Wheat flour - Dry Fruits Laddu

Hello Every one ..Happy New Year 2019.
Let us pray and wish this New Year Brings all of us Happy Thoughts, Health and Wealth and Prosperity.
Let us begin the year with simple, healthy and quick Wheat Flour - Dry Fruits Laddu.


Laddu/Laadu / Unde all are the different names for sweet roundels.
Here I have tried wheat flour and dry fruits like anjur /figs, walnuts, raisins and coconut.
Added jaggery to give more sweet taste because wheat flour needs little more sweets. Dates do adds sweet and nutritious properties. I have added dates also.
These Wheat Flour Laddu is good to have at any time of the day. It is good for  kids snack box or as evening snack. Good for taking it for tour or when you are travelling. It is good for elders and diabetic people. ( Reduce the sweetness if you are serving to diabetic people.
Let us see the recipe Now :

Things Needed :

Wheat flour : 2 Cups
Dry fruits like figs, dates, raisins : 1 Cup
Ghee : 1/2 Cup or more
Jaggery : 3/4 Cup ( Powdered )
Coconut : Fresh : 1 ( Small One )
Cardamom : 5 to 6 Pods
Jaggery soaked rose petals.
Salt : A pinch

Method :

1. Keep a pan on the fire and put jaggery and 1/2 cup of water. Let it melt. Sieve it and keep cleaned mixture aside.

2. Keep a pan on the fire and put 2 tablespoons of ghee. Fry wheat flour nicely till the raw smell goes off. ( At least 5 to 6 minutes on low flame).

3. Grate or cut coconut into pieces and dry grind it.
4.Remove the cardamom seeds from pods and dry grind it with nuts.

5. Now keep cleaned jaggery in a big pan. Let it boil nicely and turn a string consistency.
6. Add grated and ground coconut and add it to jaggery. Stir nicely.
7. Jaggery - coconut mixes well and starts to get thick.


8. Add fried wheat flour and mix it well. Fry raisins in 2 tablespoons of ghee and add it to wheat - jaggery mixure.

 Add fried raisins and ground dry fruits and mix all the ingredients nicely. Add 2 tablespoons of rose petals with jaggery.

9. Put off the fire and keep the ready mixture down. Mix it well. Add remaining ghee and mix.

10. Take a handful of the sweet mix and prepare laddu/laadu/unde .


11. Repeat the same and prepare laddu/Laadu/Unde.


12.Store these laddu in a airtight box or bottle and serve or eat as you wish.

Note

Dry roast or fry wheat flour nicely till the raw smell disappear. Let the jaggery syrup consistency be 1 thread consistency in the beginning. Adding coconut to jaggery turns as coconut burfi./Thick. Then add wheat flour and other ingredients. Adding more ghee is optional. Add more ghee if you find to make laddu. ( If it turns dry ). Adding rose petals adds to the taste and aroma. It is healthy to eat pink rose petals.
I have kept some rose petals dipped in jaggery to use it in sweets. Rose grows in our terrace pots.
Time : 30 to 40 minutes.
Serves : 30 Laddu can be prepared.

Crunchy Chakkuli ( Rice flour - Besan - Roasted Chenna).

Chakkuli/Chakli /muruku what ever you call it, it is one of the most favourite snack for most of us. It is said God Krishna, Lord Ganesha loved to have chakkuli on their festival. Varieties of chaklis available and prepared. some traditional, some twisted.


Here is Crunchy Chakkuli which comes out perfect and not to mess up your whole time.
Ganesha Chaturthy /Ganesha festival is here tomorrow. You can prepare this chakkuli for prasadam /neivedya and then enjoy eating this Crunchy Chakkuli later with festival feast.
Let us see the recipe now :
All You need is Fine rice flour, besan/channa dal flour and roasted chenna/Huri kadale/pottu kadale, some simple spices and oil to fry. 

Things needed :

Rice flour : 3 Cups
Roasted Chenna /Hurikadale :1/2 Cup
Besan/ Channa dal powder : 1/2 Cup
Butter : 2 Tablespoons
Salt : As required
Chilly Powder : 2 Teaspoons
Till/Sesame seeds /Elllu : 1 Tablespoon
Jeera/Cumin Seeds : 1 Teaspoon
Oil : To Fry : 2 to 3 Cups


 Method :

1. Dry grind roasted chenna and keep it aside.
2. Take a big bowl and add rice flour, roasted chenna flour, salt, besan.channa dal flour, red chilly powder and butter. Add jeera/cumin seeds and til/Yellu/Sesame seeds.

 
3. Mix all the ingredients nicely and then slowly add water and prepare chakkuli dough.
4.Kneed the dough nicely and divide it as small portions.


5. Wash and clean the chakkuli mould and insert the chakkuli plate inside.
6. Put a portion of chakkuli dough into the mould. Close the lid and keep aside.
 7. Keep a pan on the fire and heat. Add two cups of oil and let it get hot. ( Medium flame).

8. Now press chakkuli mould straight to the pan. Let chakkuli fall slowly in hot oil and it starts to fry and turn golden brown. Turn chakkuli to the other side and fry.


10. Now remove the done chakkuli to a bowl and put them on kitchen tissue.

11. Repeat the same and prepare remaining chakkuli.
12. Store in air tight box once the chakkulis are cooled.
13.Serve Hot Chakkuli with a cup of coffee, tea, juice or any other drinks.


14. We had it with a cup of tea.

 Note :

Remember that fine rice flour gives the best result. Adding more/less chilly powder is optional. Adding more butter dissolves chakli while frying. So do not add more butter. Adding only jeera/cumin seeds or sesame seeds is optional. Adding more roasted chenna will turn chakli very soft and it cuts into very small pieces or turns into powder while frying. So be careful while adding roasted chenna.
Time : 40 Minutes.
Serves : According to your serving.

Huri Hittu - Jaggery Unde /Laadu / Laddu

Huri Hittu is a preparation of Ragi/ Roasted finger millet's powder.
These Huri Hittu laddus are yummy, healthy and it is easy to prepare.


I have used Ragi Huri Hittu which was given by my son Ravi, he buys the organic flours and other day today groceries straight from farmers. This Huri hittu pack was bought from one of the organic former's shop.
I have not cooked or roasted anything on fire. It is just a mixture of all the ingredients, like finger millet ragi flour, jaggery, cardamom and almonds. I have used Joni Bella/ Organic jaggery. This Joni bella/ jaggery is is bit watery, it is done in that way. We normally use this jaggery, while drinking water. ( In hot summer, you put some little quantity of jaggery in mouth and drinking water. As the jaggey is already in your mouth, the water tastes sweet.
My memory goes down the lane for this Huri Hittu. ( Huri/ Roasted and Hittu flour). In our school days we used to see the kids eating this Huri hittu in the evenings as snack. It was simple and heavenly food. I too have tasted and it was hundred percent Yummy. They used to ( some of our friends mothers' used to wash and dry the ragi/finger millet in shade. ( In side the home). Then slowly they dry roast the ragi and it used to turn as slightly fluffy. Then when it is cooled they powdered in the mill. Store this flour in airtight boxes or tins or good container. Whenever they wanted to prepare the huri hittu, they remove the flour from the box, grated coconut, powder jaggery and mix all the ingredients nicely after adding ghee. Turn them as small lemon size balls or give the ragi coconut-jaggery ghee mixture as it is. Some has to pour milk and give. It was superb snack for the kids in the evenings during those days.
Here is a Huri Hittu laddu which is not at all needed to cook. This Ragi Huri hittu pack is available in the super market / organic shops and some people do prepare at home and sell the flour. But make sure you get the good quality of flour and enjoy eating this laddu.
I have used Alemane Bella/ fresh organic jaggery that is called Jone bella / fresh jaggery/ liquid jaggery which is available in Jaggery preparing place/Organic shops and markets.
Huri Hittu Unde/laddu can be packed for kids snack time. You can take them when you are travelling. It is one of the best snack in the evening.  It fits into all age group category.
Let us see the recipe now;

Ingredients :

Huri Hittu : 2 Cups
Almonds : 1 Cup
Jaggery/Joni bella : 2 to 3 Tablespoons
Cardamom : 5 to 6
Coconut : Dry copra/ Kobbari : 2 to 3 Tablespoons
Ghee : 1 Tablespoon
Raisins : 2 Tablespoons.


Method :

1. Dry grind almonds into powder form./Rava consistency. Keep it aside.
2. Grate  cocomut/kobbari and dry grind it. Let it be powder form.


2. Take a big bowl and put huri hittu, jaggery, cardamom powder, powdered almonds, dry coconut
 and Ragi Huri hittu.


3.Mix all the ingredients nicely by adding ghee.


4. Mix it nicely and take a small portion of the mixture and prepare


6.Prepare rest of the laddu in the same way and arrange them in a plate.


7. Serve them whenever you want to. Store them in a airtight bottle or box.  Shelf time One OR two days.


Note :

Huri hittu can be prepared at home with little care. Adding more/less jaggery is optional. Adding ghee should be little or more. You can use fresh coconut instead of dry copra/ kobbari. Dry roast coconut gratings and then dry grind once it is cooled.
Time : 15 Minutes
Serves  15 to 20 Laddu/Laadu/Unde .
Shelf Time : 1 or 2 Days
Purely South Indian Dish.

Bottle Gorud-Banana Sweet Rava Rotti.

We are sweet people. (we do love to have some sweet taste in our food ). I am saying this here I am preparing Bottle Gourd Banana Rava Sweet Rotti. Is not that I am saying this for this purpose, we udupians /Karnataka's southern part, prepare food that is bit sweet. Whether it is a curry or solid food there are varieties of food that have sweet taste with them.


Adding jaggery to the curry or any edible is one of the healthy point to note. Spice adds acidity and jaggery helps to reduce the acidity. Such a wonderful quality that jaggery has. They are good for quenching thirst, adding iron content to our body, helping to reduce the acidity in the food.
We visited Cambodia last December and I got two small tins of Palm Jaggery on the way to the capital city of Cambodia Phnom Penn. Lots of Palm trees in that country and preparing Jaggery from Palm fruit in traditional way.
Let us see some benefits of using PALM JAGGERY in our diet.
Palm Jaggery is an excellent substitute for white sugar. It is healthy and natural sweetener. It is the most beneficial and nutrient rich variety of raw jaggery. It is prepared from palm tree extract and is loaded with minerals and vitamins. It is loaded with medicinal properties.
Palm Jaggery is rich in iron, increases hemoglobin level when you eat regularly. It is good for treating anemia. It is a rich source of magnesium and regulates the nervous system. It is rich source of antioxidant, calcium,potassium and phosphorus. It is good remedy for constipation and helps in easy digestion. It is a good energy booster.
Let us see the recipe now :

Things Needed :

Bananas : 2 ( Small size)
Milk : 1/2 Cup
Rava/Semolina : 2 Cups
Bottle gourd : 1 Bowl ( 1/2 of 1 bottle gourd medium size)
Palm Jaggery : 2 to 3 Tablespoons
Salt : A little
Coconut : 1 Cup
Ondelaga leaves : 1 Handful ( Optional)
Oil : 3 to 4 Tablespoons

Method :

1. Wash bottle gourd and peel off the outer layer. Grate it and keep it aside.


2. Peel off banana skin and smash banana in 1/2 cup of milk. Add palm jaggery and mix it well.

3. Grate coconut and keep it aside. Wash Ondelaga / Gotu kola leaves and cut it into thin pieces.
4. Take a big bowl and put, cut ondelaga leaves, rava/semolina, salt, grated bottle gourd, coconut and banana - jaggery mix.

5. Mix all the ingredients nicely. Add water if required and mix it nicely. Let it rest for 5 to 10 minutes.
6. Keep a dosa pan on the fire and heat. Add a teaspoon of oil and spread it nicely around the pan.
7. Wet your hands with water and take a handful of rotti batter and spread it slowly on the hot tava. Let the flame be very low while you spreading the batter.


8. Add 1/2 teaspoon of oil on the top and cook on medium heat. ( You can use your spatula to spread the batter evenly, once you put oil on the top). cook for a minute.
9.Turn the other side and cook for another 2 minutes.

10. Now the bottle gourd - banana Rava sweet rotti is ready to serve.
11. Serve with your choice of side dish.  Add a teaspoon of ghee on the top and serve.


12. Repeat the same with remaining batter and prepare Sweet Rava rotti.

Note :

Use of Ondelaga leaves is purely optional. Use of palm jaggery is good for health. You can use normal jaggery instead. Use of milk and banana adds taste to rotti. Use of ghee instead of oil to cook rotti is optional. More / Less jaggery is optional. Use of bottle gourd is good for health. Use of medium rava is better. ( I used medium sized rava).
 Time : 30 Minutes.
Serves : 2 to 3 .
