy laddu.


It is easy, delicious and you can munch at any time of the day without hesitating because it is loaded with healthy ingredients.
Oats -Ragi - Almond -Dates Laddu Is yummy laddu.It is easy, delicious and you can munch at any time of the day without hesitating because it is loaded with healthy ingredients.It is good for all age group and will love to have them.
I have used oats, raagi flour, almonds, little sesame seeds, dates and little jaggery.
Let us see the recipe now :

Things Needed :

Oats : 2 To 3 Cups
Raagi Flour : 2 Cups
Sesame Seeds : 1 Tablespoon
Jaggery : 1 Cup (Powdered)
Dates : 1 Cup
Almonds : 1 Small Cups
Raisins : 2 to 3 Tablespoons


Method :

1.  Dry roast 2 cups of Oats, 1 tablespoon of sesame seeds and 2 Cups of Raagi flour and let it cool.


 2.  Dry grind oats, Almonds and sesame seeds.






3. Take 1 cup full of dates, remove the seeds from dates and cut in to small pieces.


4  .Now put 1 cup full Powdered jaggery to a big bowl.Add 1/2 cup of water and mix it well.
5.  Keep this jaggery on the fire and let it boil for 2 minutes. Sieve this jaggery mixture.


6.  Now keep a pan on the fire and put cleaned jaggery and boil it till it turns one string consistency.
Add raisins to it.

7.  Pour the jaggery mixture to the bowl and add ghee. Mix it slowly.
8. Add 1 /2 Cup ghee and cut dates pieces. Slowly mix all the ingredients nicely. (It is bit hot because of jaggery mixture).


9. Take a handful of the mixture and prepare laddu.


10. Let it cool. Store them in airtight box or bottle and munch whenever you want to.

Notes :

Fry oats and raagi on low flame.
Fry sesame seeds till it spluteer and turn golden brown. It adds to the taste.
Dry grind sesame seeds with roasted oats.
Use of jaggery can be minimized by using more dates
Adding more/less ghee is optional.
Adding coconut is optional. I have not added coconut or dry coconut. Laddu stay longer period if you skip using coconut.
Time : 30 Minutes.
Serves : 30 to 40 Laddus can be prepared.

Little Millet - Corn Flakes Laddu

I have prepared laddu using Little millet flour and corn flakes. One might ask Why always laddu?
I have the answer here to tell you that Laddu is an easy, healthy and delicious food to prepare.
Here is one more laddu recipe and is with little millet flower and corn flakes this time.


Laddu /laadu/unde is a sweet delicious ball shape ( normally ) sweet dish and it you can gobble it at anytime of the day. It is filled with vitamins, minerals, energetic food and keeps you energetic whole day. You can add this laddu to your breakfast food list. Along with your regular breakfast you can eat this laddu, it helps to full for the long time. It provides minerals to body and take care of your health in proper way.
Let us see the recipe  :
I have used little millet flour, jaggery, coconut, cardamom and corn flakes.

Ingredients :

Little Millet flour /Store bought flour : 2 Cups
Corn flakes : 3 to 4 Cups
Jaggery : 1 Cup /250 gr
Mixed Nuts 1 /2 Cup /Cashew pieces , almond pieces, raisins and dates.
Coconut /Fresh : 1 Cup
Ghee : 1 Cups
Dates : 100 Grams
Cardamom : 6 to 8 Pods

Method :

1. Soak jaggery in a cup of water and melt it completely and sieve it. Keep the clean jaggery aside.
2. Take a tablespoon of ghee and put it to a pan. Keep the pan on the fire and fry nuts including dates.
3. Shift it to a small bowl. Grate coconut and keep it aside.


4. Dry roast or fry little millet flour nicely till the raw smell disappear. ( Low flame ).


5. Remove the seeds from cardamom. Dry grind corn flakes, cardamom seeds and keep it aside.


6. Keep clean jaggery in a big pan. Put the pan on the fire. Let it boil and get one string consistency.
7. Let it boil for another 1 to 2 minutes. Let the flame be low. Add grated coconut and mix it well.
8. Now add roasted little millet flour and mix it well. Add powdered corn flakes and cardamom.

9. Add ghee and fried nuts and mix all the ingredients nicely.


10 Take a handful of laddu mixture and prepare ladddu. Prepare laddu the same way with remaining mixture.

11. Laddu /Laadu Unde is ready to serve.


12. Serve or Eat whenever you feel like ...and store it in a air tight bottle or box. ( Better to use glass or steel box ).

Note:

Dry roast millet on low flame till it turns slightly golden brown ( Do not burn the flour). Adding more ghee makes the laddu tasty. Use of more or less ghee is optional. Use of coconut is optional. Clean the jaggery if you are using shop bought jaggery. Adding more or less dry nuts is optional.
Time : 30 Minutes
Serves : 35 to 40 Laddu can be made.

Almond Mysore Pak

Mysore pak - Yes Most of the sweet lovers love to have Mysore Pak.  It is delicious sweet, no doubt it has its fame and name. Preparing Mysore Pak one has to do it very slow and with lots of patience.
I do prepare yum yum yummy Mysore Pak and all my friends and relatives pour loads of love and appreciation, sweet words after eating Mysore Pak.
Here I have prepared Almonds Mysore Pak 


 Here I have tried " Almond Mysore Pak " and its super good I can say. You try and taste and You do agree my words.
Let us see what all I used and how did I do this Yummy, delicious Sweet " Almond Mysore Pak".
All I used is Almonds, besan/channa flour, ghee, sugar and little cardamom.
Let us see the recipe Now :

Ingredients :

Besan / Channa flour : 2 Cups
Sugar : 1 3/4 or 2 Cups
Ghee : 1 Cup
Cardamom : 5 to 6 Pods
Almonds : 1 Cup
Water : 1/2 Cup

Method :

1. Dry roast besan till the raw smell disappear.



2. Powder almonds and keep it aside.

3. Remove the seeds from cardamom pods and powder.


4. Keep a pan on the fire and put sugar and half cup of water.


5. Let sugar dissolve in water completely. Add a tsp spoon of ghee.
6. It starts to bubble. Let it boil for 2 minutes. See that it gets one string consistency.

7. Add roasted besan /channa flour and powdered almonds. ( Let the flame be very low)..


8. Stir nicely and see that there are no lumps. Add 2 to 3 tablespoons of ghee and stir.
9. The ghee you pour mixes well with besan and sugar mixture. Continue stirring and adding ghee in between. 5 to 6 minutes or little more.


10. Slowly the colour changes  in to slight golden brown.  Leave the mixture for 10 seconds and stir again slowly but do not allow the mixture  to burn at the bottom.
11. Let the mixture slowly come up slightly. Stir again. Do this process at least 4 to 5 times. ( Strictly on low flame ). Add powdered cardamom and mix it again. It starts to leave the edges.


12. Allow the mixture to slowly come up again and pour this mixture to a ghee spread tray or plate.


13. Spread it nicely and leave it to cool.  Cut Almond Mysore Pak once it is completely cooled.


14. Serve or enjoy eating these delicious Almond Mysore Pak pieces. Store it in a airtight box.


Note :
The sugar should melt completely before it gets in to syrup consistency. One should prepare this Almond Mysore Pak on low flame. Adding more ghee is optional. Almond Mysore Pak should be cut in to pieces only when it cools completely.
Time : 30 Minutes.
25 to 30 pieces can be made : According to size and shape.
