Kabooli Channa - Mango Rice

Kabooli Channa - Mango Rice is a simple Rice dish. It is just like a variety of Rice dish and good to have it for lunch/dinner.

It was a lunch party for our family. A sort of get together. I prepared this Kabooli - Mango Rice and other traditional dishes like Potato curd curry, Sambar, Rasam and other dishes. It was typical South Canara dishes and we did enjoy eating together.
Kabooli Channa - Mango Tokku can be prepared for lunch, dinner, party time, one dish, kitty party time.

All you need is to soak kabooli channa over night and next morning, use pressure cooker to cook Channa. Let it be soft. It takes 8 to 10 minutes to cook nicely. Once it is cooled we can use them.
As I said it is simple Rice dish and you can prepare it quickly, if you have already cooked channa dal and plain rice.
NO ONION OR NO GARLIC RECIPE....
Ingredients :

Cooked Raw Rice : 2  Cups
Boiled Kabooli Channa : 1 Cup
Mango Tokku / Lemon Extract / One lemon : : 1 Tablespoon
Oil : 2 to 3 Tablespoons
Ghee : 2 Tablespoons
Green chilly : 2
Grated Ginger : 1 Tablespoon
Fresh grated coconut : 1 Cup
Salt : As Required

Method : 

1. Take a big pan and keep it on the fire. Add oil.
2. Add mustard seeds, urid dal and let mustard seeds splutter.
3. Add slit green chilly, mango tokku fry for a minute.


4. Add curry leaves and cooked channa. Mix it nicely and stir for a minute.




5. Add cooked rice, required salt and mix it well and cook on low flame. Add  a tablespoon of ghee.


6. Add grated coconut and mix it. Shift it to a serving dish.


7. Serve with a cup of curd or as you wish.


8. I prepared this Kabooli Channa - Mango Rice for our family get together lunch.

Note :

You can add fried cashews or ground nuts while mixing. Adding ghee and coconut adds to the taste.You can also use powdered tamarind or lemon extract instead of Mango tokku. Add lemon extract, just before adding coconut
Time : 20 Minutes. 
Serves : 3 to 4

Cow Peas Cutlet

Cow Peas Cutlet is an easy dish and if you already cooked the pea it is still easy.☺
I had some cow pea cooked in the after noon and that came as handy when I thought of preparing some yummy cutlets.


Let us straight go to the recipe Now : I do not use so much varieties of spices. It is always simple and quick. 💟

Things You need :

Cooked Cow Peas : 1 Bowl
Aloo / Potatoes : 2 to 3
Bread : 3 to 4 Pieces.
Green chilly : 2
Ginger : An inch
Coriander leaves : 1 Tablespoon
Garam Masala : 1/2 Teaspoon
Jeera /Cumin seeds ? 1/2 Teaspoon
Chilly Powder : 1/2 Teaspoon
Jeera /Cumin seeds : 1/2 Teaspoon
Cashew pieces : 1 Tablespoon
Salt : As required
Chiroti Rava /Thin variety of Semolina : 2 to 3 Tablespoon
Oil : 2 to 3 Tablespoons

Method :

1. Wash coriander leaves, green chilly and cut into small.
2. Cut bread pieces into small and crush them into powder form. You can use mixer to powder it.


3. Wash ginger and take out the outer layer, wash it again and grate it.
4. Peel off the skin of potatoes and smash it nicely.
5. Now put powdered bread crumbs, smashed potatoes, boiled cow peas, cut coriander leaves, cut green chilly, grated ginger, salt, garam masala, jeera powder, chilly powder, cut cashews.


 6. Mix all the ingredients nicely and prepare the dough.
7. Divide the cutlet dough into small portions.
8. Keep dry chiroti rava in a bowl.
9. Keep dosa pan on the fire and heat.
10. Take a small portion of cutlet dough and make as a ball. Slightly press and give a desired shape to it.

11. Just dip lightly in chiroti rava both sides. Place the cutlet on hot tava.


12. Put a teaspoon of oil around the cutlet. Cook till it turns golden brown.


13. Turn the other side and cook. Add some oil while cooking.


14. Now Hot cutlets are ready to serve.


15. Cook the remaining cutlets the same way.

Note :

Do not over cook potatoes. Drain all the water from cooked cow pea and use only the peas.
Adding more spices is optional. Adding more oil while cooking is optional. You can also shallow fry these cutlets. Adding onions or garlic is optional.
Time : 30 to 40 Minutes.
Serves : 2 to 3.

Southekai /Cucumber Curd Curry

Cucumber Curd Curry / Southekai Sasive is one of the traditional dish of South Canara and Malenadu region. Cucumber Curd Curry is very easy to prepare and cucumber helps to cool our body.


Cucumber is available most of the days in a year.
When you are in a hurry or tired you can prepare this curry and enjoy your meal. It is easy, quick and simple. All you need is cucumber, mustard and curd. It fits to all age group and helps to take care of your whole body.
I have used Small thin cucumber, mustard seeds and curd. To add spice I used 2 green chillies.
Some feel eating cucumber might cause cold to their body, so the mustard seeds act as avoiding cold. it helps to subside the cold and take care.
Let us see some benefits of eating Cucumber in our diet.
Cucumber is rich water content vegetable. They do have nutrients like vitamin A, vitamin C and folic acid. They are rich in magnesium, iron, sodium,  potassium B -Vitamins and Vitamin B 6. Cucumber is rich in fiber and helps in easy digestion. It is very good source for people who suffer with constipation. They are good for skin health. They do helps to control and lower the blood sugar in our body. They helps to control Blood pressure in our body. It is rich in antioxidants.
As I said it is easy, simple, yummy and quick.

Things Needed :

Small, thin Cucumbers : 2
Coconut : Fresh : 3 Tablespoons
Green chilly : 2
Mustard seeds : 1/2 Teaspoon
Ingh /Asafoetida : A pinch
Salt : As required
Curd : 1/2 Cup
For Seasoning :
Coconut Oil : 1 Teaspoon
Mustard seeds : 1/2 Teaspoon
Ingh : A pinch
Curry leaves : 4 to 5

Method :

1 Wash cucumber nicely and cut into pieces.
2. Grate coconut.
3. Wash green chilly and curry leaves . Cut green chilly into 2 to 3 pieces.
4. Now Grind coconut, cut cucumber, mustard seeds and green chilly together.
5. Add curd, salt and churn for 2 minutes. Remove it from the mixi jar to a serving dish.
6. Prepare coconut oil seasoning with mustard seeds, ingh and curry leaves.
7. Add this seasoning to Cucumber Sasive and serve.

Note : 

Shop bought cucumber should be washed nicely before you use it.
Do not peel off its skin. The peels are  more nutrients.
Do not use onions or garlic. The original taste vanishes.
You can use less chilly if you do not eat spicy curry.
Time : 10 Minutes.
Serves : 3 to 4.

Tava Roasted Sweet Potato Snack


Sweet Potato is one of the healthy carbohydrate filled vegetable. It is said that eating sweet potato is good for our health. We do use sweet potato for many dishes. Here is a simple snack which fits to all aged group and good to have in the evening and believe me it is yummy. Try and enjoy this easy, quick, healthy and simple Sweet Potato Snack.


I have given the name as tava/pan roasted, because I did not use much oil. Only drizzled some oil and cooked on low flame to taste better. Try and Enjoy.
All You need is sweet potatoes, carrot, and if you are an onion lover, onion pieces and little chat masala to add some spice to the chat.

Let us see some benefits of Eating " Sweet Potato " in our diet.

Sweet Potatoes are filled with vitamins and minerals. They help to boost our immunity system. They are fiber rich. They are good for controlling diabetes and people who suffer from blood pressure. They are rich in potassium. Potatoes help to digest the food easily since they are rich in fiber and good for people who suffer from constipation. It is rich in iron and Vitamin A which is essential for hormones and fertility. Sweet Potato is filled with anti - inflammation and anti oxidant properties.
Sweet potatoes are good for eye health. They are rich in Vitamin C, Vitamin B5, Vitamin B3 Vitamin B6, manganese, magnesium and copper.

Tava Roasted Sweet Potatoes are good for kids and all the age group people. They are soft, turned crisp at the outer layer and taste yummy.

Things Needed :

Sweet Potatoes : : 2 to 3 ( Medium sized )
Carrot : 1
Onion : 1 ( Optional )
Green chutney : 1/2 Teaspoon
Coriander leaves : 1 Tablespoon
Green chilly : 1
Cooking Oil : 2 Tablespoons
Garam Masala : 1/2 Tsp
Chat Masala : 1/2 Tsp
Salt : As required :
Curd : 1/2 Cup



Method :

1. Wash and scrape out the outer layer and grate carrot and keep it aside.
2. Wash and cut green chilly and coriander leaves. Crush them with little salt. Keep it aside.


3. Remove the outer layer of onion and cut into small pieces.
4. Wash and cook sweet potatoes and remove the outer layer and cut them into small ( according to your wish).
5. Keep a pan on the fire and heat. Sprinkle some oil and place the small pieces of sweet potatoes on the pan. Roast them on low flame. Sprinkle some oil on the top.


6. Turn the other side and cook them till they turn golden brown. Sprinkle little salt, garam masala and chat masala and let it fry slowly.


7. Remove them to a plate. Repeat the same with remaining pieces.


Now Plating :

1. Without Onion :
   Take a serving plate and spread some carrots and place roasted sweet potatoes on it.
 Sprinkle some more carrots and crushed green chilly and coriander mixture. Serve.




2. With Onions :

Take a serving plate. Spread carrot gratings. Place sweet potatoes. Add carrot gratings and cut onions. Put crushed coriander - green chilly mixture.  Serve.






3. With Curd : Adding onion is optional. I have not added onions.

Take a plate and spread carrots and place roasted sweet potato pieces.
Add some carrot gratings and coriander leaves - green chilly mixture.
Add curd on the top and serve.




Note : 

Do not over cook sweet potatoes. It does not taste good. Adding more oil and shallow frying sweet potato pieces is optional.
Use of onion is optional. Sprinkle some salt on the top is optional.
Let the spice be minimum. Crushed green chilly and coriander leaves adds to the taste.
Time : 15 Minutes if you already cooked sweet potatoes. To cook sweet potatoes another 5 to 6 minutes and to cool 10 minutes.
Serves : 2 to 3 .

Dil Leaves - Fresh Alsande Curry

Alsande /cowpeas and dil leaves curry is one of the yummy curry and it goes well with almost all the main dishes. I have tried this Dil leaves /Sabbassige soppu, Amaranth leaves / dantina soppu and cow peas. It is yummy, healthy, easy curry.

Leaves are loaded with iron and other minerals and cow peas is full of energy, protein content. I have used very little spices and it is very easy to prepare I can assure.
Use of pressure cooker helps to bind the curry well. It is quick and easy too.
No onion OR No Garlic is used in this Dil leaves - Fresh Alsande Curry.
Fresh Alsande in this season are full of healthy nutritious content. It is always better to use seasonal pods and vegetables.
Let us see the recipe.

I have used :

Dil Leaves : 1 Small bundle
Amaranth leaves : Green : 2 Small bundles
Green chilly : 2 to 3
Ginger : An inch /Grated
Alsande pods/Fresh cow peas : 1/2 Kg
Tomatoes : 3 to 4
Salt : As required
To Season :
Cooking Oil : 1 Tablespoon
Mustard seeds : 1 Teaspoon
Methi Seeds : 1/4 Teaspoon
Jeera /Cumin Seeds : 1/2 Teaspoon
Ingh /Asafoetida : A little
Turmeric powder :  A little

Method :

1. Wash and clean the leaves nicely and cut into small.
2 Remove the pods and wash it once. Wash curry leaves and make pieces using your fingers.

3. Wash green chilly and slit. Wash and remove the outer layer of ginger and wash it again. Grate it.
4. Wash and cut tomatoes and remove the seeds as much as you can. Cut them into small.
5. Now keep a pressure cooker on the fire and heat. Add oil, mustard seeds and methi seeds.
6. Let mustard seeds splutter. Add jeera, ingh, curry leaves and fry for a second.
7. Add cut tomatoes and fry for a minute. Add cut leaves, slit green chilly, turmeric powder and grated ginger.
8. Add cow peas/Alasande pods and mix it. Add a glass of water and close the pressure cooker lid.


9. Cook for 6 to 8 minutes. Put of the fire and leave it for cooling.
10. Open the lid and mix all things nicely. Add required salt and cook for 2 to 3 minutes.


11. Shift the ready Dil leaves - Fresh Alsande Curry to a serving bowl.


12. Serve with the choice of your main dish. We had it Dil Leaves - Fresh Alsande Curry for our lunch.

Note :

The leaves and pods should be cooked well to get a good taste. You can add little garam masala. It adds to the taste. I did not use it. Use of onions or garlic is optional. It is like a mudde palya /Thick dry curry. To get a thick curry you need to cook it till it gets thick. Use of less water helps the curry to be thick too. I have kept a small plate on the top of leaves. No Dal is used here.
Time : 30 Minutes
Serves : 3 to 4 .

The advice is : Place a cover on the food. It is always safe. ( The lead used around the whistle pipe spills lead to food and cause health problems.

Rice Shavige Chitranna

Here is a simple way that you can also prepare Shavige Chitranna in easy way.
This Easy Shavige is prepared using white rice flour.

This is simple Shavige Chitranna and used very little ingredients.
No Onion or no garlic is used here in this recipe.

Ingredients :

Ottu Shavige : 1 Bowl
Coconut : 1 Cup
Jaggery : 2 Tablespoons
Green chilly : 2
Lemon Extract : 2 Teaspoon /1 lemon juice
For seasoning :
Mustard seeds : 1 Teaspoon
Urid dal : 1 Teaspoon
Ground Nuts : 2 to 3 Tablespoons
Curry Leaves : 6 to 8 leaves
Green chilly : 2
Coconut Oil : 2 to 3 Tablespoons
Ghee : 1 Tablespoon
To Add :
Salt  : Required Salt.


Method :

1. Grate coconut and keep it aside. Wash and squeeze out lemon juice and keep it aside.


2. Wash and slit green chilly and cut curry leaves into small.
3. Keep a big pan on the fire and add Coconut Oil.
4. Let it get hot. Add mustard seeds and urid dal. Let mustard seeds splutter.
5. Add green chilly and curry leaves. Fry for 10 Seconds. Add ground nut and fry till it turns crisp. ( 1 to 2 minutes).

6. Add Ottu Shavige which is prepared and kept. Let the flame be low.
7. Add turmeric powder, lemon,  jaggery and salt. Mix it slowly. Let jaggery mix with Shavige.


8. Add fresh grated coconut and mix it well. Put off the fire and shift Shavige Chitranna to a serving dish.  Add a tablespoon of ghee on the top.

 9. Serve Shavige Chitranna with a cup of curd.

Note : 

Shavige should be cooled and then mix it with the seasoning You have done. Do stir slowly or it turns as one ball. ( Mixes together to form a ball shape). Adding jaggery is optional. I have added because it helps the food digest easily and reduces the acidity in the food. Adding more oil /ghee is optional.
Adding more ghee is optional.
Time : 15 Minutes.
Serves : 2 to 3 .
