Quick Sweet Guli Appa

Sweet Guli Appa is any time munching food. I do prepare this Sweet Guli Appa very often and was not able to click a pic. We just love to munch Sweet Guli appa at any time of the day.


This sweet guli appa can be prepared quickly and  is a treat to sweet lovers in a healthy way.
I have used jaggery, chiroti rava/thin variety of rava, coconut and little Eno fruit salt.
It has mild sweet and good for all age group.
These Sweet Rava Guli Appa was prepared to give it one of our relative. Felt like taking something while visiting them. The lady of the house fractured her leg and was admitted to hospital for treatment and was discharged. She was in recovering and kids and her hubby used to manage the house hold chores.  So I prepared these Guli Appas. We had been to their house and gave the guli appa I prepared, talked to her and came back.
Let us see the recipe now :

Things Needed :

Well Ripen Banana : 2
Medium size Rava /Semolina : 2 Cups
Jaggery : 1/2 Cup
Grated fresh coconut : 1 Cup
Curd : 1/2 Cup
Salt : A little
Eno fruit salt : 1/2 Teaspoon
Oil : 3 to 4 Tbs

Method :

1. Take a big bowl and put banana, curd and jaggery. (Powdered).
2. Smash banana and mix all the ingredients nicely. Add salt.
3. Add rava/semolina, add required water and prepare dough.
4. Leave it for 5 minutes. Add eno salt and mix it well.


5. Keep a Guli Appa pan and heat. Put oil to each mould.
6. Put Rava guli appa mixture and put some oil.


7. Cook on low and medium flame. Turn the other side and cook.

8. Sweet Guli Appa is ready to serve.

9. Serve with your choice of side dish.

Note:

Banana, curd, jaggery should be mixed well. I have used fresh jaggery which is clean and organic.
Adding the quantity of jaggery is optional. More or less. Mix all the ingredients and then use required water. The dough should be like idli dough consistency.
Time : 15 Minutes.
Serves : 2 to 3 People.

Almonds - Corn flakes Laddu

Laddu/ Laadu / Unde is one of the healthy sweet done and stored for munching at any time of the day.
Here are some laddu which I prepared for distributing it for our relatives with Kashi Tirtha. We had been to Kashi/Varanashi , Gaya, Ayodhya and Prayag Rajya. It was beautiful trip with our friends and always cherish the memory. 


Visiting Kashi Vishwanatha temple is one such moment and taking dip in Ganga River and other holy rivers really an awesome feeling. Ok it is left to people with believers and non believers any ways. One has to enjoy his or her feelings and cherish the moment that he or she gone through.
Coming back to Laddu, I have prepared this type of laddu using corn flakes and ground nuts, for Our Kashi tour and distributed among us in the bus while travelling to Gaya from Varanashi. 
I have done that laddu on Facebook live too. It is an easy, healthy, quick and simple to prepare and you can enjoy it any time of the day. Here I used almonds instead of groundnuts. 
The ingredients I used are mainly Corn flakes, almonds, jaggery. Thats it.Minimum ingredients and healthy laddu to be munched. It stays for a week or little more days and it and no coconut used here.
Lets see the recipe now :

Ingredients :

Corn flakes  : 500 Grams
Almonds : 250 Grams 
Jaggery : 250 Grams 
Ghee : 3 To 4 Tablespoons

Method :

1. Dry Grind Kelloggs corn flakes. ( No needs to roast )
2. Dry Grind almonds /badami in to rava consistency and shift it to a bowl.
3. Mix both the powdered almonds and corn flakes and keep it aside.


4. Take a big pan and keep it on a fire. Add powdered jaggery and 1/4 Cup of water.
5. Let it dissolve completely. Sieve it and  keep it aside.
6. Now take cleaned jaggery and put it to a pan. Keep it on the fire and let it boil.


7. Stir in between and let it get one string consistency. Let it be on low flame. (Whole procedure).
8. Add powdered almonds - cornflakes mix and mix it well. 


9. Take away the pan from fire and keep it down.
10. Put 3 to 4 tablespoons of ghee and mix it nicely. 
11. Take a small portion from it and prepare laddu. 


12. If you find the laddu mixture dry add 2 tablespoons of hot milk and mix it well. 
13. You can easily prepare laddu. Prepare laddu with remaining mixture.


14. Let it completely cool. Store in air tight box or bottle.

Note :

Check with one string consistency. Do not add more water. It takes long time to get thick.
Do it on low flame. Adding ghee more /less is optional. Adding more ghee taste better. You can add ghee instead of hot milk if the mixture turns dry. Heat the ghee and then use it. It is always better to clean jaggery and then use it.
Time : 30 Minutes
25 to 30 Laddus can be prepared. (The size must be small).

Dates and poppy seeds Burfi

Dates and Poppy seeds burfi is a healthy burfi, that I have tried during this Deepavali. No sugar or jaggery is added to this bar and is nice to chew the healthy, yummy and easy  Dates and poppy seeds.


I have used Dates, almonds, cashews, raisins, figs and poppy seeds.
It is an easy and healthy burfi that all age group can enjoy and more of it it is diabetic friendly. Sweet teeth people can munch this burfi at any time of the day. Good to carry for travelling and good snack for the kids snack box. It is energetic and loaded with good minerals and vitamins.
I prepared this Dates burfi during Deepavali and packed it as one of the sweet to our relations.
Dates and Poppy Seeds Burfi Has NO Sugar, NO Ghee or any fat and No Coconut.
Preferably use ripe and soft Dates to prepare this burfi.
Let us see the recipe now :

Ingredients 

Dates : 400 Grams
Raisins : 2 to 3 Tablespoons
Almonds : 20 to 25
Cashews : 10 to 15
Figs : 5 to 6
Poppy Seeds : 3 to 4 Tablespoons


Method :

1. Remove the seeds from Dates and put it in a big bowl.
2. Cut cashew nuts and figs into small pieces.


3. Dry grind almonds into powder consistency.
4. Put all the dry fruits into a big bowl. Kneed them well and let it mix well. ( Dates, raisins, cut cashews, figs and powdered almonds).
5. Spread a tablespoon of poppy seeds in a tray or plate.
6. Put dry fruits dough in the tray and press it evenly. Use chapati roller to even it in equal level.


7. Spread remaining poppy seeds on the top of the burfi and just press it slightly.

8. Leave it for a while. Cut it according to your desired shape.

9. Remove from the tray and store in a box.

10.  Serve or munch at any time of the day.

Note :

The dates you use should be soft. You need to kneed the mixture nicely so that it mixes well and sets well as burfi. Dates proportion should be more, so that it adds to the sweet taste. The sweet taste is natural and good for all age group and the diabetic people.
Time : 30 Minutes. 
Serves : 20 Pieces. ( According to size and shape ).

Jaggery Karchikai

Karchi Kai /Karanji / Sweet fried Kadubu is one of the traditional dish prepared for Ganapati and Deepavali. It is one of the easy dish and can be kept for a long time ( At least a week).

Varieties of stuffing can be done according to your imagination. The outer layer is done with chiroti rava and maida. The filling/stuffing is like coconut, jaggery or sugar, dry fruits, dates and candy sugar etc.
Here I have used roasted chenna, jaggery, thin variety of semolina and little maida.
Use of ghee helps the outer layer to be crispy and crunchy.

Let us see the recipe now :

Things Needed :

For Outer Layer/Cover/Kanaka 
Chiroti Rava : 1 Cup
Maida : 1/2 Cup or little less
Ghee : 1 Tablespoon
Salt : A little
Hoorana /Stuffing
Roasted Chenna /Huri Kadale : 1/2 Cup/ 2 to 3 Tablespoons
Dry coconut : Cup
Cardamom :  5 to 6 Pods
Jaggery : 1/2 Cup (Powdered)
Oil : to Fry : 2 Cups

Method :

1. Dry grind dry coconut and keep it aside.

2. Dry grind jaggery, roasted chenna and cardamom pods nicely till powder.

3. Take a big bowl and put coconut powder, jaggery mixture and mix it well.

4. Take a big bowl, put chiroti rava/thin variety of semolina and maida/All purpose flour.


5. Add required salt, a tablespoon of ghee and mix all the ingredients nicely for 2 to 3 minutes.
6. Add water ( little by little ) and prepare the dough.
7. Kneed the dough nicely and divide the dough into small portion.


8. Roll each small portion and stuff some sweet mixture and fold the karchikai and press it at the edges. So that it does not get open while frying in oil.

9. Arrange the done karchikai in a plate or tray.

10. Keep a pan on the fire and put oil. Let it get heated.  (On low flame).
11. Put folded karchikai/karanji one by one and fry on both sides.
12.Remove it from the pan and put it on a kitchen tissue.

13. Repeat the same and prepare rest of karchikai.
14. Let it cool. Serve them with as snack.

Note : 

Do not add any water while dry grinding. No need to heat sweet mixture on the pan. Roasted chenna helps to take away the moisture. Use of more / less jggery is optional. Use of more ghee while preparing the dough helps the dough to turn crispy. Let the flame be low while frying also. It helps the kachori layer to be crunchy
Time: 30 to 40 Minutes
Serves : 15 to 20.

Wheat - Rava - Banana Guli Appa

Guli Appa /Paddu/Gunthpongalu/ Kuli Appam whatever you call it, it is one of the tasty appa/appam that you really enjoy eating them. Here I have tried wheat - rava/semolina Guli appa and it is quick, easy and healthy too.

I have used wheat flour, rava, banana and jaggery and little eno salt to add softness in the dish.
These Sweet Guli appa is good for kids when they come back from school in the evening. It is diabetic friendly, it is prepared using rava and wheat flour. Add little jaggery if you are serving to diabetic person.
Jaggery does provide energy and iron. It is good to have to decrease gastric problems. It helps to digest the food easily.
Wheat - Rava - Banana Guli Appa is easy to prepare, a very few ingredients to use and you can do it quickly. It can be served as evening snack or for breakfast.

Ingredients :
Wheat flour : 1 Cup
Rava /Semolina ( Medium size) : 1/2 Cup
Jaggery : 2 Tablespoons full
Banana : Well ripen : 1
Curd : 2 Tablespoons
Salt : As required
Eno Salt or Cooking Soda : A pinch
Coconut : Grated : 2 Tablespoons.
Cooking Oil : 2 to 3 Tablespoons


Method :
1. Take a big bowl and add curd, jaggery and banana and mix it nicely.

2. Add wheat flour, rava, grated coconut, salt .
3. Mix all the ingredients nicely and add required water. Mix it well.
4. The batter should be like dosa consistency.
5. Add eno salt to the ready batter and mix it well.


6. Keep Guli Appa pan on the fire and heat. Add little oil to each mould in guli appa pan.
7. Mix the batter nicely and put a spoon of batter. sprinkle oil to each guli appa.
8. Cover the pan and cook on medium flame for 1 to 2 minutes.
9. Turn the other side and cook on low flame till it turns golden brown.


10. Remove guli appa to a clean bowl or plate and serve with ghee.

Note : 

Do not make the batter too watery.  Add little rava if the batter turns very watery.
Adding more / less jaggery is optional. Adding ghee while cooking is optional. Use of well ripe banana is good to use and guli appa turns tasty.
Time : 20 Minutes.
Serves : 2 to 3.
