Mentya (Fenugreek seeds) Guli appa (Sweet + Khara)

Fenugreek seeds are known as Mentya in Kannada Language, methi in Hindi, vendyam in Tamil. It is strongly aromatic and popular spices and widely used. It is recognised for cullnary as well as for medicinal properties. Traditionally fenugreek seeds are being used to cure digestive problems. Fenugreek seeds are rich source of minerals, vitamins and phytonutrients. These seeds are a very good source of soluble dietary fibre. if used regularly fenugreek seeds may help control cholesterol. as well as high blood sugar levels in diabetics. Fenugreek seeds also help the nursing mothers.
Here is a recipe of Fenugreek seeds guliappa, a traditionally done snack which is also known as Gundu ponglu, Paddu or Kuli appam. We use a special pan to prepare guli appa, It looks as a small ball you can say. Its round, soft and fluffy. Sweet and Khara (spicy) , two varieties of guliappas can be prepared. Guli appas can be eaten for break fast, as snack or for dinner too. I am sure all age group will definitely like it.

Things needed:
Besic dough
Fenugreek seeds :1/3 of the cup. ( what ever the measurement you use)
Raw Rice : 3 cups.
Urd Dal : 1 Table spoon ( or first ful)
Salt : to taste.
Water: required.
Oil: 1/2 Cup
Method :
1. Wash and soak raw rice and Fenugreek seeds together for 3 to 4 hours.
2. Grind them together till paste. The consistency should be like dosa dough consistency.
3. Add salt and leave it ferment. (over night).


Sweet Version 
Things Needed :
Already ground dough : 2 Cups
Jaggery : 3 to 4 Table spoons. (1/2 cup)
Tender coconut flesh : 1/2 cup


Method : 
1. Grind or cut tender coconut into small pieces.
2. Powder jaggery .
3. Now add jaggery and ground coconut to the Guli appa dough and mix it well.
4. Keep a Guli appa pan on the fire. Heat and put little oil to all the moulds.
5. Take a spoon of dough and fill all the moulds by filling them with the dough.
6. Cover the lid and cook on medium and on slow flame.
7. Now sprinkle oil to all the guliappas and turn them and cook on other side of the appa.
8. Cook for 1 minute and remove the guli appas from the pan.
9. Repeat the same with the remaining dough and prepare guli appa.
10. Serve them hot with little ghee on the top and the chutney you have prepared.



Khara (spicy) Version.
Things needed :
Guli appa dough : 2 Cups.
Green chilly : 2
Ginger : 1 Table spoon
Coriander leaves : 2 to 3 Table spoons.
Tender coconut flesh: 1/2 cup.

Method :
1. Wash and cut green chilly, coriander leaves and curry leaves into small. Grate ginger.
2. Grind tender coconut flesh and add it to the dough.
3. Now add grated ginger, coriader leaves, curry leaves and cut green chilly and mix i
4. Keep guli appa pan and heat. Put oil and put guli appa dough to each mould with the help of the spoon. Put little oil on the each guli appa and cover the lid and cook for 2 minutes.
5. Now cook the other side of the guli appa for a minute and remove from the pan.
Serve Hot and Sweet Guli appas with the chutney you have prepared. Put a spoon of ghee on the top of Guli appa just before serving.

Note : The dough should be ferment well before you prepare guli appas. Or the guli appa will not come out properly. You can also add more jaggery if you wish. Coconut can be used instead of tender coconut flesh. The taste differ. You can also use cut onions to the khara version. Cut onions into small and mix it with the dough and prepare khara guli appas. Using non stick Guli appa pans will help you to reduce the use of oil.

Time : 40 minutes. +  soaking, grinding and ferment.
Serves : 5 to 6

Snake Gourd pulp Tambuli

Snake gourd is a vegetable  which is high water content, low in calories, fat free but filling and great to include in weight loss diets. Snake gourd also contains a lot of firber which can help to keep your digestive tract healthy. The firber is also helpful for those with diabetes. It is also a good source of minerals like magnesium, calcium and phosphorus.
Here I used Snake gourd pulp for Tambuli. Tumbuli is a side dish which keeps our body cool and healthy. Normally tumbuli is prepared with butter milk, fresh coconut and other spices and consumed or served in the beginning of the servings. We can have this tumbuli with rice, chapati, poori or toti too.
Things needed :
Snake gourd Pulp : 1 cup
Fresh coconut: 2 Table spoons
Pepper pods : 2 to 3
Jeera : 1/2 Tea spoon
Ghee : 1 Table spoon
Salt : as required
Green chilly : 1
Ingh : a pinch
Curd : 1 Cup
Mustard seeds : 1/4 Tea spoon
Red chilly: 1
Curry leaves : 4 to 5

Method:
1. Scoop out the tender pulp from the Snake gourd and boil or cook in pressure cooker for 6 to 8 minutes using little water, and green chilly and keep it aside to cool.
2. Now keep a pan on the fire and heat. Put ghee. Add jeera and pepper seeds Fry for 10 seconds. Put of the gas.
3. Now grind fresh coconut, fried jeera and pepper and cooked Snake gourd pulp. Use the water from the cooked pulp.
4. Add salt and ingh and grind and mix it well. Now remove the ground mixture from the jar and pour it to the  bowl.
5. Add curd and mix it thoroughly.
6. Now once again keep a pan on the fire. Add the remaining ghee. Put mustard seeds and red chilly. Let the mustard seeds spurt. Add curry leaves and put this spurt mixture to the ready tumbuli and serve with rice or chapati.

Note : You can fry snake gourd pulp while frying pepper and jeera. Fry until it gets tender. Cooking the pulp is good for health. You can also use butter milk instead of curd. Using butter milk is a healthy way but adding curd to the tumbuli taste best. Use less water while boiling.
Time : 15 minutes.
Serves : 2 to 3

Yellu -Kadale Kai Unde( Sesame- Ground Nut Laddu)

Sesame or yellu (in kannada) til (in tamil)  is good to eat during winter and rainy seasons  since our body gets dry during these seasons, eatables made with sesame or groundnuts will provide the needful to our body. Jaggery on the other side will help to supply iron. Yellu Unde is a sweet dish and will be liked by all. You can even make small laddus to pack it for school lunch box. The amount of jaggery is used very less in this recipe so that even diabetic people also can have a little of it. Make sure you prepare small laddus than usual size while giving it to diabetic people.
Things Needed : 
Black Sesame Seeds: 1 Cup or 100 Grams.
Ground Nuts: 1 Cup
Jaggery : 1/4 Cup.
Coconut: 1 Cup (Optional)
Water: 2 Table spoons
Ready to serve Sesame - Ground Nuts Laddus
Method : 
1. Roast Sesame seeds and ground nuts separately. Remove the skin of ground nuts when it is cool.
2. Now dry grind sesame seeds till powder and ground nuts coarsely and remove from the jar and put in a big bowl.
3. Keep a pan on the fire, Put jaggery and put water. Let it melt a little. Strain this jaggery to get the clean jaggery water.
4. Now boil this jaggery till bubble. Let it boil for 1 minute.(do not allow the jaggery to get thick).
5. Now put boiled jaggery to the sesame - ground nut mixture and mix it well.
6. Add grated coconut and mix it again and take a handful of the mixture and prepare laddu.
7.Prepare laddus with the rest of the mixture the same way .  (point no. 6).
Note: Boiling the jaggery to separate the dirt is good to follow since you get the pure jaggery. You can use more jaggery if you like more sweet in the laddu. Let the jaggery syrup bubble nicely or your laddu will turn very soft and will soon get spoiled.( too much moisture will develop the fungus). Keep a table spoon of ground nut and then dry grind the rest, then add the whole nuts while mixing. This way the laddu taste better. Adding coconut is an optional. You can even prepare laddu without coconut too. You can also use the copra  (dry coconut) instead of fresh coconut. You can also roast the fresh coconut for 2 minutes to remove the wetness in the coconut. Do remember all the note before you  try the Laddu.
20 to 25 Small laddus can be prepared.
Time: 30 Minutes.

Cashew - Almond Laddu.

Cashew - Almond Laddu is very nutritious and healthy laddu. We can have them any time of the day and good for all age group and specially for kids. You can pack them in their Lunch box,. Not much of ingredients are needed to prepare laddu and it does not take much of your time and you can keep them for long time in air tight box.
Ingredients : 
Almond (Badam) : 1 Cup
Cashew nuts: 1 Cup
Jaggery : 1/4 Cup
Water : 2 Table spoons.
Ghee: 1 Table spoon
Ready  to serve Almond +Cashew Laddus.
Method :
1.Dry grind almond(with skin) and keep it aside. Roast cashew till brown and keep it aside.
2. Put ground almonds and roasted cashew nuts in a big bowl.
3. Now keep a pan on the fire. Put jaggery and two table spoons of water. Let it melt nicely. Stir in between..
4. Jaggery melts and starts to bubble. Let it bubble for 1 to 2 minutes. Pour this jaggery content in the almond+cashew mixture bowl.
5. Add a table spoon of fresh ghee and mix the mixture nicely. Take a handful of the mixture and prepare laddu.
6. Do the same with the remaining mixture.
7. Almond - Cashew Laddus are ready to serve now.  Keep these laddus when it is cool in a box.
Note : No need to roast the almonds. Roast cashew on low flame. You can use 1 tea spoon of ghee to fry cashew nuts. The jaggery should be boiled for at least 1 minutes. Over boiled jaggery mixture may turn the laddu  hard.
10 to 12 Laddus can be prepared.
Time : 10 to 15 minutes.

Raagi Hittina Unde.( Finger Millet Laddus )

Raagi Hittna Unde is prepared with Raagi ( finger Millet ) powder , jaggery, sesame seeds, nuts, coconut and ghee. Its a healthy sweet even the elder ones can njoy having this laddus.You can have these Raagi Laddus at  any time of the day.


Things Needed :

Raagi Powder : 2 Cups.
Jaggery : 3/4 cups.
Coconut : 1 cup. ( Fresh and grated ).
Ghee : 3 to 4 Tablespoons.
Cashew Nuts : 2 to 3 Table spoons.
Sesame seeds : 2 Table spoons.
Water : Required .

Method :

1.Roast Raagi powder with 1 teaspoon of ghee on low flame for 5 minutes.
2.Powder cardamom and cut cashew nuts into small and keep it aside.
3. Roast sesame seeds and powder it when it is cooled.  ( Add cardamom pods and dry grind it).
4. Keep a big pan on the fire and add 1/4 cup of water. Put jaggery and let it melt completely.
5. Sieve the jaggery water and keep the clean jaggery aside. Grate coconut and keep it aside.
6. Keep a big pan on the fire and add a teaspoon of ghee. Fry cashew nuts till they turn golden colour.
7. Remove the fried cashews from the pan. Add jaggery water and let it turn one string consistency.
8. Add roasted raagi powder. Stir continuously on low flame. Add coconut and stir and put off the fire.
9. Add roasted and dry ground sesame seeds mixture and ghee. Add fried cashews and mix  all the ingredients nicely.  Prepare laddu/laadu/ unde when the mixture is hot or you may not be able to turn them as laddu. It breaks into powder.
11. Arrange the laddus in a tray/plate. Let them cool completely.
12. Store them in a airtight box or tin.

Note :

If you are not able to prepare laddu and if you think the mixture turned dry add hot milk or little ghee and then prepare laddu. ( The laddu done with hot milk should be kept in the fridge or it might get fungus). You can divide the whole mixture into small portion and remember add ghee/milk to that particular portion that you are ready to prepare laddu. You can use more/ less ghee. (Optional).
Adding dry coconut is better. (Copra/kobbari). It is diabetic friendly. It is good for kids snack box. It is healthy to have this laddu as snack in the evening.
Time : 30 Minutes.
20 to 25 Laddus can be prepared.

Oats Laddu

Oats Laddu is a sweet dish and its healthy and tasty too.  You can have them at any time of the day.

Things Needed :
Oats : 3 cups.
Sugar : 1 to 1/2 Cup.
Ghee : 3/4 Cup.
Dry fruits : 3 to 4 Table spoons.
Cardamom : 1 Tea spoon. ( 5 to 6 pods).

Method : Powder sugar with cardamom seeds and keep it aside. Now keep a pan on the fire . Put 2 to 3 table spoons of  ghee and fry dry fruits ( Cashew and raisins )  and remove from the pan . Now put  Oats to
the pan.  . Roast oats until raw smell disappear. (  nearly 5 minutes). Remove from the pan leave it for cooling.  Dry grind roasted oats to powder.  Now take a big bowl and mix ground oats, sugar, fried dry fruits  and little ghee and mix well. Take a handful of mixture and prepare all the laddus one by one.  If  you feel the mixture is too dry  add a spoon of ghee to the mixture.  Repeat the same and prepare all the Laddus.

Note : You can divide the Laddu mixture while adding the ghee. ( Adding little ghee to each portion will help us to reduce the use of more ghee ).  You can also use milk instead of ghee but remember these laddus will not remain for long. ( May be a day or two ). Using lots of dry fruits will increase the taste of Laddu. Also adding ghee ( mentioned above )  will help laddu to be very tasty. Can add dry coconut to the laddus  . It taste better. ( 1/2 copra - dry grind and make it into powder and then add to the mixture).


20 to 25 laddus can be prepared.

Gul paavate ( Kesari with Jaggery).

Gul Paavate is  a sweet dish prepared with Rava , jaggery( Bella in Kannada, gud in Hindi) and ghee.
This is a traditional and healthy dish and mainly for kids its very nutritious since lots of  dry fruits are used in Gul  Paavate( traditional name).

Things Needed :
Rava ( Samolina) : 1 cup .( Medium sized).
Ghee: 1/2 cup.
Jaggery : 1/2 cup
Dry Fruits:  1/4 cup.( Cashew nuts, Almonds and Raisins ).
Cardamom: 5 to 6.
Saffron   :( Kesari) : 3 to 4 rakes. ( Optional).
Water : 2 cups.
Method:
Powder cardamom and jaggery  separately and keep it aside. Cut nuts into small pieces , Keep water for boiling. Now take a  big pan and put 2 table spoons ghee and fry dry fruits for 1 minutes and add   Rava
( samolina ) and fry till the raw smell disappear.  Add boiling water and mix rava thoroughly and cook  for 2 minutes on low flame.  now add powdered jaggery and stir until it thickens.  Add ghee while stirring .  ( Can add more ghee to get better taste.  Add cardamom to the mixture and put  Gul Paavate mixture in a serving bowl.
Note : Fry Rava nicely on low flame . Can add more ghee to Gul paavate to get better taste. ( Especially when serving to kids ).  Can add dry dates( Uttutte in kannada ).  Adding Saffron is also optional since jaggery also will give good natural colour to the food.

Dry Dates - Nuts - Honey Laddus.

Dates and Nuts Laddus are very nutritious and has no sugar added and YOU can munch them
I have tried these laddu with nuts and dry  dates.(Uttutte as we say). Added Honey to bind all the ingredients well. You can munch these laddus any time of the day. Try and enjoy. These Laddus are good for kids and the elders .


Let us see the recipe now.

Things Needed :

Dates.Uttutte  : 1 cup.
Almonds : 1 Cup
Raisins : 1/2 Cut
Cashew Nuts : 1/2 Cup
Honey : 2 to 3  Tablespoons

Method:

1.Roast Almonds and cashews separately for 2 to 3 minutes and dry grind them for few seconds.
2. Cut dry dates into small pieces and dry grind it. (into powder consistency.
3. Now mix dates and nuts along with raisins nicely in a big bowl.

4. You need to kneed them thoroughly. Now add honey and mix well
5.Take a handful of  this mixture and prepare laddu.
6. Repeat the same with the rest of the mixture.
7. Serve " Dry Dates and Nuts - Honey Laddu at any time of the day.

Note :
Do not add any ghee while dry roasting. Cut the dry dates before dry grind. (It is bit hard to grind the whole dry dates). Adding more/less honey is optional. No need to add any sugar or jaggery to the laddu. No need to dry roast dry dates.
Time : 20 Minutes.
15 Laddus can be prepared.

Easy Tasty Rava Laadu..

Rava Laadu or laddus are sweet item and prepared with using Rava ( Samolina),  ghee , sugar. Laddu  can be eaten at any time of the day...This particular recipe of laddu preparation is very easy but remember can not store them for a long period.

Things needed:
Rava ( medium size) : 2 cups.
Sugar : 1  1/2/cups.
Cardamom : 4 to 6 .
Ghee  : 3/4 cup.
Dry fruits : 3 table spoons(raisins, cashews).
Milk : 1/4  cup.
Coconut : 1/2 cup.

Method:
Grate coconut and keep it aside. Powder sugar and cardamom together in a dry grinder.
Keep a pan on the fire and put one spoon of ghee and fry dry fruits until they are brown. Now add  rava  and  2 table spoons of ghee to it  and fry  until  raw smell disappear  from rava. Fry  on low flame so that it does not get burnt. Put off the fire and mix powdered sugar to the roasted rava.  Add grated coconut and Mix well.  Add the rest of the ghee to the mixture and mix thoroughly. Now divide the mixture in to small quantities.  Mix the mixture with a spoonful of milk and  take a handful of mixture, prepare laddus. Repeat the same  for the rest of the mixture and prepare Laddus.
Note : Rava should be fried on low flame . Ghee should be melted before using .  Use the hot milk . You can not store them for a long time.
15 Laddus can be prepared. ( small size)

Channa ( Hurikadale ) Laadu....

Chann seeds ( Huri kadale in kannada , Pottu kadale in Tamail and Malayalam..chenna in Hindi) are very famous people use this to make chutney too...and this seed is used in Mixture also ( fried items).
Channa Laadus are sweet dish and can be eaten at anytime of the day.

Things Needed :
Chenna seeds : 1 cup
Sugar : 1/2 cup .
Mixed Nuts : 2 Table spoons.
Coconut : 2 Table spoons.
Cardamom : 5 to 6 seeds
Ghee : 1/4 cup .

Method : Powder Sugar.  Add cardamom  while dry grinding  ( Use dry grinder )  and keep it aside.  Cut nuts in to small pieces.  Roast Chenna seeds slightly and leave it for cooling .  Dry grind the roasted Chenna  and put it in a big bowl.
Now add  nuts,  powdered sugar and coconut  to the chenna powder.  Mix thoroughly and add ghee little by little and  tale a handful of this mixture and prepare Laddus. Repeat the same until all the  laddus are prepared.
.Note :Roast the Chenna slightly to make it warm so that it powders quickly.  Not to burn the chenna other wise it gives a burnt smell.  You can also roast seseme seeds to this laddu.  Or you can also powder the roasted seseme seeds and add it to this mixture..and then  prepare Laddus. ( 2 Table spoons of seseme seeds are enough). Can Add little more  ghee if you are not able to prepare laddus.( Warm the ghee and keep it as liquid form , so that you can pour ghee and it helps you to make proper Laddus). Use copra ( dried coconut ) or roast coconut until its brown. You can also roast Nuts before adding . ( Dry roast for few seconds). ( Cashew nuts , Raisins, Almonds even Ground Nuts ).

10 Laddus can be prepared.

Easy Laddus ( Wheat flour Almond Laadu )

Wheat flour laddu is one of the easy laddu you can prepare quickly and it is easy to prepare.
We do prepare these wheat flour laddu for Gokulastami/Shri Krishna Janmastami because we need to prepare varieties of laddu for Prasadam that particular day. Festivals or feast or any normal day these laddus can be prepared for prasadam/Kids snack box/travelling purpose.


Here I have tried wheat flour laddu adding some almond flakes which are given by our daughter in law Vidya Ravi's sister, Veena /Krishnaveni Bidarahalli.
Wheat flour, sugar, ghee and almonds are used and that makes an energetic Laddu.
Let us see the recipe Now :

Things Needed :

Wheat flour : 2 Cups
Sugar : 1/2 Cup or little more
Ghee : 1/2 Cup
Almond Flakes : 2 to 3 Tablespoons
Cardamom : 3 to 4  Pods

Method :

1. Remove the seeds from cardamom pods and powder with sugar and keep it aside.
2. Keep a pan and put a tablespoon of ghee. Let it heat. Add wheat flour and fry.
3. Fry till the raw smell disappear.
4. Put off the fire and put the fried wheat flour to a bowl.
5. Mix it nicely.
6. Add powdered sugar and almond flakes.

7. Add ghee little by little and mix it well.
8. Take a handful of wheat almond mixture and form a round circle laddu.

9. Add little more ghee if the mixture turns dry.
10. Put it in a serving dish. Let it cool. Store them in airtight bottle or box.

Note :

Use of little ghee to fry wheat flour is optional. You can use more. Use of more/less sugar is optional.
It always better to divide fried wheat flour and add little ghee when you are about to prepare laddu.
( Divide fried wheat flour into 2 to 3 portions. Take each portion at time and add 2 tablespoons of ghee. Mix it nicely and then prepare laddu. Repeat the same with remaining portions).
It is always better to prepare laddu when the fried flour is bit warm. Adding little more ghee is optional. You can use hot milk instead of ghee. Remember that laddu prepared using milk with not stay for long.
Time : 20 Minutes.
Serves : 15 to 20 Laddu can be prepared.

Puffed Rice....Laddu ( Puri Unde )

Puffed Rice Laddus are snacks and can have them at any time of the day.
Things Needed:
Puffed Rice  Flakes : 2 cups
Jaggery : 1/2 cup ( Powdered )
Ground Nuts : 2 Table spoons( Roasted)
Cardamom : 4 to 6 pods
Water : 1 Table spoon
  Method :
Powder  cardamom pods ( Remove the outer layer before powdering ) and keep it aside.
Roast the ground nuts and remove the skin and  keep it aside.
Keep a big pan on the fire and heat . Put jaggery and a  table spoon of water and let it dissolve . when it starts bubbling add Puffed Rice flakes and ground nuts and mix well and prepare Laddus. You can add a spoon of ghee while preparing Luddus to be  more tasty.

Note : The jaggery should not be very watery when you dissolve jaggary .It should not be so thick either.  Keep it on the low flame while preparing these Laddus.
You can also add dry fruits like  Almonds , Cashew and dry grapes.( Raisins). Altogether about 2 table spoons. ( Cut it into small pieces).
10 to 12  medium sized undes ( Laddus ) can be made.

Gingly/Sesame Seeds Laddus

Gingluy seeds/Thill/Ellu/Sesame seeds laddu/unde is one of the unde normally prepared during Gokulashtami. (Shree Krishna Janmashtami).
Sesame seeds laddus are easy to prepare and it is healthy sweet dish. During winter and rainy season our skin gets dried or brittle because of less moisture. So nature's friendly sesame seeds provide the oil that body needs. People in olden days have practiced healthy food habit that fit according to the nature and ate them according to the seasons, days, months etc.
As I said earlier these Sesame seeds laddu is easy to prepare and it can be eaten at any time of the day. It is also one good food which you can pack it for your kid's snack box. People who travel also can take these laddus to munch on their travel.
Lets see the recipe now.

Ingredients :

Til Seeds : 1 cup ( cleaned )
Jaggery : 1/2 cup
Coconut/copra : 1 cup (grated )
Cardamom : 5 to 6 seeds ( Powder it )
Ghee : 1 Tea spoon
Water : 2 Table spoon
Ground nuts : 1 Cup + 2 Tablespoons

Method : 

1. Roast sesame seeds till they pop up. Keep it aside.
2. Dry roast ground nuts and remove the husk and keep it aside.
3. Grate coconut and keep it aside.
4. Keep a pan on the pan and add water and jaggery. Let the jaggery melt nicely.
5. Let it boil for a minute. Now remove the jaggery liquid and filter /strain it with tea strainer. Keep the clean jaggery liquid aside.
6. Dry grind a cup of ground nuts, sesame seeds and coconut. Keep them aside.
7. Now keep the clean jaggery liquid on the fire and boil. Let it get a string consistency.
8. Add powdered ground nuts, sesame seeds, coconut and the remained roasted ground nuts as it is.
9. Mix it well and stir for a minute. Remove from the fire and put a tablespoon of ghee.
10 mix it nicely and prepare laddu. Laddus are ready to serve.

Note : 

Do not powder all the ground nuts roasted. Keep 2 to 3 tablespoons ground nuts as they are. (or divide them into two). Jaggery consistency should be proper. (little thicker than one string). Adding more coconut or sesame seeds are optional.You can use dry coconut/copra instead of fresh coconut. If you are using fresh coconut just dry roast them till they turn brown. (Do not burn).

Time : 30 minutes

Shredded Wheat Cereal Laddu (Unde)

Shreded Wheat Cereal is a healthy cereal and many opt for this cereal. My son brought me this cereal the other day. It was nice to have them with milk and sugar. Then I thought of preparing Laddu/Unde. It turned out to be superb laddu. So here is a recipe for you also to prepare this Laddu and enjoy any time of the day.

Eating Laddu is a yummy sweet and we can have them at any time of the day.
I have used Shreded Wheat Cereal, Jaggery and coconut. Added some ground nuts, channa and some dry fruits. (Very Little portion).
Lets see the recipe Now :

Ingredients :

Shreded Wheat Cerial : 2 cups
Jagary : 1 cup
Coconut : grated : 2cups
Ghee : 2 Table Spoon
Dry fruits: According to your wish
cardamom : 4 to 5 Seeds
Ground Nuts : 1/2 cup
Channa (pottu kadale/roasted channa/ Hurikadale)


Method : 

1. Dry roast Shreded wheat cereal for 2 minutes and keep it aside. Let it cool.
2. Powder cardamom along with shredded wheat and put it in a big bowl.
3. Roast ground nuts and remove the skin. Churn for 2 minutes (rava consistency) and remove from the mixi.
4. Dry roast coconut or ( better to use copra/Kobbari/ Dried coconut) and dry grind it into thin.
5. Keep a pig pan on the fire and put jaggery. Add 1/4 cup of water. Let the jaggery melt.
6. When it melts completely it starts bubbling. Stir a bit ( 30 seconds) and mix it well.
7. Add ground shredded wheat, ground nut mixture. Add dry ground coconut.
8. Mix it slowly and put off the fire. Remove the mixture from the bowl. Add dry fruits.
9. Add ghee and mix it again.  Prepare Laddu according to your wish. (size of the laddu).
10 Now Shredded Wheat laddus are ready to serve.

Note :

The whole process should be on low flame. (roasting shredded wheat, ground nut and the jaggery).
Adding dry fruits at the end. You can fry them in ghee and then mix it with all the ingredients. You can also add dates (Karjura/kajoor) to the Unde.
Time : 40 minutes.
20 to 25 Laddus can be prepared. (small size).

Besan Laddu

Besan laddu/laadu/ Unade is a sweet dish, you can have them any time of the day. Besan laddu is very easy and quick to prepare. This yummy, delicious sweet just melts in your mouth and gives energy too.
Besan/Channa flour/Chick Pea flour/ Kadale hittu, sugar and ghee are the main ingredients that are used in Besan Laddu.
As I said it it energetic because channa flour is loaded with carbohydrates and suger adds to the calories. Some people do have a habit of having besan laddu for breakfast along with their normal food. It goes well with Upma, Avalakki/ Beaten Rice Upma or khara bath, puliyogre and bisibele bath.
It is very precious prasadam to prepare during Gokulastami/Shree Krishna Janmastami, may because people do fast the whole day and have their limited prasadam after midnight. It is good to take this besan laddu for travelling, kids party, kids snack box and ladies parties.
Lets see the recipe now:
Things needed:
Besan _ 2 cup
Sugar -1  cup ( dry grind and powder it)
Ghee - 1 cup
Cardamom - 5 to 6 pods
Dry fruits - 1/4 cup ( Cashew ( cut in to small ) and raisens )+ Almonds (Optional)

Method :
1. Keep a pan on the fire, put 1 table spoon of ghee and fry cashew and raisens and remove them. 
2. Add besan and fry in that ghee until raw smell disappears. (Approximately  6 to 8 minutes). Put off the fire and shift the roasted flour to a big bowl.
3. Powder the sugar along with cardamom seeds. Melt the ghee and keep it ready.
4. Add powdered sugar and mix well. Divide the mixture into small portion.
5. Add ghee (Little by little) to one portion and mix it well and prepare laddus.
6. Once that portion of mixture is done, add ghee to the next portion and repeat the same.
7. Prepare laddu and shift them to a serving tray and serve or keep it in a air tight box.
Note :
Fry besan on slow flame so that it does not get burnt. Do not add ghee immediately . let it cool a bit . Then add ghee. Dividing the mixture into small portion helps you too prepare laddu easily. Mixture does not get dry very soon since it is small portion. You can also add some hot boiled milk instead of ghee and prepare laddu. But not only the taste differ, the shelf life of laddu prepared with ghee will be more. (At least 15 days) and milk used laddu will be only 3 to 4 days.
Time : 20 Minutes.
Serves : 15 to 16 laddus. (According to the size).

Coconut Laddu

Coconut Laddu is sweet item and you can eat any time .

Things needed :
Dry coconut powder : 2 cups
Sugar : 1 cup
Mixed Nuts ( Cashew, Almond, Pista ) : 1/2 cup
Condensed Milk : 1 small tin.
Cardamom : 4 to 6 Pods ( Crush and make powder )
Ghee : 1 Table spoon

Method :
Cut all the nuts into small pieces and keep it aside. Powder the cardamom .
Take a pan and keep it on the fire. Put 1 1/2 cups of dry coconut , sugar and condensed milk and stir until it get thickens. Add mixed nuts and mix well . When the mixture starts to leave from the side add ghee and cardamom powder and remove from the gas.
Keep the remaining coconut powder in a small bowl. Prepare laddus with the mixture and roll them one by one in the dry coconut and arrange in a plate. Coconut laddus are ready to serve.
20 laddus can be prepared.

Corn Flakes laadu

Corn Flakes laadu is sweet snack.

Ingredients :
Corn Flakes : 1 cup
Jagaary : 1 /4 cup
Cardamom : 4 to 6 pods
Fresh Coconut ( grated ) : 1/2 cup
Ghee : 1 Table spoon
Mixed nuts : As your wish.( Cashew nuts, Almonds etc )

Method :
Roast corn flakes for 2 to 3 minutes , add cardamom and semi powder it in a dry grinder. Cut nuts in to small pieces.
Take a pan keep it on the fire. Put coconut and jagary. Stir for 2 to 3 minutes. Add powdered cornflakes and stir gently for another 3 minutes. Add ghee and put of the fire. Add nuts and mix well . Take handful of the mixture and make laddus. Cornflake laddus are ready to serve.

Note : Yo can roll the laddus on dry coconut powder if you want. Can add sugar instead of jagary.

10 to 15 laddus can be made. ( Small size ).

TASTY WHEAT FLOUR LADDU

Wheat flour laddu is a healthy sweet dish and its easy to prepare. Wheat and sugar are used to prepare this laddu. We can eat these laddu at any time of the day.


Things needed :


Wheat flour : 2 cups
sugar :3/4 cup
Ghee : 1/2 cup
Cardamom : 5 to 6 pods.
Almond and Cashew nuts : 1/2 cup ( together)

Ready to Serve Wheat flour laddu

Method :

1. Dry roast wheat flour nicely till the raw smell disappear.

2. Dry grind sugar with almond pods.
3. Fry cashews and raisins in a spoon of ghee and add wheat flour and fry for a minute.

 4. Put off the fire and mix powdered sugar and mix it well.
5. Divide roasted wheat flour into small portions.

6. Add ghee little by little and take a handful of mixture and prepare laddu.
7. Serve or eat laddu at any time of the day and enjoy.


Note :

Wheat flour should be roasted till the raw smell disappear. (do it on a low flame). Add ghee little by little while preparing laddu.
If you find difficult to prepare laddu, add little ghee to the mixture and it will be easy to prepare laddu.
Time : 30 Minutes.
20 Laddus can be prepared.
