Jack Fruit Guli Appa / Jack Fruit Paddu

Jack fruit season is almost over, you need to wait for one more year for the jack fruit season. May be the last Jack fruit I am using it here to prepare Jack fruit Guli Appa/ Paddu/ Paniyaram. 
We use rice to prepare this Jack fruit Dosa, Kadubu and Guli Appa. Here I have used Rava/semolina instead of Raw Rice and prepared this yummy Jack Fruit Guli Appa


I have used Jack Fruits, joni Bella (organic jaggery which is bit liquid form), medium size rava and little coconut.

Let us see the benefits of Eating Jack fruits in our diet. 
It is always better to have fruits and vegetables during their seasons. They are filled with vitamins and minerals during the seasons they are naturally grown. 
Jack Fruits are filled with Vitamin C and potassium. They are energetic and provide energy to our body. 
There is a proverb in Kannada language. ಹಸಿವಾದಾಗ ಹಲಸಿನ ಹಣ್ಣು ತಿನ್ನು ಹಾಗೆಯೇ ಹೊಟ್ಟೆ ತುಂಬಿದಾಗ ಮಾವಿನ ಹಣ್ಣು. It means when you are hungry that we should eat Jack Fruits and when we are full, we should eat Mango. Jack fruits fill the stomach and is good for getting your energy back. And when you are full One should eat mango that helps the food to digest..
Jack fruit prevents Anaemia and take care of good eye sight. It is good for building muscles. It is said it helps to cure mental stress and skin diseases.
Let us see the recipe now :

Things Needed : 

Jack Fruits : 10 to 15 
Rava /Rave/Semolina : 2 Cups
Coconut : 1 Cup (small cup)
Jaggery : 3/4 Cup
Salt : A little
Oil /Ghee : 3 to 4 Tbs

Method :

1. Cut Jack Fruits into small pieces.


2. Grind cut jack fruits with coconut. Do not add any water while grinding.


3. Mix it with 2 cups of rava, little salt and 3/4 cup of jaggery. I added Organic liquid jaggery. (You can add powdered jaggery if you do not get organic jaggery). Let the batter rest for 10 minutes.


4. Keep a guli appa pan on the fire and heat. Put little oil to each mould/Guli. (Down portion of the pan). Add little oil on the top. Cover and cook on low flame.


5. Turn the other side and cook for a minute.


6. Take out ready Jack Fruit Guli Appa to a serving bowl. Prepare the rest of the Guli appa the same way.


7. Serve Jack fruit Guli Appa with ghee on top.


Note : 
Use of Raw rice instead of rava is optional. Use of organic jaggery is optional. Adding more or less jaggery is optional.
Time : 3o to 35 Minutes.
Serves : 2 to 3.

Rava - Dals Ade / Dosa

Rava /Semolina - Dals dosa is rich in protein and good for breakfast or dinner.



Rava /Semolina dosa is very easy to prepare and you can prepare dosa with just ground batter or You can ferment the batter and then prepare crispy and yummy dosa.
I have used Moong dal, channa dal, toor dal, urid dal and a cup of Rava/semolina. I did not use any  soda or Eno salt. It is full of healthy breakfast and it keeps you full for a long time no doubt.

Let us see some benefits of Dals in our diet.

Dals are rich in protein and very essential for vegetarinas. Moong dal is full of protein and filled with nutrients. It is filled with manganese, magnesium, phosphorus, copper, potassium, zinc and Vitamin B. Moong dal is easy to digest and low in cholesterol. It helps in regulating the blood sugar level and good for weight reducers.
Urid dal is filled with fiber. It improves and strengthen bones. It helps to boost energy and control blood sugar level. It is good for our skin. Urid dal is a good source of protein, potassium, iron, and Vitamin A and C.
Toor dal has good source of folic acid and good for pregnant women.It is filled with fiber. It contain proteins, potassium, iron, folic acid, magnesium and Vitamins.
Channa dal provides energy and good source of fiber. It is diabetic friendly and regulate the blood pressure level in our body.
 It is full of B Complex vitamins like Vitamin B 1 , B 2, B 3 and Vitamin B 9.
Let us see the recipe Now :

Things Needed :

Channa dal : 1 Cup
Toor Dal : 1 Cup
Moong Dal : 1 Cup
Urid Dal : 1 Cup
Semolina /Rava : Medium sized : 1 Cup
Salt : As required
Cooking Oil : 2 to 3 Tbs

Method :

1. Wash and soak urid dal, toor dal, moong dal and channa dal for 3 to 4 hours.


2. Grind it with required water.

3. Take out the batter to a big bowl.


4. Add a cup of medium size rava/semolina.


5. Add required salt and mix it well. Let it set for 10 to 15 minutes.

6. You can prepare dosa / adai with out fermenting the batter.

7. Or you can ferment the batter and then prepare dosa.



8. Keep a pan on the fire and heat. Clean the tava with a tissue.

9. Add a ladle full of dosa batter and spread it in round shape. Add little oil and cook on both sides.

  8. Both the types of dosas ( with non ferment and ferment batter) dosas comes out nicely.

9. Enjoy with your choice of side dishes.
10 We like honey and had it with honey and pickle and chutney .




Note :

Do not add much water to grind the dals. You can add it later while mixing rava with dals.
Adding little pepper adds to aroma and taste. Good for health too.
Adding Vegetables like grated carrots and onions is optional.
Fermented batter turns the dosa crispy. You need to be little careful since it cooks up quickly.
Adding more or less oil while preparing dosa is optional. Adding more ghee or oil adds to the taste.
Serves : 3 to 4
Time : Dals : Soaking time : 4 Hours - Grinding + 5 Minutes (Mixi), preparing dosa : 20 minutes.
(Without fermentation) and fermentation 3 to 4 hours .

Quick Sweet Guli Appa

Sweet Guli Appa is any time munching food. I do prepare this Sweet Guli Appa very often and was not able to click a pic. We just love to munch Sweet Guli appa at any time of the day.


This sweet guli appa can be prepared quickly and  is a treat to sweet lovers in a healthy way.
I have used jaggery, chiroti rava/thin variety of rava, coconut and little Eno fruit salt.
It has mild sweet and good for all age group.
These Sweet Rava Guli Appa was prepared to give it one of our relative. Felt like taking something while visiting them. The lady of the house fractured her leg and was admitted to hospital for treatment and was discharged. She was in recovering and kids and her hubby used to manage the house hold chores.  So I prepared these Guli Appas. We had been to their house and gave the guli appa I prepared, talked to her and came back.
Let us see the recipe now :

Things Needed :

Well Ripen Banana : 2
Medium size Rava /Semolina : 2 Cups
Jaggery : 1/2 Cup
Grated fresh coconut : 1 Cup
Curd : 1/2 Cup
Salt : A little
Eno fruit salt : 1/2 Teaspoon
Oil : 3 to 4 Tbs

Method :

1. Take a big bowl and put banana, curd and jaggery. (Powdered).
2. Smash banana and mix all the ingredients nicely. Add salt.
3. Add rava/semolina, add required water and prepare dough.
4. Leave it for 5 minutes. Add eno salt and mix it well.


5. Keep a Guli Appa pan and heat. Put oil to each mould.
6. Put Rava guli appa mixture and put some oil.


7. Cook on low and medium flame. Turn the other side and cook.

8. Sweet Guli Appa is ready to serve.

9. Serve with your choice of side dish.

Note:

Banana, curd, jaggery should be mixed well. I have used fresh jaggery which is clean and organic.
Adding the quantity of jaggery is optional. More or less. Mix all the ingredients and then use required water. The dough should be like idli dough consistency.
Time : 15 Minutes.
Serves : 2 to 3 People. 

I have used curd to prepare this guli appa.(Use of milk is optional). Just check the recipe in blog.

Apple Kesari baat / ಕೇಸರಿಬಾತ್

Apple Kesaribaat is a sweet dish and it can be prepared quickly and it is very easy too.


Kesari baat, sheera the names are very familiar because Uppittu - Kesari baath go hand in hand.
Even in the hotel it is known as khara baath for Uppittu and Kesari baath is the sweet combination for Uppittu /Upma.
As the name mentioned this Kesari baat has apple in it. It also has rose petals which are grown from our pot garden. We have a pink rose plant in a pot and it does bloom flowers. I use these flowers in preparing the other sweets also.
Rose petals adds to the taste and it gives out the aroma of divinity. I have prepared this Apple Kesari baat for evening snack on last Saturday.. We had some bread bajji/pakoda with this Apple Kesari baat and kesari baat tasted heavenly.
I just spread the kesari baat in a tray and cut into pieces later. 
Let us see the recipe now : 

Ingredients :

Rava/ Rave /Sooji /Semolina : 1 1/2  Cup
Sugar : 1 1/2 Cup
Cardamom : 4 to 5 Pods
Natural Rose Petals : 10 to  15. (2 flowers)
Apple : 1 Medium sized
Ghee : 3/4 Cup
Cashews and Raisins : 2 to 3 Tbs
Boiling Water : 2 1/2  to 3 Cups

Method :

1. Powder Cardamom and keep it aside.


2. Grate apple and keep it aside with Rose flower petals. Keep 3 Cups of water to boil.


3. Keep a pan on the fire and heat. Add 3 to 4 tbs of ghee and fry cashews and raisins.


4. Add Rava/Semolina and fry till the raw smell goes off. Fry on low flame.


5. Add boiling water and mix it slowly till it turns thick and cooks soft.
6. Add sugar and mix it slowly. It turns as liquid and continue stirring.


7. Add grated apple and rose petals.


8. Slowly mix all the ingredients nicely till it turns back to thick.

9. Now add remaining ghee and powdered cardamom.

10. Stir slowly and shift the ready Apple Kesari baath to a tray or bowl. Spread Kesari Baat evenly
and cut it later once it is cooled or serve as you like.

Note :

You can reduce the ghee quantity. (Optional).
Remember that you should fry  rava on low flame, so that rava does not get burnt. Adding more sugar is optional. 
Time : 20 Minutes.
Serves : 5 to 6 (According to the quantity you serve).

Jack Fruit Rave Rotti

Jack Fruit season is almost over and you need to wait for fresh fruits for next season. 
Just before the season  I got this fruit from my sister. She lives in Kadiyali./Udupi. The fruits are very tasty and we do long for this jack fruits to have at least once a year.


Viji's house the jack trees did not bare many fruits, because This year the fruits just fell off before it got ripening. Some thing must have happened since there was no rain until July end and the trees must have suffered  of no rain. It did not bare many fruits and the ones started to grow it fell off and rotten. A few were there to eat. So she gave us one Jack Fruit and it took long time to ripe. Any ways we were lucky to have.
Jack fruit rotti is very tasty and you can have them for breakfast or dinner.
It is easy, quick and healthy too. 
I have used medium size rave/rava/semolina, very little coconut, jack fruits and salt. The sweetness in the fruit adds the sweet. Extra sweet is not used here.
Let us see the recipe now :

Things Needed :

Jack fruits : 1 Bowl (15 to 20 fruits).
Medium size Rava/Semolina/Sooji : 2 Cups
Coconut : 3 to 4 Tbs
Salt : To taste.
Oil : 3 to 4 Tbs

Method :

1. Cut jack fruit into small pieces.


2. Grate coconut and grind it with jack fruit pieces. Do not add any water while grinding.
3. Take it out from the mixi jar to a bowl.
4. Add salt and mix 2 cups of medium size rava.


5. Mix the batter well. Add little water if required only.


6. Keep a pan on the fire and heat. Clean it nicely with a clean towel or kitchen tissue.
7. Sprinkle some oil on the tava and spread around it. Let the flame be very low.
8. Take a handful of the batter and spread it as thin as you like.


9. Sprinkle some oil on the top, cover and cook for a minute.
10. Turn the other side and cook for 30 seconds.


11. Jackfruit rotti is ready to serve. Repeat the same with remaining batter.


12, Serve with any side dish of your choice. We had it with ghee and chutney powder.




Note : 

Do not add any water while grinding. Adding more coconut is optional. The ground mixture has moisture and it mixes well with rava. Or you can add only if it is necessary. The batter should be bit thicker than idli batter. Adding jaggery is optional. I did not add any spice or sweet except salt.
Time : 30 Minutes
Serves : 3 to 4 (As you serve).
